Yield Makes 1 pint

Number Of Ingredients 5

1 cup granulated sugar
6 egg yolks, lightly beaten and strained
1/2 cup black-currant juice
1/2 cup (1 stick) unsalted butter
1 tablespoon cassis

Steps:

  • Combine sugar and egg yolks in a saucepan. Gradually stir in black-currant juice. Cook over low heat, stirring constantly, until mixture coats the back of a spoon. Do not allow mixture to boil, or it will curdle.
  • Remove from heat and whisk mixture until slightly cooled. Stir in butter, 1 tablespoon at a time, and add cassis. Refrigerate until ready to use.

  • Wash 750g (1lb10oz) blackcurrants and place in a heavy based saucepan. Add 300g (11oz) sugar, 1 tbsp lemon juice and 75ml (5tbsp water).Heat gently stirring until the sugar dissolves then bring to simmering point, cover and cook for 10 minutes.
  • Stain through a sieve pressing with the back of a spoon to remove as much of the juice as possible. Return to the pan.
  • Mix 4 tbsp cornflour with 4 eggs to form a smooth paste. Stir the egg yolk mixture into the pan and heat ,gently stirring continuously until the mixture thickens.
