Blackberry Basil Spritzer Recipes
BLACKBERRY-BASIL SPRITZER

Steps:
- In cocktail shaker, place sugar and water; stir until sugar is dissolved.
- Cut 8 of the blackberries into quarters; add to shaker. Add lemon juice, gin and 2 of the basil leaves. Fill shaker with ice. Cover tightly with shaker lid; shake vigorously.
- Strain mixture into 2 cocktail glasses filled with ice. Top each glass with 1/2 cup club soda. Garnish each with 1 whole blackberry and 1 basil leaf. Serve immediately.

Steps:
- To make ginger concentrate, add the ginger, coconut sugar, and water to a saucepan. Bring to a boil; then lower the heat and simmer for 10 minutes. Remove from heat and let cool for 1 hour. Strain out the ginger. Divide blackberries and basil between two glasses. Muddle into the bottom. Squeeze 1/2 lime into each glass. Add 3 tablespoons ginger concentrate to each glass, then add 1/2 cup sparkling water to each and mix to combine.
