Black-Eyed Pea Restaurant Broccoli-Cheese Soup image

This recipe was posted as a copycat recipe; however, I think it tastes exactly like the restaurant version. Definitely worth the extra calories. : )

Number Of Ingredients 8

1 1/2 lb fresh broccoli
2 c water
3/4 tsp salt
1/2 c cornstarch
1 c cold water
1 pt half and half
1 lb velveeta cheese
1/2 tsp pepper

Steps:

  • 1. Steam or boil broccoli until tender. .
  • 2. Place half and half and 2 cups water in top of a double boiler. Add cheese, salt and pepper. Heat until cheese is melted. Chop broccoli into bite-size pieces and add to cheese mixture.
  • 3. Mix corntarch and water in small bowl. Stir into cheese mixture in double boiler and heat over simmering water until soup thickens.

This recipe is a great alternative to meat loaf, and it is very good. I was surprised how good this was- and good for you. Great for vegeterians. Will do this recipe again.

Number Of Ingredients 9

1/2 cup finely chopped onion
1/4 cup finely chopped red bell pepper
1 teaspoon curry powder
2 cups cooked black-eyed peas, drained
1/3 cup raw rolled oats
1/2 cup yellow cornmeal
2 cups vegetable broth or 2 cups chicken broth
salt
pepper

Steps:

  • Preheat oven to 350° F and Grease a 9-inch loaf pan.
  • In a large skillet, heat oil over medium-low heat and add the onion and chopped bell pepper; sauté until the onion is tender and golden, about 5 minutes.
  • Add the curry powder and cook, stirring, for about 2 minutes longer.
  • Add the black-eyed peas, rolled oats, cornmeal, and broth; stir well until the oats and cornmeal are cooked and have absorbed all the liquid.
  • Put the black-eyed pea mixture into the prepared loaf pan.
  • Bake for 45 minutes.
  • Cool, serve and enjoy!
