GRILLED CHICKEN THIGHS WITH BLACKBERRY BBQ SAUCE



Grilled Chicken Thighs with Blackberry BBQ Sauce image

1 tablespoon ground coriander
1 tablespoon smoked paprika
1 tablespoon kosher salt
8 skin-on, bone-in chicken thighs
Olive oil
1/2 recipe Blackberry BBQ Sauce
3 pints fresh blackberries
12 ounces dark beer
1 cup balsamic vinegar
1 cup red wine vinegar
1/2 cup packed light brown sugar
1 onion, sliced
1 clove garlic, minced
1 habanero pepper, slit
1 tablespoon ground chipotle chile powder
1 tablespoon finely ground coffee
1 tablespoon ground coriander
1 tablespoon ground cumin

Steps:

  • In a small bowl, combine the coriander, paprika and salt. Pat the chicken thighs dry with paper towels, season on both sides with the spice mixture and place in a gallon-size zip-top bag. Refrigerate for several hours but preferably overnight.
  • Prepare and preheat your lump charcoal grill to create two heat zones: high and low.
  • Brush the chicken thighs with olive oil and place them skin-side down on the hot side of the grill. Cover and cook for 2 minutes. Uncover and move the chicken to the low side of the grill, skin-side up. Cover and cook until the thighs reach an internal temperature of 160 degrees F, 15 to 20 minutes. Pour half the Blackberry BBQ Sauce into a medium bowl and use it to baste the chicken occasionally during the final 10 minutes of cooking.
  • Remove the chicken from the grill. Serve with the remaining sauce on the side.
  • In a large saucepan, combine the blackberries, beer, vinegars, sugar, onion, garlic, habanero, chipotle powder, coffee, coriander and cumin. Cook over medium-low heat, stirring occasionally, for 2 hours. Carefully puree the sauce in a blender or food processor, then strain.

1 tbsp. olive oil
1/2 cup minced onion
2 cups fresh blackberries, divided
1/4 cup low sodium beef or chicken broth
1/4 cup packed brown sugar
1 tbsp. minced chipotle in adobo sauce
2 tbsp. fresh lime juice
1 tsp. cornstarch
salt to taste and fresh chopped cilantro

Steps:

  • 1. Heat oil in pan over medium heat til it shimmers. Add onion and sweat til softened, 3 minutes. Stir in 1 cup blackberries, broth, brown sugar and chipotle. Bring sauce to simmer and cook til blackberries are softened and mixture slightly reduces. This should take about 2 minutes.
  • 2. Whisk together lime juice and cornstarch; whisk into blackberry mixture til it thickens. add remaining 1 cup blackberries. Season sauce with salt and garnish with chopped cilantro.

2 tablespoons plus 1/2 cup fresh blackberries, divided
1/2 cup reduced-sodium chicken broth, divided
2 tablespoons brown sugar
2 tablespoons white wine vinegar
1 teaspoon olive oil
2 garlic cloves, minced
3/4 teaspoon paprika, divided
1/4 teaspoon ground cumin
6 boneless skinless chicken breast halves (5 ounces each)
4-1/2 teaspoons minced fresh thyme
1/2 teaspoon salt
1/4 teaspoon pepper
2 teaspoons cornstarch

Steps:

  • In a small bowl, mash 2 tablespoons berries. Add 1/4 cup broth, brown sugar, vinegar, oil, garlic, 1/4 teaspoon paprika and cumin., Place chicken in an 11x7-in. baking dish coated with cooking spray; pour broth mixture over the top. Sprinkle with thyme, salt, pepper and remaining paprika. , Bake, uncovered, at 375° for 20-25 minutes or until a thermometer reads 170°, basting occasionally with pan juices. Remove chicken and keep warm. , Skim fat from pan drippings. In a small saucepan, combine cornstarch and remaining broth until smooth. Gradually stir in drippings. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Serve with chicken; sprinkle with remaining blackberries.

1 lb Chicken Breast
1 - 1 1/2 cup Blackberries (Fresh or frozen)
1 1/2 tsp Honey
1 Chipotle Pepper, minced, plus 1-2 tsp of adobo sauce (to desired heat, adobo is spicy, so taste test your sauce as you go)
dash of Cinnamon
1 tsp Lime Juice
3-4 cloves Garlic, minced
1/2 medium Yellow Onion, sliced in 1/4 inch semicircles

Steps:

  • Preheat oven to 425 degrees with the rack placed in the center of the oven. Combine blackberries, honey, chipotle pepper and adobo, cinnamon, and lime juice in a sauce pan over medium heat. Reduce heat and leave to simmer, stirring occasionally to prevent the sauce from burning. While the sauce is simmering, lightly brown the chicken in a skillet or grill. Once both sides are browned, place the chicken in a casserole dish. Cover the chicken pieces with minced garlic and onion slices. Pour the blackberry-chipotle sauce over the chicken, making sure that each piece of chicken has a good amount of sauce on top. Cover the dish with a well-fitting lid or tin foil. Bake the chicken until cooked completely though, approximately 45 minutes. Garnish with fresh basil or mint. This pairs well with herbed rice or coos coos and a green fruit or vegetable (such as fresh green beans, asparagus, or broccoli). Note: For the deepest flavor, marinate the chicken in the blackberry-chipotle sauce and garlic overnight or for a few hours prior to cooking. If a thicker sauce is desired, add a thickening agent such as corn starch, tapioca, or flour, to the blackberry-chipotle sauce.

1 onion , chopped
1 garlic clove , sliced
2 tbsp sunflower oil
1-2 tbsp chipotle paste (see tip, below)
400g can chopped tomatoes
1 tbsp cider vinegar
8 skinless chicken thigh fillets
small bunch coriander , chopped
soured cream and rice, to serve

Steps:

  • Fry the onion and garlic in the oil in a deep, wide frying pan until soft. Add the chipotle paste (use 1 tbsp for a mild flavour and 2 tbsp for a hotter, stronger one). Stir and cook for 1 min, then add the tomatoes and cider vinegar. Bring to a simmer and cook for 10 mins with the lid half on. Stir to make sure it doesn't get too dry.
  • Add the chicken and cook for 10 mins or until cooked through, turning once. Scatter with coriander and serve with rice and soured cream.
