Bitter Lemon image

This is a British cousin of American lemonade. Makes an excellent mixer for gin, vodka, and tequila. Personally, I like it mixed with tonic water or soda water and poured over crushed ice on a hot summer day.

Number Of Ingredients 3

2 lemons
20 fluid ounces water
1/4 lb sugar

Steps:

  • Cut the lemons into pieces, put in a saucepan with the water and bring to the boil.
  • Reduce the heat and simmer gently for 10-15 minutes, until the fruit is soft.
  • Add the sugar and stir until dissolved.
  • Remove from the heat, cover and cool.
  • Strain before using.

Bitter Lemon Soda image

This is very much like Krest® Bitter Lemon (found in Africa) or Schweppes® Bitter Lemon (found in Europe). Unfortunately there is nothing comparable found in the USA, but this comes pretty darn close! This is the perfect thirst quencher for a blistering hot day!

1 ½ cups white sugar
1 ½ cups water
1 lemon, zested
2 sprigs fresh lavender
3 cups lemon juice
4 cups ice cubes, or as needed
1 (11 fluid ounce) bottle cold tonic water, or more as needed

Steps:

  • Combine sugar, water, lemon zest, and lavender in a pot and cover; bring to a boil. Cook mixture until sugar is dissolved, 5 to 10 minutes. Remove pot from heat and cool syrup to room temperature, about 15 minutes.
  • Pour lemon juice into a pitcher, strain syrup into lemon juice, and stir until concentrate is evenly mixed. Refrigerate concentrate until chilled, at least 1 hour.
  • Fill serving glasses with ice and pour about 2 ounces concentrate into each glass; top with tonic water and stir.

  • Preheat the oven to 400F. You will need 1 x 8” flan case + a circle of tin foil to cover it and a high-speed blender. Separate one of the eggs, reserving the white. Set aside.
  • Make the pastry: Into a large bowl, sift 1½ cups of the whole wheat pastry flour, 1 tablespoon of the sugar, and the salt.
  • Dice 1/2 cup of the butter. Add to the flour mixture and rub in with your fingers until the mixture resembles coarse breadcrumbs. Take care not to over mix – it’s OK to have some pieces of butter visible. If the mixture seems too lumpy, add the remaining 2 tablespoons of flour a tablespoon at a time. (See Ann''s Tips)
  • Beat the yolk with 1 tablespoon of iced water. Make a well in the center of the flour mixture, and add the egg yolk and water. With a knife cut and mix the egg into the flour until it clumps enough for you to form it into a ball with your hands. Roll out to just fit the flan tin. Fold it in half, lay it onto the tin and push it into the sides with your fingers. (see Ann’s Tips). Put in the freezer for 10 minutes. Once cold and hard, cover with foil, pressing the foil against the sides of the crust and bake blind for 8 minutes. Remove the foil, brush the pastry base with the egg white and return to the oven for 3 minutes more. Remove and lower the oven to 325F
