Categories     Ribs

Time 1h

Number Of Ingredients 8

1 1/2 c blackberry jam, seedless
1/2 c ketchup
1/2 c packed brown sugar
1 tsp fresh minced ginger, or ground ginger
2 tsp hot sauce, or to taste
1/2 tsp ground pepper
1 pkg (4 to 5 pound) rack pork spareribs
red pepper flakes ( optional )

Steps:

  • 1. Preheat oven to 350 degree F. If grilling, disregard this. Preheat grill. Medium heat. I baked mine and finished on the grill.
  • 2. In a food processor or blender, place blackberry jam, ketchup, brown sugar, ginger, hot sauce, and pepper; pulse until pureed. In a medium saucepan over medium-high heat, add the prepared blackberry mixture and bring to a boil; boil 2 to 3 minutes, stirring constantly. Remove from heat and set aside.
  • 3. Rinse ribs and pat dry. Trim and discard any excess fat.
  • 4. In a large baking pan I baked for 40 minutes until well browned, turning ribs over at 20 minutes. Baste one side of ribs with 1/3 of prepared blackberry sauce; turn ribs sauce side down and cook 10 minutes or until sauce browns and forms a thick, sticky glaze. Baste top of ribs with 1/3 of blackberry sauce, turn over, and cook and additional 10 minutes or until sauce browns and forms a thick, sticky glaze. When finished, I grilled 5 minutes per side basting one more time each side. I doubled the sauce also. As I made more than one slab of ribs. I store remaining sauce in a jar in the refrigerator. Sometimes I do the whole cooking process on the grill. Depends how hot the weather is. Either way they are delicious! I have also used this sauce for pork in the crock pot. Also, it is good on chicken...

BLACKBERRY BBQ RIBS

Blackberry BBQ Ribs image

Blackberries were on sale and so after looking at a lot of BBQ recipes, I put together this recipe! I threw in a pack of blackberries - not sure if it was six or eight ounces, but it was somewhere in there :) Also, I use organic, low salt and low sugar ketchup... you might want to lower the soy sauce if you ketchup is salty.

Provided by Abi Fae

Categories     Sauces

Time 8h30m

Yield 8 serving(s)

Number Of Ingredients 17

4 lbs pork ribs
2 tablespoons olive oil
2 tablespoons butter
2 cups catsup
8 ounces blackberries
1/2 cup molasses
3/4 cup brown sugar, packed
2 tablespoons garlic, minced
2 tablespoons onions, minced
2 tablespoons white wine vinegar
1/4 cup Worcestershire sauce
1/4 cup soy sauce
1 tablespoon black pepper
1/2 tablespoon paprika
1 teaspoon cayenne
1 teaspoon dried chipotle powder
1/2 tablespoon liquid smoke

Steps:

  • Cut the ribs into individual ribs.
  • Melt the butter in the olive oil, in a frying pan, over medium high. Once the oil is hot, add the pork ribs and sear. You don't want them cooked, but you want the sides brown to hold in the juices and give texture to the meat. You will probably need to do this in batches, so add the butter and oil a bit at a time until all the ribs are cooked.
  • Mix all the other ingredients in the blender and puree until smooth.
  • Place ribs into crock pot as they sear. Pour sauce over ribs.
  • Cook on high for five hours, turn to low and cook another 3-4 hours.
  • Enjoy! This is really nice with steamed veggies, with a touch of lemon juice.

Time 12h45m

Yield 12

Number Of Ingredients 19

3 tablespoons kosher salt
2 tablespoons ground cumin
1 tablespoon dried oregano
1 tablespoon minced garlic
2 teaspoons chili powder
1 teaspoon ground black pepper
1 teaspoon celery seed, or more to taste
1 teaspoon dried thyme
1 rack spareribs
2 slabs baby back pork ribs
1 cup apple juice, or more to taste
2 jalapeno peppers, cut in half lengthwise and seeded
½ cup beer, or more to taste
½ onion, chopped
¼ cup sugar-free strawberry preserves, or more to taste
3 tablespoons barbeque sauce
1 tablespoon olive oil
2 cloves garlic, or more to taste
sea salt and ground black pepper to taste

Steps:

  • Blend kosher salt, cumin, oregano, minced garlic, chili powder, 1 teaspoon ground black pepper, celery seed, and ground thyme together in a food processor.
  • Lay baby back rib slabs and sparerib rack on sheets of aluminum foil. Rub spice mixture all over ribs and fold aluminum foil up around each. Divide apple juice between each foil packet and fold foil edges together to form a seal. Marinate ribs 8 hours to overnight.
  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler. Line a baking sheet with aluminum foil. Place jalapeno peppers, cut-side down, onto the prepared baking sheet.
  • Cook jalapeno peppers under the preheated broiler until the skin has blackened and blistered, 5 to 8 minutes. Place the blackened peppers into a bowl and tightly seal with plastic wrap. Allow the peppers to steam as they cool, about 20 minutes. Remove and discard skins.
  • Blend jalapeno peppers, beer, onion, strawberry preserves, barbeque sauce, olive oil, garlic cloves, sea salt, and pinch ground black pepper together in a blender until sauce is smooth. Transfer sauce to a container, cover with a lid, and refrigerate, 8 hours to overnight.
  • Preheat oven to 200 degrees F (95 degrees C). Place foil-wrapped ribs in a single layer on baking sheets.
  • Cook ribs in the preheated oven for 1 hour. Increase oven to 225 degrees F (110 degrees C) and continue cooking ribs until almost tender, 2 to 3 hours more.
  • Preheat smoker to 250 degrees F (120 degrees C).
  • Unwrap ribs, discard apple juice, and place ribs directly on the smoker.
  • Cook on the preheated smoker until meat surface is slightly dry, 5 to 10 minutes. Continue cooking, brushing sauce on ribs every 15 minutes and turning every 30 minutes, until tender, about 1 hour.
