BISTEC A LA MEXICANA
This dish is called Mexican beefsteak because of the colors of the ingredients: white onion, red tomato and green chili. Since white, red and green are the colors of the Mexican National Flag, Mexican beefsteak is one of the most popular dishes in Mexico.

- Make the salsa without the lime juice.
- Drop the garlic and chili pieces one at a time into a running food processor, letting each get finely chopped before adding the next. Turn off the processor and remove the lid. Cut 1 tomato in quarters and add it to the food processor, along with the cilantro. Pulse 4 to 6 times, until you have a coarse puree. Scrape the mixture into a bowl.
- Cut the other tomato into ¼ inch pieces and add to the bowl, along with the green onion. Taste and season with lime juice (or vinegar) and salt, usually a generous ½ teaspoons This salsa is best if eaten within an hour or two, but it will keep for a number of hours in the refrigerator.
- Heat a wok (or a very large skillet) over medium high heat. Drizzle in a little olive oil, then, in 2 batches, stir-fry the steak until lightly browned. Remove to a plate, leaving behind as much oil as possible. Stir-fry the salsa until reduced - this can take up to 10 minutes. Add about ½ cup water or beef broth, return the browned meat to the pan and bring to a boil. Serve, passing around quartered limes and extra chopped green chili and cilantro.

BISTEC MARINADO ESTILO SURAMERICANO EN TABLA DE CEDRO
Steps:
- Sumerge la tabla en agua, colocándole algo pesado encima a fin de que quede sumergida. Remójala por lo menos 4 horas o durante toda la noche. Mientras tanto, mezcla la vinagreta, la cebolla, el perejil, el cilantro, el ajo y chile rojo. Retira 1/2 taza de la mezcla de vinagreta; ponla a un lado para usarla más adelante. Vierte el resto de la mezcla de vinagreta en una bolsa plástica con cierre de tamaño grande; agrega el bistec. Cierra la bolsa; dale vueltas varias veces a fin de recubrir el bistec con la mezcla de vinagreta. Ponlo a marinar en el refrigerador por lo menos 2 horas.
- Precalienta la parrilla a fuego alto. Asa el bistec durante 3 minutos por lado; retíralo de la parrilla. Retira la tabla del agua; úntale aceite por encima. Coloca el bistec encima. Colócalo sobre la rejilla de la parrilla; cierra la parrilla. Reduce el fuego a medio.
- Asa el bistec de 15 a 20 minutos o hasta obtener un punto de cocción medio (160ºF). Retira el bistec de la parrilla; deshazte de la tabla. Cubre el bistec sin apretar con papel de aluminio; déjalo reposar por 5 minutos. Corta el bistec en rebanadas delgadas. Usa una cuchara y vierte sobre el bistec la mezcla de vinagreta que reservaste.

- Usa un mazo para adelgazar la carne hasta que tenga 1/8 pulgada de grosor; colócala en un plato poco profundo. Mezcla bien 2 cdas. del aderezo, el jugo de limón y el ajo. Vierte esta mezcla sobre los bistecs. Víralos para recubrirlos de manera pareja por ambos lados. Pon a marinar la carne en el refrigerador durante 1 hora.
- Saca la carne de la marinada; deshazte del líquido. Cocina, en una sartén grande, 2 de los bistecs en 1 cucharada del aderezo restante a fuego medio-alto durante 2-1/2 min. por lado o hasta que se cocinen por completo. Saca la carne de la sartén; colócala sobre la mitad inferior de dos de los panecillos. Tápalos a fin de mantenerlos calientes. Haz lo mismo con el aderezo, bistecs y los panecillos restantes.
- Pon la cebolla en la sartén; cocínala, revolviéndola de vez en cuando, por 5 min. o hasta que se dore un poco y esté tierna. Incorpora el perejil y pon esta mezcla sobre los bistecs; completa los sándwiches con la parte superior de los panecillos. Pincela con mantequilla ambos lados de cada panecillo.
- Calienta dos sartenes grandes a fuego medio-alto. Coloca los sándwiches en una de las sartenes. (En caso de que no quepan los cuatro sándwiches en la sartén, cocina los sándwiches por tandas.) Coloca sobre los sándwiches la otra sartén que precalentaste; presiona con cuidado la sartén a fin de aplastar un poco los sándwiches. Cocínalos de 4 a 5 min. por lado o hasta que ambas caras de los panecillos queden crujientes y se doren bien.

- Combina el aderezo, 2 cucharadas de salsa para carne, el azúcar y el ajo hasta que se mezclen. Vierte sobre el bistec en un plato plano de cristal; voltea el bistec para que se cubran los dos lados. Refrigera por 1 hora para que se marine.
- Calienta el aceite en una sartén grande a fuego medio-alto. Añade las cebollas; cocina y revuelve por 5 min. Tápalo; cocina a fuego medio-bajo por 15 min. o hasta que las cebollas se doren, revolviendo ocasionalmente.
- Mientras, calienta el asador. Retira el bistec del marinado; desecha el marinado. Coloca el bistec en una bandeja para asar. Asa el bistec, a 4 pulgadas del fuego, 8 min. por cada lado o hasta que esté listo (160ºF). Retira del fuego; tápalo. Deja reposar por 5 min. antes de cortar en rodajas finas en sentido transversal a las fibras. Vierte la salsa para carne restante sobre las cebollas. Sirve con la carne.

- Combine soy sauce, lime juice, garlic, sugar, fish sauce, and pepper in a bowl. Taste and adjust to your liking. Add sliced beef, making sure it is coated evenly. Marinate for at least 30 minutes or up to 1 hour.
- Heat 1 tablespoon oil in a wok or pan over medium-high heat. Fry potatoes in the hot oil until the edges turn golden brown, 7 to 10 minutes. Transfer to a plate.
- Heat remaining oil in the same pan over medium-high heat and fry onions until edges turn brown, 7 to 10 minutes. Transfer to the same plate.
- Heat the same pan over medium-high heat. Reserve marinade and fry beef in batches, adding more vegetable oil if necessary, until browned and no longer pink in the centers, 5 to 7 minutes. Transfer to the plate and continue with remaining beef.
- Pour the reserved marinade into the pan with water to deglaze, scraping up the browned bits from the bottom of the pan using a wooden spoon. Taste and adjust seasonings. Return beef back to the pan with some onion, leaving remaining onion for garnish; reduce heat and let simmer until sauce has thickened, 7 to 10 minutes.
- Slide beef and sauce onto a serving plate. Garnish with remaining onion. Place potatoes on the side and serve.
