LENTIL-STUFFED PEPPERS



Lentil-Stuffed Peppers image

These peppers were inspired by my favorite Mediterranean salad, filled with Israeli couscous, lentils, olives, herbs and plenty of feta. Loaded with fiber and plant-based protein, they are delicious and satisfying.

4 cups low-sodium vegetable broth
1 cup dried brown or green lentils
3 teaspoons olive oil
1 cup minced white onion
2 garlic cloves, minced
1 cup Israeli couscous
4 red bell peppers
1/2 cup chopped fresh basil, plus more for garnish, optional
1/2 cup crumbled feta, plus more for garnish, optional
1/2 cup chopped fresh parsley
1/4 cup chopped Kalamata olives
2 tablespoons fresh lemon juice
Salt and freshly ground black pepper

Steps:

  • Preheat the oven to 400 degrees F. Add the vegetable broth and lentils to a medium saucepan and place over medium-high heat. Bring to a boil, then reduce to low and cover. Cook until the lentils are tender, 30 minutes.
  • Meanwhile, heat 2 teaspoons of olive oil in a separate saucepan over medium heat. Add the onion and garlic and cook until the onion is translucent and tender, 5 minutes. Stir in the couscous and cook, stirring often, until toasted and golden brown, 1 to 2 minutes. Add 2 cups hot water and bring to a boil. Reduce the heat to low, cover and cook until the couscous is tender, about 12 minutes.
  • Halve the peppers vertically and remove the seeds and membranes. Gently rub the remaining teaspoon olive oil over the peppers and place on a baking sheet. Roast until the peppers are tender, 20 minutes.
  • Combine the cooked lentils and couscous in a large bowl along with the basil, feta, parsley, Kalamata olives, lemon juice, and salt and pepper to taste.
  • Divide the couscous mixture into each cooked pepper cavity, and garnish with extra basil and feta, if using.

1 lemon
2 tablespoons extra-virgin olive oil, plus additional for drizzling
4 cloves garlic, minced
1 teaspoon dried oregano
Kosher salt
1 cup basmati rice
6 multi-colored bell peppers
One 15.5-ounce can brown lentils, rinsed and drained
One 14.5-ounce can diced tomatoes, drained
1/4 cup chopped fresh parsley
1 1/4 cups crumbled feta (about 6 ounces)
Freshly ground black pepper
Flaky salt

Steps:

  • Preheat the oven to 400 degrees F.
  • Zest enough of the lemon to measure 1 teaspoon; cut the lemon in half and reserve.
  • Add the olive oil to a medium saucepan over medium-high heat. Once the oil is hot, add the lemon zest, garlic, oregano and 1/2 teaspoon kosher salt. Cook, stirring to combine, for a little bit for the garlic to toast. Add the rice and stir until the rice is coated and slightly toasted, about 30 seconds. Pour in 1 1/2 cups of water and bring the mixture to a boil. Reduce the heat to low, cover and cook until the rice is fluffy and all the water is absorbed, about 15 minutes. Fluff the rice with a fork and set aside, covered, until ready to use.
  • Slice the top 1/2 inch off of the bell peppers and hollow them out by removing the ribs and seeds. Place them standing cut-side up in a 9-by-13-inch baking dish. (Discard the tops or save for another use.)
  • Add the lentils, tomatoes, parsley, rice, 1 cup of the feta, the juice of one of the lemon halves, 1/2 teaspoon kosher salt and black pepper to taste in large bowl. Toss to combine. Adjust the seasoning.
  • Scoop the rice and lentil mixture into the peppers. Sprinkle the remaining 1/4 cup feta over the top. Sprinkle with some more black pepper. Bake until the feta is starting to brown and the peppers have softened, 30 to 35 minutes. Drizzle with a little more oil, sprinkle with flaky salt and top with a squeeze of the remaining lemon half. Serve immediately.

  • Heat 1 tablespoon of the oil in a Dutch oven or similar large, sturdy-bottomed pot over medium heat. Add the onion and cook for 5 minutes, or until the onion is beginning to soften, stirring occasionally. Add the Italian seasoning, ½ teaspoon kosher salt, red pepper flakes, and garlic. Let cook just until the garlic is fragrant, about 30 seconds.
  • Add the lentils, quinoa, broth, fire-roasted tomatoes, and sun-dried tomatoes. Bring the mixture to a boil, then reduce heat to low. Cover and simmer for 25 to 28 minutes, or until the lentils are tender. Stir once halfway through, then again towards the end of the cooking time. If the mixture looks too dry, splash in additional broth or water. Stir in the nutritional yeast.
  • While the lentils and quinoa cook, preheat your oven to 400 degrees F. Lightly coat a 9x13-inch baking dish with nonstick spray. Slice the bell peppers in half from top to bottom (I cut right down through the stems). Remove the seeds and membranes then arrange cut side up in the prepared baking dish. Drizzle the insides with the remaining 1 tablespoon oil and sprinkle lightly with salt. Carefully pour a thin layer of water into the bottom of the pan. Place in the oven and bake, uncovered, for 20 minutes. This step gives the peppers a head start while the filling finishes up.
  • Carefully mound the cooked filling inside of the peppers. If using a non-dairy “mozzarella” sprinkle it on top. Return the pan to the oven and bake for 5 to 10 additional minutes, until the peppers are completely tender and the filling is piping hot. Sprinkle with fresh basil and enjoy!

  • Lentil filling: Wash lentils under running water, then add to a pot along with vegetable stock and a bay leaf. Bring to a boil, then lower on low and gently simmer for about half an hour, until the lentils are cooked al dente. Discard bay leaf, drain and cool the lentils, then add them to a food processor and pulse until partly blended. Do not turn into a paste, but just roughly blend it, so there are still whole lentils along with the mixture. Transfer the blended lentils to a bowl.
  • In a separate pot cook white rice in salted water - bring to a boil, lower the heat and simmer for just about 10 minutes. The rice must be only partially cooked. Drain, cool down, and add to the lentils.
  • Peel and finely dice onion, mince garlic. In a pan, heat a spoon of oil, and add the diced onions. Stir-fry until translucent, then add in the garlic and stir-fry for a minute. Do not let the garlic brown, or it will become bitter. Now, add in tomato paste, stir well to combine, and let cook for a minute or two until the tomato turns a darker color, then remove from heat and add to the bowl with the lentils and rice. Season to taste with salt, pepper, and other spices, like smoked paprika, thyme, and oregano, and mix well to combine.
  • Prepare the peppers: Wash and dry the peppers, then with a sharp knife, remove the tops - you can save these for later. Next, carefully remove the seeds inside, and fill the peppers to 3/4 with the lentil mixture. Cover with the pepper tops.
