SOFRITO BLACK BEANS
These Sofrito Black Beans combine creamy beans with aromatics like onions, garlic, and jalapeños and are the beginnings of everything from soup to refried beans.

- Clean the beans. Pour black beans into a strainer, and rinse. Run your fingers through the beans a few times and pick out any rocks or dirt.
- Soak the beans. Pour beans into a large pot and cover by a couple inches with water. Ideally, let sit overnight. If you're running short on time you can skip the soaking step and put the beans directly on the stove, add the bay leaves and bring to a boil.
- Cook the beans. If you've soaked them overnight, drain the beans the next day, return to the pot, and cover by a few inches with fresh water. Place over medium-high heat, add bay leaves, and bring to a boil. Reduce heat to a simmer, cover, and let cook until beans are tender, about 1 hour.
- Make sofrito. Meanwhile, heat oil in a large frying pan. Add onions, jalapeños, and garlic and season generously with salt. Cook, stirring occasionally, until vegetables are starting to brown and become soft, about 8-10 minutes. Add chili powder, cumin, and coriander and stir to toast the spices for a couple of minutes.
- Combine sofrito and beans. Once beans are tender, add onion mixture to beans and stir to combine. If you'd like the bean broth to be thicker, let the beans cook uncovered until they are the desired thickness. Taste and season with salt. Serve!

CUBAN BLACK BEANS WITH CILANTRO AND LIME
A quick and easy version of the Cuban Black beans! I'm sautéing up jalapeños, onions, and garlic and then simmering the beans until they are tender and topping them with cilantro and lime! So, so delicious!

- Heat the oil in a stockpot or dutch oven over medium-high heat. Sauté the onions and jalapeños for 4-5 minutes or until they turn translucent. Add the garlic and continue to cook for 30 seconds.
- Add the black beans, warm water, salt, cumin, and chili powder and bring to a boil. When boiling, reduce the heat so that it simmers. Allow to cook for 10-15 minutes or until most of the water evaporates leaving a thick sort of broth. At this point, if you'd like to thicken the beans a bit more you can remove about ½ - 1 cup of beans and mash them (using a potato masher or a wooden spoon) to make a thick sort of paste but this is optional. Add the beans back into the pot and stir. Top with fresh cilantro and lime juice stir to combine.

- In a medium-sized pot saute the onion, garlic, and jalapeño in oil over medium-high heat for about five minutes until the onion is soft and the garlic is fragrant.
- Next add in the cumin, black beans and a generous pinch of salt. Stir to combine then add in the water and a few dashes of hot sauce. Bring the beans to a simmer, then cover and turn the heat to low and cook for 10 minutes.
- Use an immersion blender to blend the beans or transfer 3/4 of the cooked beans to a blender/food processor and blend until smooth. Return the blended beans to the pot, and season to taste with salt.

'ANYTHING GOES' EASY BLACK BEANS
Quick, healthy, and tastes good. Top with sour cream, if you like. Serve over rice or let it stand alone. You can also add just about anything else to this, that's why it's 'anything goes.' Add browned ground beef or turkey for a meaty, almost chili-like main dish. Garnish with diced hard-boiled eggs. Add chopped olives. Sometimes, I add cooked peas. I love the leftovers with scrambled eggs for breakfast; it's great the second day and in tortillas for lunch.

- Stir black beans, 1 cup chicken broth, tomato paste, and cumin together in a heavy pot over low heat; cook at a simmer until hot, 5 to 10 minutes.
- Heat olive oil in a skillet over medium-high heat. Saute onion, green bell pepper, and jalapeno pepper in hot oil until the vegetables are softened, 5 to 7 minutes; add garlic and continue cooking just until fragrant, 1 to 2 minutes. Transfer to the pot with the beans and stir.

- In a medium saucepan, heat olive oil over medium heat and saute garlic and cumin until fragrant.

- Cook the garlic, onions and jalapenos until slightly wilted.

CREAMY BLACK BEANS
I use these creamy black beans in my breakfast burritos, but they can be enjoyed in many other dishes, too. Make extra for bean and cheese tacos!

- If using dried beans, rinse and drain 1 lb. dried black beans in a colander or fine-mesh sieve; transfer to a large bowl. Pour in water to cover by 2" and let soak in refrigerator at least 4 hours and up to 12 hours.
- Heat 5 Tbsp. vegetable oil in a small pot over medium-high. Cook ¼ large white onion, thinly sliced, 3 garlic cloves, thinly sliced, and ½ medium jalapeño, thinly sliced, stirring often, until beginning to take on some color, 6-8 minutes. Add 3 bay leaves, 1½ pasilla chiles, halved, seeds removed, 1 guajillo chile, halved, seeds removed, 1 Tbsp. ground cumin, 2 tsp. dried oregano, 1½ tsp. dried thyme, and 1 tsp. freshly ground black pepper. Cook, stirring often, until fragrant, about 2 minutes.
- If using dried beans, add beans and their soaking liquid to pot and pour in more water so beans are covered by 2". Bring to a boil, then reduce heat and simmer, adding more water as needed to keep beans submerged, until beans are tender, 45-55 minutes.
- If using canned beans, add three (15.5-oz.) cans black beans (do not rinse) to pot and pour in more water so beans are covered by 2". Bring to a boil, then reduce heat and simmer, adding more water as needed to keep beans submerged, until flavors have come together, 15-20 minutes.
- Drain beans in a fine-mesh sieve set over a large bowl; remove bay leaves and discard. Working in 2 batches if needed, purée bean mixture and ¾ cup bean broth in a blender, adding more bean broth if needed, until thick and hummus-like in consistency. Taste and season with salt. Discard any remaining bean broth. Do ahead: Beans can be cooked 5 days ahead. Let cool; cover and chill. Reheat over low, stirring often.
