The BEST Blackberry Muffins. Bursting with blackberries and topped with a cinnamon-cardamom crumble topping.

1 1/2 cups all-purpose flour
3/4 cup sugar
1/2 teaspoon salt
2 teaspoons baking powder
1/3 cup vegetable oil
1 egg
1 teaspoon vanilla extract
¼ teaspoon almond extract (optional)
⅓ - ½ cup milk
1 cup fresh frozen blackberries (or fresh)
1/2 cup sugar
1/3 cup all-purpose flour
1/4 cup butter (melted)
1 teaspoon ground cinnamon
½ teaspoon ground cardamom

Steps:

  • Preheat oven to 400 degrees. Grease a muffin tin or line with muffin liners.
  • Add flour, sugar, salt and baking powder to a large bowl. Whisk to combine.
  • Add oil to a 1 cup measuring cup. Add egg and enough milk (⅓ - ½ cup) to fill to 1-cup line. Add vanilla and almond extract (if using) and whisk to combine.
  • Add to flour mixture and stir until just combined. Then fold in blackberries.
  • To Make Streusel Topping: Mix together sugar, flour, butter, cinnamon and cardamom with a fork until coarse crumbs form. Sprinkle over muffins before baking.
  • Divide batter evenly into muffin cups. Sprinkle with streusel topping.
  • Bake for 20-25 minutes, until a tester inserted into the center comes out clean. When muffins are done, cool for a few minutes in the muffin pan before removing to cool on a wire rack.

These are super yummy but be prepared for a slightly rubbery/moister texture than muffins baked in an oven- I made these during a summer heatwave when I had to have muffins!

1 cup blackberry
1 cup white flour
1/4 cup whole wheat flour
1 cup skim milk
1/2 cup sugar substitute
1 banana, mashed
3 teaspoons baking powder
1 teaspoon vanilla extract
1/4 teaspoon salt

Steps:

  • Mix dry in a bowl with blackberries, careful not to break fruit.
  • Mix wet in another bowl.
  • Add wet into dry by folding in gently to not disturb blackberries.
  • Pour into individual small cups (ramekins) about half full.
  • Microwave on top of inverted plate, 4 at a time for approximately 3 1/2 minutes
  • Let set for 5 minutes or so.
  • Invert muffins back into ramekins and microwave on high for 1 minute to finish off the bottoms.

2 cups all-purpose flour
⅔ cup white sugar
1 tablespoon baking powder
½ teaspoon salt
1 cup sour cream
½ cup butter, melted
2 eggs
1 teaspoon milk
1 teaspoon vanilla extract
11 ounces fresh blackberries

Steps:

  • Preheat oven to 450 degrees F (230 degrees C). Line a muffin tin with paper liners.
  • Mix flour, sugar, baking powder, and salt together in a large bowl.
  • Whisk sour cream, butter, eggs, milk, and vanilla extract together in another bowl. Stir into the flour mixture until blended. Fold blackberries into the batter.
  • Spoon batter into the muffin tin, filling each liner 2/3 full.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 18 to 20 minutes.

Make a batch of blackberry muffins for a mid-morning treat. Use fresh or frozen blackberries, or go foraging to find some in the summer months

100g unsalted butter, softened
65g caster sugar
65g light brown sugar
2 large eggs, room temperature
125g Greek yogurt
1 tsp vanilla paste
5 tbsp milk
250g self-raising flour
1 tsp baking powder
200g blackberries (fresh or frozen), halved if large

Steps:

  • Heat the oven to 200C/180C fan/gas 6 and line a 12-hole muffin tin with paper cases.
  • Beat the butter and sugars together for 5 mins until pale and fluffy. Add the eggs gradually and beat in until combined. Mix in the yogurt, vanilla and milk.
  • Fold in the flour, baking powder and a pinch of fine salt until you have a smooth batter. Finally, fold in 150g of the blackberries and fill the muffin cases ¾ full. Poke 2 blackberries (or 4 halves) into the top of each muffin, so that they are sticking out slightly. Bake for 8 mins, then reduce the oven to 180C/160C fan/gas 4 and bake for 20-25 mins more until risen and golden, and a cocktail stick inserted into the centre comes out clean.

1/2 cup butter, softened
1-1/4 cups plus 1 tablespoon sugar, divided
2 large eggs
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup milk
2 cups fresh or frozen blackberries

Steps:

  • In a large bowl, cream butter and 1-1/4 cups sugar. Add eggs, one at a time, beating well after each addition. Combine the flour, baking powder and salt; gradually stir into creamed mixture alternately with milk. beating well after each addition. Fold in blackberries., Fill greased or paper-lined muffins cups two-thirds full. Sprinkle with remaining sugar. 2/3 cup brown sugar
1 cup white flour
1 cup whole wheat flour

1 cup frozen blackberrie (frozen, they're easier to work with)

Steps:

  • Mix together dry ingredients in large bowl.
  • Toss blackberries in dry ingredients til flour coated.
  • Mix together liquid ingredients.
  • Pour wet ingredients into dry and mix just til moist.
  • Spoon batter into jumbo muffin cups (ungreased).
  • Bake at 350 for 25-30 minutes .
