BISTRO-STYLE FRIES

Steps:

  • Prep: Slice 2 pounds russet potatoes into fries, transferring to a bowl of tepid water as you go. Heat 2 inches of peanut or vegetable oil, shortening, lard, or a combination of fats in a deep wide pot over medium heat until a deep-fry thermometer registers 375 degrees F. Drain the potatoes and dry well.
  • Fry: Add half of the potatoes to the pot and fry, stirring gently, until they soften and blister, 3 to 4 minutes (do not let them color). Remove with a slotted spoon or skimmer to a paper towel-lined baking sheet. Repeat with the remaining potatoes. Transfer to the freezer until firm, at least 1 hour.
  • Refry: When ready to serve, reheat the oil to 375 degrees F over medium-high heat. Working in 4 small batches so the oil stays hot, fry the potatoes until golden brown, about 5 minutes. Transfer to fresh paper towels to drain. Season with salt.
  • Salt 'em:
  • Herb Salt
  • Strip the leaves from a few rosemary and thyme sprigs. Pulse in a food processor until fine, then toss with coarse salt.
  • Bacon Salt
  • Pulse 3 slices cooked bacon in a food processor until fine; toss with 3 tablespoons coarse salt.
  • Parmesan Salt
  • Mix equal parts paprika, grated parmesan and coarse salt.
  • Dip 'em:
  • Smoky Ketchup
  • Stir 1/2 to 1 minced chipotle pepper in adobo sauce into 1/2 cup ketchup. Add a splash of balsamic vinegar.
  • Spicy Mayo
  • Add a little Sriracha sauce (or other hot sauce) to 1/2 cup mayonnaise. Mix in the zest and juice of 1 lime.
  • Zesty Mustard
  • Mix 1/2 cup dijon mustard, a spoonful of horseradish and some chopped parsley.

1 slice bread, torn into small pieces
2 tablespoons milk
1 tablespoon Worcestershire sauce
1 egg
2 basil leaves, chopped
1 teaspoon minced fresh rosemary
1 teaspoon pepper
1 pound ground veal
4 (1 ounce) slices Cheddar or pepper jack cheese
4 hamburger buns

Steps:

  • Place torn bread into a bowl and sprinkle with milk and Worcestershire sauce. Mix in egg until combined. Season with basil, rosemary, and pepper. Mix in veal until evenly mixed. Shape veal mixture into four patties.
  • Preheat a grill for medium heat.
  • Lightly oil the hot grill. Grill veal burgers to desired degree of doneness, about 5 minutes per side for medium. Place a slice of cheese on each burger, and allow to melt for about 1 minute before serving on buns.

Olive oil, for the pan
1 cup thinly sliced portobello mushrooms (thin strips)
1/4 cup barbecue sauce
3 slider rolls
1/2 cup shredded cheese

Steps:

  • Add a little olive oil to a saute pan and set over medium heat. Cook the mushroom strips in the pan until wilted and caramelized, about 5 minutes. Add the barbecue sauce and stir to coat in the sauce. Divide the mushrooms among the slider rolls and top with the shredded cheese.

1 teaspoon olive oil
1 small red onion, thinly sliced
Coarse salt and ground pepper
1 teaspoon sugar
2 tablespoons red-wine vinegar
1 garlic clove, minced
3 tablespoons mayonnaise
1 1/2 pounds ground beef chuck (80 percent lean)
8 split brioche or soft dinner rolls

Steps:

  • In a medium skillet, heat olive oil over medium-high. Add onion, and cook until softened, 2 minutes. Season with salt and pepper. Add sugar and vinegar; toss to coat. Let mixture cool. In a small bowl, combine garlic and mayonnaise.
  • Heat a grill to medium-high. Clean and lightly oil hot grill. Divide ground beef into 8 balls. Press each lightly to form 3/4-inch-thick patties. Season each with salt and pepper. Grill 3 minutes per side for medium. Serve sliders on rolls with pickled onions and garlic mayonnaise.
