PASSION FRUIT AND MANGO SORBET



Passion Fruit and Mango Sorbet image

4 ripe, wrinkled passion fruits
3 medium ripe mangos, or large ripe peaches, peeled and chopped
2 tablespoons sugar, or, to taste

Steps:

  • Cut the passion fruits into halves. Spoon the pulp (seeds and all) into a food processor container or blender.
  • Add the mangos. Process until pureed. Strain out the seeds. Taste the mixture and add sugar if desired.
  • Freeze the mixture in an ice cream maker according to manufacturer's directions.

BLACK GRAPE SORBET

4 cups black California seedless grapes, rinsed
1/4 cup sugar
1/2 teaspoon lemon zest
1 tablespoon fresh lemon juice
1 tablespoon vodka (optional, but helps make sorbet smooth)

Steps:

  • Puree grapes, sugar, lemon zest and juice in blender until mixture is smooth. Place mixture in a saucepan and bring to boil over high heat. Let boil 30 seconds, then remove from heat. Strain puree through fine strainer and discard solids. Stir vodka into puree. Let mixture chill in refrigerator, then place in an ice cream freezer according to manufacturer instructions or freeze in a shallow pan, stirring every 10-15 minutes until frozen.

GLAZED MANGO WITH SOUR CREAM SORBET AND BLACK PEPPER



Glazed Mango With Sour Cream Sorbet And Black Pepper image

2 large mangoes, ripe but not soft
4 tablespoons unsalted butter, plus butter for baking sheet
1/3 cup sugar
1/3 cup lemon juice
Freshly ground black pepper
1 cup passion fruit sauce (see recipe)
Sour cream sorbet (see recipe)
1 teaspoon coarse black pepper

Steps:

  • Peel mangoes. Cut in thirds horizontally, leaving the pit in middle section. Place each portion without pit cut-side down on a work surface, and with a large knife cut into 8 slices perpendicular to the cutting board. Gently push down on slices so they spread out and overlap slightly.
  • Sliver enough mango flesh left around the pits to make 1/2 cup. Set slivers aside.
  • Butter a baking sheet large enough to hold mangoes in a single layer. Heat the broiler.
  • Melt remaining butter in a large nonstick skillet. Use a spatula to place each sliced mango third in the pan so they keep their shape. Cook over medium heat about 5 minutes, sprinkling with two tablespoons sugar, and basting with pan juices.
  • With spatula, transfer mangoes to baking sheet, place under broiler, and broil until edges just start to color. Do not overcook. Set mangoes aside.
  • Add remaining sugar to juices in skillet, and cook over medium heat until juices start to caramelize. Add lemon juice, and continue to cook, stirring, until amber colored. Season lightly with pepper. Spoon on mangoes.
  • Place a sliced caramelized mango third in each of 4 shallow soup plates. Spoon passion fruit sauce around each, and scatter raw mango slivers around. Top each with a large oval scoop of sour cream sorbet, sprinkle 1/4 teaspoon coarse pepper on top and serve at once.

MANGO LIME SORBET

This sorbet is tangy and not very sweet. I added only enough sugar and corn syrup to allow the mixture to freeze properly without developing ice crystals.

Number Of Ingredients 4

1/2 cup/100 grams sugar
4 cups/750 grams diced mango (3 to 4 large mangos)
2/3 cup/150 grams fresh lime juice (about 6 limes)
2 tablespoons/50 grams corn syrup

Steps:

  • Combine 1/2 cup water and sugar in a small saucepan and stir. Bring to a simmer and simmer until sugar has dissolved. Remove from heat.
  • Combine all ingredients in a blender and purée until completely smooth. Transfer to a bowl or container and chill overnight in refrigerator.
  • (Chill a 1-quart container in the freezer while you spin the sorbet.) Remove bowl from refrigerator and blend the mango purée again for 1 to 2 minutes in a blender or with an immersion blender. Add to ice cream maker and spin for about 25 minutes. Transfer to chilled container and freeze for 2 hours or longer to pack.
  • Once frozen solid, allow to soften in refrigerator for 30 minutes before serving.

4 ripe mangoes (about 3 1/2 pounds total)
1 cup Simple Syrup
3 tablespoons fresh lime juice, or to taste

Steps:

  • Line a baking sheet with plastic wrap.
  • Wash and dry mangoes. Using a sharp knife, remove the 2 flat sides of each mango, cutting lengthwise alongside pit and cutting as close to pit as possible so that mango flesh is in 2 large pieces. With a spoon carefully scoop flesh from mango sides into a blender, leaving shells intact. With a knife cut remaining flesh from pit and add to blender. Add syrup and lime juice to blender and purée until smooth. Put mango shells on baking sheet and freeze while making sorbet.
  • Freeze mango purée in an ice-cream maker. Scoop sorbet into frozen shells, mounding slightly, and smooth surfaces. Freeze filled mango shells at least 6 hours, or until frozen hard. Frozen sorbets in shells may be wrapped individually in plastic wrap and kept in freezer 1 week.
