Number Of Ingredients 4

2 lbs black currants, with a few leaves (about 7 cups)
4 cups brandy or 4 cups eau de vie
1 1/2 cups sugar
2 cups water

Steps:

  • Put the bunches of black currants, with their leaves, in a wide mouthed glass jar or a stoneware bottle.
  • Pour in the alcohol, cover tightly and let macerate for about two months.
  • Drain the flavored alcohol from the fruit.
  • Mix the SUGAR and WATER, and bring just to a boil.
  • Cool this syrup and add it to the alcohol.
  • Bottle and cork.
  • Keep the bottles of liqueur for one month before opening.
  • To make about 2 quarts.
  • Je Sais Faire Les Conserves.

  • Wash the blackcurrants and pick them over for spoiled fruit. Stemming is optional. Blackcurrant leaves and stems are often used for flavoring in many different foods, and they'll only add more tannin and depth to the cassis.
  • Place the blackcurrants, cinnamon stick and sugar in a quart mason jar. Add the vodka. The vodka may not quite fit in the jar, but fill it up as much as you can.
  • After 2 to 3 months, strain the mixture. Bottle it up and allow it to mature for another few months. Enjoy!

  • Pop the currants into a large glass jar or wide mouthed bottle and crush gently with the back of a large spoon.
  • Add in the sugar and brandy and stir well. Stand the glass jar on a sunny windowsill and give it a stir every few days. It'll take about a week for the sugar to fully dissolve.
  • After 1-4 months, strain the fruit out through a sieve (and a piece of muslin if you want a perfectly clear cassis). Do not squash the berries but allow them to slowly drip through the sieve. Keep the berries to use in an (adult only!) dessert. Yum!
