Blackberry Crumb Bars are an easy, sweet summer breakfast. Bakery-style layer bars with a buttery crumb topping and fresh blackberry filling.

1 1/2 cups flour
1/4 cup sugar
1/4 cup brown sugar (, packed)
1/2 teaspoon baking powder
1/8 teaspoon salt
1/2 cup unsalted butter
1 large egg yolk
2 cups fresh blackberries
1 tablespoon lemon juice
1/4 cup sugar
1 tablespoons cornstarch

Steps:

  • Preheat the oven to 375 degrees and spray an 8x8 pan with baking spray.
  • Add flour, sugar, brown sugar, baking powder, salt, butter and egg to a food processor and pulse until a crumbly dough starts coming together.
  • Add half the dough to your baking pan and press down in an even layer gently.
  • In a large bowl mix the blackberries, lemon juice, 1/4 cup sugar and cornstarch.
  • Pour mixture over the crust.
  • Crumble the remaining flour mixture over the top of the blackberries.
  • Bake for 40-45 minutes until golden brown.

6 tablespoons unsalted butter melted, and 1/2 cup (1 stick), room temperature, plus more for pan
1 3/4 cups all-purpose flour (spooned and leveled), plus more for pan
1/2 cup packed light-brown sugar
1/2 teaspoon salt
1/2 teaspoon baking powder
1 cup confectioners' sugar
1/2 teaspoon pure vanilla extract
2 large eggs
2 containers (5 ounces each) blackberries

Steps:

  • Preheat oven to 350 degrees. Butter an 8-inch square baking pan. Line bottom with parchment paper, leaving an overhang on two sides; butter and flour paper, tapping out excess.
  • Make topping: In a medium bowl, whisk together melted butter, brown sugar, and 1/4 teaspoon salt; add 1 cup flour, and mix with a fork until large moist crumbs form. Refrigerate topping until ready to use.
  • In a medium bowl, whisk together remaining 3/4 cup flour, baking powder, and remaining 1/4 teaspoon salt; set aside. In a large bowl, using an electric mixer, beat room-temperature butter, confectioners' sugar, and vanilla until light and fluffy; add eggs, one at a time, beating well after each addition. Reduce speed to low; mix in flour mixture. Spread batter evenly in pan; sprinkle with blackberries, then chilled topping.
  • Bake until golden and a toothpick inserted in center comes out with moist crumbs attached, 40 to 45 minutes. Cool completely in pan. Using paper overhang, lift cake onto a work surface; cut into 16 squares.

7 tablespoons butter or 7 tablespoons margarine, softened
1/2 cup firm packed brown sugar
1 cup all-purpose flour
1/4 teaspoon baking soda
1/4 teaspoon salt
1 cup quick-cooking oats, uncooked
3/4 cup blackberry jam

Steps:

  • Cream butter, gradually add sugar, beating well.
  • Combine flour, soda and salt, add to creamed mixture, mixing well.
  • Stir in oats.
  • Press half of mixture into a lightly greased 8-inch square an.
  • Top mixture with jam, spreading to within a 1/4 inch of edge.
  • Press remaining crumb mixture on top.
  • Bake at 400° for 30 minutes.
  • Cool, cut into bars.

  • Make the Bars: Melt the butter, and stir in the vanilla and sugars. Add remaining ingredients (except the jam) and stir until combined. You should have a fairly crumbly mixture. Set 1 and 1/3 cup of the mixture aside. Press the remaining mixture into the bottom of the baking dish to form your crust. Bake the bare crust for 9 minutes. Remove from the oven, and add the jam. Sprinkle the reserved crumb mixture over the top of the jam layer. You can work this mixture a bit with your hands to form some larger crumb pieces if it's super, super finely crumbled. (If the crumbs left at the bottom of the bowl are very dry, I melt an extra tablespoon of butter and add a little bit to help it come together.)
  • Serve + Store: Let cool completely before slicing, if you want them to hold up. (You can speed this up in the fridge). If you don't care, you can cut into them sooner but they won't hold a bar shape. Store bars in an air tight container at room temperature for up to 3 days, or in the fridge for up to 5 days.

  • Making the Crust: Mix the oats, flour, brown sugar, baking powder, and salt in a large bowl. Using a pastry blender, a fork, or two knives, cut cold butter into flour mixture until it has a sandy texture and forms fine crumbs. Stir in the milk and vanilla until crumbs are moistened. Press two-thirds of the crumble into the bottom of the prepared baking pan. Bake for 12 minutes.
  • Baking the Jam Bars: Remove the crust from the oven and spread the jam over the top. If necessary, warm the jam in the microwave until it is spreadable. Sprinkle the remaining 1/3 streusel over the top of the jam layer; bake for another 25-30 minutes or until the crust is lightly golden brown.
  • Cooling: Remove the bars from the oven and cool completely before cutting. Because I can be a tad impatient — and my guys will devour them too soon, I like to refrigerate the bars until they become solid enough to cut. But… if you’re like me and can’t wait, sometimes, they’re kind of good warm too. Add some melty vanilla ice cream for an extra special treat. Otherwise, cut into 9 to 16 bars when cool and firm.
