2 tablespoons olive oil
1 garlic clove, minced
8 cups chopped collard greens
1/2 teaspoon salt
1/4 teaspoon cayenne pepper
2 cans (15-1/2 ounces each) black-eyed peas, rinsed and drained
4 plum tomatoes, seeded and chopped
1/4 cup lemon juice
2 tablespoons grated Parmesan cheese

Steps:

  • In a Dutch oven, heat oil over medium heat. Add garlic; cook and stir 1 minute. Add collard greens, salt and cayenne; cook and stir 6-8 minutes or until greens are tender. Add peas, tomatoes and lemon juice; heat through. Sprinkle servings with cheese.

"A homey Sunday-night sort of soup that makes no pretensions to being hoppin' John or any other southern dish but simply a bowl of delicious nourishment. I've found that frozen black-eyed peas take as long to cook as dried ones that have been soaked--a good hour and a half. Brown butter mixed with roasted sesame oil has a vaguely meaty flavor, which isn't detectable as either butter or sesame." "Smoked Spanish paprika stands in for the smoky flavor of bacon or ham."

2 tablespoons butter
1 tablespoon toasted sesame oil
2 medium onions, finely diced
3 bay leaves
2 celery ribs, diced
2 garlic cloves, chopped
1 teaspoon dried thyme
1/2 teaspoon hot red pepper flakes
1 teaspoon spanish smoked paprika
1 teaspoon ground cumin
3 tablespoons celery leaves, chopped
1 tablespoon tomato paste
2 cups frozen black-eyed peas (soak dried peas overnight) or 1 cup dried black-eyed peas (soak dried peas overnight)
2 quarts water
1 teaspoon sea salt
sea salt, to taste
fresh ground pepper, to taste
1 bunch mustard greens
1 cup cooked brown rice or 1 cup cooked white rice
hot sauce, to serve

Steps:

  • Melt the butter in a wide soup pot over medium heat and let it brown for several minutes until it smells nutty.
  • Add the sesame oil, then the onions, bay leaves, celery, garlic, thyme, chile flakes, smoked paprika, cumin and celery leaves.
  • Cook stirring occasionally, until the onions have browned, about 20 minutes.
  • Stir in the tomato paste, then add the beans (drain them first if you used soaked dried), 2 quarts water, and 1 tsp salt.
  • Simmer, covered, until the beans are tender. Taste for salt and season with pepper.
  • Cut the mustard greens off their stems and wash them. Simmer in salted water to cover until tender, a few minutes, then transfer to a strainer, rinse with cool water, and chop. Stir them into the beans.
  • Taste once more for salt and season with plenty of pepper.
  • Add a few spoonfuls of rice to each bowl and serve with Tabasco, Crystal, or other favorite hot sauce on the side.

This is a variation of Hopping John. It's usually a New Years Day item around our house, as the Black-eyed peas, are for good luck.And it also contains rice, which is for abundance, and pork, which is for the future.

2 lbs boneless pork loin chops, cut into cubes
2 tablespoons olive oil, divided
1 large onion, chopped
4 celery ribs, chopped
1 large red bell pepper, seeded and finely chopped
2 garlic cloves, minced
1 teaspoon dried oregano
1/2 teaspoon dried thyme
3 (15 ounce) cans black-eyed peas, rinsed & drained
1 (32 ounce) container chicken broth
1 bay leaf
1 (28 ounce) can crushed tomatoes
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon hot sauce
1/4 teaspoon ground red pepper
hot cooked rice

Steps:

  • Saute pork in 1 tablespoon hot oil in a Dutch oven over medium-high heat 8-10 minutes. Remove pork and set aside.
  • Add remaining 1 tablespoon oil to Dutch oven. Sauté onion and next 4 ingredients in hot oil 5 minutes. Stir in oregano and thyme, cook, stirring often, 2 minutes.
  • Add peas, broth and bay leaf, bring to a boil, cover, reduce heat, simmer stirring occasionally 45 minutes.
  • Stir in tomatoes, simmer, stirring occasionally, 20 minutes. Stir in reserved pork, salt and next 3 ingredients. Remove and discard bay leaf. Serve over rice.

This is one of my favorite gumbos I make. The combination of ingredients may sound strange, but they go together so well and it is so delicious. Serve over warm white rice.

1 (6 pound) pork butt, cut into cubes
salt and ground black pepper to taste
1 pinch ground thyme, or to taste
8 slices bacon, cut into 1-inch pieces
1 ½ pounds okra, sliced crosswise into 1/2-inch-wide pieces
3 pounds smoked sausage, sliced and halved
2 cups chopped onion
2 cups chopped bell pepper
2 cups chopped celery
2 tablespoons chopped garlic
1 gallon chicken stock, divided
1 (16 ounce) jar premade roux (such as Kary's®)
1 tablespoon chili powder
1 tablespoon paprika
2 teaspoons ground black pepper
1 ½ teaspoons file powder
1 teaspoon dried rosemary
1 teaspoon dried thyme
4 bay leaves
1 pinch Creole seasoning (such as Slap Ya Mama®)
5 (15 ounce) cans black-eyed peas, undrained
4 (15 ounce) cans mustard greens, drained
2 (10 ounce) cans diced tomatoes with green chile peppers (such as RO*TEL®)
1 (16 ounce) package sliced fresh mushrooms

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Season pork cubes with salt, pepper, and thyme to taste and place in a cast iron skillet.
  • Cook pork cubes in the preheated oven until cooked through, about 30 minutes. Transfer pork from skillet to a bowl, reserving drippings.
  • Cook and stir bacon in a 9-quart Dutch oven or heavy pot over medium heat until browned, 5 to 7 minutes. Remove bacon with a slotted spoon and place on a paper towel-lined plate, reserving bacon grease.
  • Cook and stir okra in the bacon grease over medium heat until lightly browned, about 5 minutes. Transfer okra to a bowl, reserving bacon grease. Cook and stir smoked sausage in bacon grease until browned, about 5 minutes. Add onion, bell pepper, celery, and garlic to sausage; cook and stir until softened, 5 to 10 minutes.
  • Stir 48 fluid ounces chicken stock into sausage mixture and bring to a simmer. Stir roux into broth mixture until dissolved and slightly thickened, 2 to 3 minutes. Slowly stir 48 fluid ounces chicken stock into thickened stock; bring back to a simmer.
  • Mix pork, pork drippings, bacon, chili powder, paprika, 2 teaspoons black pepper, file powder, rosemary, 1 teaspoon thyme, bay leaves, and Creole seasoning into thickened chicken stock; simmer, stirring often and skimming off fat, until flavors blend, about 1 hour.
  • Stir black-eyed peas, mustard greens, okra, diced tomatoes with green chile peppers, mushrooms, and remaining chicken stock into pork-stock mixture; simmer for 1 hour more.

Add the rice mixture and the black-eyed peas to the broth, and stir well. Bring back to a boil, then cover, reduce the heat to low, and cook for 50 minutes, until most of the water has evaporated.
