Will use this one to begin using the variegated peppermint waking up in my mint bed. Will have to try with spearmint & lime mint as the summer progresses. Received via email.

2 cups mint leaves, packed, fresh, divided
3 tablespoons green tea leaves
1/4 cup sugar (alternative sweetener fine)
8 cups water, boiling
ice

Steps:

  • Finely chop one cup of the mint leaves.
  • Place the chopped mint leaves into a 3-quart teapot or heat-resistant pitcher. Add the tea leaves and sugar. Pour the boiling water over the leaves, stirring to dissolve the sugar. Set aside to steep for five minutes.
  • Strain the infused liquid into another pitcher. (Discarded leaves can be used for garden mulch.) Stir in the whole mint leaves, then cover and refrigerate until chilled, or overnight. Place several ice cubes into tall glasses and pour the minted tea, along with a few mint leaves, over the ice.

2 cups fresh mint leaves, loosely packed
1/4 cup sugar
2 tablespoons honey
2 tablespoons green tea leaves
6 cups boiling water

Steps:

  • Combine mint, sugar, honey and tea in a teapot.
  • Pour boiling water over and let steep 5 to 8 minutes.
  • Strain out mint and tea leaves and pour into glasses.
  • Garnish with a mint sprig and serve.

1 quart boiling water, plus more for heating the teapot
3 green tea bags (equivalent to 1 Tablespoon loose green tea)
3/4 cup sugar
3 cups firmly packed mint leaves, and tender stems crushed, plus
4 sprigs of fresh mint, for garnish

Steps:

  • Pour about 1/2 cup boiling water into a teapot, swish it around to heat the pot, and dump out. Add tea to the teapot and pour in 1 cup of the boiling water. Cover and let steep 3 minutes.
  • Add sugar and mint leaves and stems to the teapot. Add the remaining 3 cups boiling water. Cover and let steep for 5 minutes.
  • Stir. Continue to steep for 5 minutes more.
  • Strain tea into cups.

gunpowder tea (or any green tea)
boiling water
of fresh mint (prefer short leaf bunch, with less stem)
sugar, to taste

Steps:

  • Place the tea in a teapot (allow 3 tablespoons for a large teapot, about 5-6 glasses). Pour over ½ cup fresh boiling water. Allow the tea to steep (let stand) for 10 seconds only. This will rinse the gunpowder tea and allow the leaves to open up. Pour out the water.
  • Add all the mint and sugar to taste. Pour fresh boiling water onto mix to fill the pot.
  • Allow the tea to steep for a few minutes. (If you prefer your tea strong, you may bring the full teapot to boil and let it stand for a couple more minutes.).
  • Pour 3-4 cups, but do not stir. Simply pour back into the pot, this allows the mint tea mixture to blend naturally.

10 sprigs of fresh mint, plus extra for garnish
3 teaspoons green tea
3 tablespoons sugar (or more to taste)
4 cups water

Steps:

  • Boil the water and pour a small amount in the teapot, swishing it around to warm the pot.
  • Combine the mint and green tea and sugar in the teapot, then fill it with the rest of the hot water.
  • Let the tea brew for three minutes.
  • Set out glasses for the tea.
  • A shot-glass is close to the slender glasses used in Morocco.
  • Fill just one glass with the tea, then pour it back in the pot.
  • Repeat.
  • This helps to dissolve and distribute the sugar.
  • Pour the tea.
  • You want a nice foam on the tea so always pour with the teapot a high distance above the glasses.
  • If you do not have at least a little foam on the top of the first glass, then pour it back into the teapot and try again until the tea starts to foam up nicely.
  • Garnish with the remaining sprigs of mint.
