4 navel oranges
3 tablespoons olive oil
1 tablespoon unsalted butter
1 large onion, halved lengthwise and thinly sliced lengthwise
1 lb rhubarb, cut into 1-inch pieces
2 tablespoons mild honey
1 1/4 teaspoons salt
1 1/2 teaspoons minced peeled fresh ginger
1/4 teaspoon cinnamon
1 (14- to 15-oz) can diced tomatoes including juice
1/4 teaspoon black pepper
6 (6- to 8-oz) black sea bass fillets with skin and small bones removed
1/4 cup chopped fresh mint

Steps:

  • Arrange oven rack in middle position and preheat oven to 375°F.
  • Cut peel, including white pith, from 3 oranges with a small sharp knife. Working over a bowl, cut segments free from membranes. Squeeze juice from membranes into bowl. Drain off as much juice as possible from segments into a measuring cup. Squeeze enough juice from remaining orange to total 2/3 cup of juice.
  • Heat 2 tablespoons oil with butter in a 12-inch heavy skillet over moderate heat until butter is melted, then cook onion, stirring occasionally, until softened and golden brown, 18 to 20 minutes.
  • While onion is caramelizing, cook rhubarb, honey, 1/3 cup orange juice, and 1/4 teaspoon salt in a 2-quart heavy saucepan over moderate heat, stirring occasionally, until rhubarb is very tender, about 12 minutes. Force mixture through a medium-mesh sieve into a bowl, scraping and pressing hard on solids and discarding them.
  • Add ginger and cinnamon to onion and cook, stirring, 1 minute. Add remaining 1/3 cup orange juice and boil until thickened, about 1 minute. Stir in rhubarb purée, tomatoes, pepper, and 1/2 teaspoon salt and briskly simmer, stirring occasionally until sauce is thickened slightly, 7 to 10 minutes. Remove from heat.
  • While sauce simmers, grease a 17- by 12-inch glass or ceramic baking dish with remaining tablespoon oil. Pat fish dry and sprinkle with remaining 1/2 teaspoon salt. Arrange fish, skin sides up, in 1 layer in baking dish and bake until opaque and just cooked through, 12 to 14 minutes. Stir orange segments into sauce and cook until heated through, 1 to 2 minutes, and season with salt. Stir mint into sauce and serve with fish.

2, 6 ounce fish filets
6 ounce shallots
1 ounce ginger, chopped
3/8 ounce cloves garlic
2 Granny Smith apples
1 Asian pear
2 leeks (white only)
4 ounce onions
2 bunches of celery
1 mango
2 ounce grape seed oil
1/2 ounce ground coriander
1 1/2 ounce turmeric
2 ounce curry powder
24 ounce sake, reduce by 1/4
48 ounce chicken stock, reduce by 1/2
6 ounce cream
13 and 1/2 ounce coconut milk
1 ounce butter
1 piece mature coconut
1/2 bunch fresh basil (purple, if you can find it)
Clean California frisee

Steps:

  • First chop all of the above to medium; sweat all ingredients with oil (to cook with no color). Simmer 20-30 minutes, then strain.
  • Second cook the ground coriander, turmeric and curry powder for 1-2 minutes. Puree the sake and chicken stock into a hand blender then strain it. Add the cream, coconut milk and butter, then taste.

4 6-ounce fillets black bass
7 tablespoons extra-virgin olive oil
Sea salt
8 ounces shiitake mushrooms, rimmed and cut into 1/4 -inch slices (4 cups)
1/4 cup thinly sliced shallots
4 thin slices (the size of a quarter) peeled ginger
1 1/2 cups diced (1/4-inch) rhubarb
2 teaspoons sugar
2 tablespoons butter
1 tablespoon heavy cream
1 teaspoon balsamic vinegar

Steps:

  • Preheat the oven to 275 degrees. Lay the fish skin side down in a baking dish just large enough to fit the fillets. Sprinkle with 3 tablespoons olive oil and season with salt. Roast until just cooked through, 15 to 25 minutes.
  • In a large sauté pan, heat 2 tablespoons olive oil over medium-high heat. Add the shiitakes, season with salt and sauté until lightly browned and just softened. Scrape into a bowl, adjust seasoning and keep warm.
  • Return the pan to the heat and pour in the remaining 2 tablespoons oil. Add the shallots, ginger and rhubarb. Cook, stirring to scrape up any bits, until the rhubarb softens, about 4 minutes. Add 3/4 cup water and the sugar. Season with salt. Cook until reduced by half. Whisk in the butter and cream and then the vinegar. Press the sauce through a fine-mesh sieve set over a bowl.
  • To serve, divide the sauce among 4 shallow bowls. Lay a piece of fish in each and top with a spoonful of mushrooms.

1 tablespoon kosher salt
1 tablespoon freshly cracked black pepper
2 tablespoons grapeseed oil
2 sprigs fresh thyme
1 tablespoon butter
1 lemon, juiced

Steps:

  • Season the fish with salt and pepper.
  • In a large saute pan over medium-high heat, add the oil. Put the fish, skin side down, into the pan.
  • Press firmly with a spatula to prevent the skin from curling. Sear for 3 to 4 minutes, then flip. Add the thyme sprigs, the butter and the lemon juice. Cook for an additional 4 minutes. Baste the fish for 30 seconds. Remove the fish from pan and arrange on a platter to serve.
  • Cook's Note: Score the skin side of the fish, to prevent it from curling during the cooking.

4 skin-on black-sea-bass fillets (about 1 1/4 pounds total)
Kosher salt and freshly ground pepper
Instant flour, such as Wondra, for sprinkling
1 tablespoon extra-virgin olive oil
1/3 cup dry vermouth
1 tablespoon capers, drained and rinsed
3 tablespoons unsalted butter
1/4 cup lightly packed chopped fresh tender herbs, such as parsley, dill, tarragon, and chives

Steps:

  • Pat fillets dry; slash skin side of each crosswise in 2-inch intervals. Season generously with salt and pepper. Sprinkle with flour to evenly coat, shaking off excess.
  • Heat oil in a large skillet over medium-high. When oil shimmers and wisps of smoke rise from skillet, add fish in a single layer, skin-sides down. Reduce heat to medium; cook, undisturbed,until skin is crisp and flesh is opaque halfway up sides and almost cooked through, 5 to 7minutes, depending on thickness.
  • Flip and continue cooking until just cooked through, 1 to 2 minutes more. Transfer to plates, skin-sides up. Add vermouth to skillet; boil until mostly evaporated, 1 to 2 minutes. Add capers and butter; cook until butter simmers and sauce thickens slightly, about 2 minutes. Remove from heat; stir in herbs. Return fish to skillet, skin-side up; spoon butter sauce over top. Serve immediately.

4 fillets black sea bass (about 6 ounces each)

2 teaspoons pine nuts

Steps:

  • Line a 9" x 12" baking dish with foil. Set aside. Heat oven to 400°F. Heat oil in a large saucepan over medium heat. Cook leeks, garlic, oregano, curry, allspice and black pepper until leeks become translucent, stirring, 2 to 3 minutes. Add tomato, bell pepper, celery and soy sauce. Cook until pepper softens, 2 to 3 minutes. Add stock. Simmer, covered, 25 to 30 minutes. Place carrots, cauliflower, broccoli and stock in prepared dish. Bake until vegetables begin to soften, 10 to 12 minutes. Remove from oven. Add spinach and zucchini. Place fish on top of vegetables. Drizzle with sauce. Bake until fish is cooked through and vegetables are tender, 15 to 20 minutes. While fish cooks, prepare couscous as directed on package. Top each plate with 1/4 cup couscous, 1/4 of vegetables and 1 fillet. Sprinkle with pine nuts, dill and feta. Serve immediately.
