Number Of Ingredients 10

4 cups shredded cabbage
1/2 cup real bacon bits
1 can (16 ounces) kidney beans, rinsed and drained
2 celery ribs, thinly sliced
2/3 cup chopped onion
4 teaspoons minced fresh parsley
1/2 cup mayonnaise
2 tablespoons cider vinegar
1/4 teaspoon pepper
1/8 teaspoon salt

Steps:

  • In a large bowl, combine the cabbage, bacon, beans, celery, onion and parsley. In a small bowl, combine the mayonnaise, vinegar, pepper and salt; pour over cabbage mixture and toss to coat. Cover and refrigerate for 2-3 hours. Stir before serving.

A friend I worked with long ago brought this to a potluck. We begged her for the recipe, but she was reluctant to give it up. We wore her down and she finally gave in. This is a different type of cole slaw that really makes a pretty dish. I love the variety of textures and flavors with the beans, cabbage and bacon.

2 cups shredded cabbage
1/2 cup diced celery
1/3 cup diced onion
2 tablespoons chopped parsley
15 1/2 ounces red kidney beans, drained
4 slices crisply cooked bacon, crumbled
1 tablespoon vinegar
1/2 cup mayonnaise
1 teaspoon salt
1/2 teaspoon pepper
1 tablespoon sugar

Steps:

  • Lightly mix together the first 6 ingredients.
  • Whisk together the 5 dressing ingredients and pour this over the salad mixture.
  • Toss all lightly and serve.

1 (14 ounce) bag coleslaw mix (cabbage and carrots)
1 cup canned black beans, rinsed and drained
1/4 cup chopped fresh cilantro
1 medium tomatoes, seeded and diced
1/2 medium red onion, diced
1 jalapeno, seeded and finely diced
1 avocado, pitted, peeled and diced
1/2 cup fresh lime juice
2 tablespoons unseasoned rice vinegar
2 tablespoons olive oil
1/2 teaspoon ground cumin

Steps:

  • Place coleslaw mix, black beans, cilantro, tomato, red onion, jalapeno and avocado in large salad bowl.
  • Whisk together lime juice, vinegar, olive oil, and cumin in small bowl. Pour over coleslaw and toss gently.
  • Serve immediately or refrigerate for a few hours until chilled through.
  • NOTES/SUGGESTIONS from article. If convenient, shred your own cabbage and carrots.
  • Use only fresh lime juice. One lime yields 1-2 T unstrained juice. For the 1/2 cup, figure 4 to 8 limes, depending on size and juiciness.
  • To serve, sprinkle with crushed baked tortilla chips right before serving or serve with grilled, sliced chicken in a tortilla wrap.
  • Only 16 calories per cup, so says the article!

1 can (15 ounces) black beans, rinsed and drained
6 tablespoons panko bread crumbs
1/4 cup finely chopped onion
1/4 cup finely chopped sweet red pepper
1/4 cup minced fresh cilantro
2 large egg whites, lightly beaten
1 garlic clove, minced
1/4 teaspoon salt
2 tablespoons red wine vinegar
1 tablespoon plus 4 teaspoons olive oil, divided
1 tablespoon minced chipotle pepper in adobo sauce
1-1/2 teaspoons sugar
2-1/4 cups coleslaw mix
2 green onions, chopped
4 whole wheat hamburger buns, split

Steps:

  • In a large bowl, mash beans. Add the panko, onion, red pepper, cilantro, egg whites, garlic and salt; mix well. Shape bean mixture into 4 patties; refrigerate for 30 minutes., Meanwhile, in a small bowl, whisk the vinegar, 1 tablespoon oil, chipotle pepper and sugar; stir in coleslaw mix and onions. Chill until serving., In a large nonstick skillet, cook burgers in remaining oil over medium heat until a thermometer reads 160°, 3-5 minutes on each side. Serve on buns with slaw.

Posted for a recipe request. I like marinating the cabbage because it takes the toughness out of the cabbage. Cook time includes marinating.

2 1/2 cups water
1/2 cup cider vinegar
1/4 cup sugar
3 lbs cabbage, finely shredded
green leaf lettuce, for garnish
1 1/2 cups mayonnaise
3 tablespoons white vinegar
6 tablespoons sugar
2 tablespoons sour cream
1/2 teaspoon prepared horseradish
1 pinch paprika

Steps:

  • Combine water, vinegar and sugar until sugar is dissolved.
  • Add cabbage to the mixture.
  • Toss thoroughly.
  • Marinate for at least an hour.
  • Drain thoroughly in a colander but save marinade to use in one more batch of coleslaw, if desired. (After two uses, the marinade loses its flavor.).
  • To make the dressing: In a bowl, combine the mayonnaise, vinegar, sugar, sour cream, horseradish and paprika.
  • Toss drained cabbage with some of the dressing.
  • Serve on plates lined with lettuce leaves.
