2 tablespoons butter
2 tablespoons chopped onion
1 (16 ounce) package frozen chopped spinach, thawed and drained
3 eggs
1 ½ cups heavy cream
½ teaspoon salt
½ teaspoon ground black pepper
½ teaspoon ground nutmeg
½ cup shredded Swiss cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Spray a 9 inch pie pan with non-stick cooking spray.
  • Melt 2 tablespoons butter in a large saucepan over medium-high heat. Add onions and cook, stirring occasionally, until onions are soft. Squeeze extra water out of the spinach and add the spinach to the skillet. Continue cooking until the spinach is heated through and the extra water evaporates. Spoon mixture into pie pan.
  • In a large bowl, beat together eggs and cream. Stir in salt, pepper and nutmeg. Pour into pie pan, top with shredded Swiss cheese. dot with remaining 1 tablespoon of butter.
  • Bake 25 to 30 minutes until set and golden brown. Cool 5 minutes before serving.

1/2 cup crumbled feta cheese
4 medium green onions, sliced ( 1/4 cup)
1/2 cup Bisquick™ Original or Reduced Fat baking mix
2/3 cup milk
1/4 teaspoon salt
1/8 teaspoon pepper
2 eggs

Steps:

  • Heat oven to 400°. Grease pie plate, 9x1 1/4 inches. Mix spinach, cheese and onions in pie plate.
  • Stir remaining ingredients until blended. Pour into pie plate.
  • Bake 30 to 35 minutes or until knife inserted in center comes out clean. Let stand 5 minutes before serving.

1 bag (10 oz) washed fresh spinach, finely chopped
1 small red bell pepper, chopped (1/2 cup)
3/4 cup milk
2 tablespoons all-purpose flour
1/2 teaspoon salt
1/8 teaspoon ground nutmeg
3 eggs
2 tablespoons grated Parmesan cheese

Steps:

  • Heat oven to 350°F. Grease 9-inch pie plate with shortening. In 12-inch skillet, melt butter over medium heat. Add spinach and bell pepper; cook about 5 minutes, stirring occasionally, until spinach is wilted and bell pepper is crisp-tender.
  • In small bowl, beat remaining ingredients except cheese with wire whisk until smooth. Pour over vegetables in skillet; stir to mix. Pour into pie plate.
  • Bake uncovered about 30 minutes or until center is set. Sprinkle with cheese. Serve immediately.

This is a tasty and quick side dish--ready in just minutes. Note, this is a 'lite' souffle--for a more traditional souffle, double the sauce ingredients.

⅓ cup 1% milk
⅓ cup grated Parmesan cheese
1 teaspoon crushed garlic
salt and pepper to taste
2 (10 ounce) packages frozen chopped spinach, thawed and drained

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium bowl whisk together egg, milk, cheese, garlic, salt and pepper. Fold in spinach. Place in a small casserole dish.
  • Bake in preheated oven for 20 minutes, or until lightly set.
  • NOTE: If you are in a hurry, use a microwave safe casserole dish, cover with plastic wrap, and cook on high for 3 minutes. Release the steam, recover, and cook on high for another 3 minutes. Enjoy!

I had a recipe for a similar pie once from a Bisquick cookbook but I lost it. I made this one up based on a few other impossible pie recipes that I had and I actually liked my version better than the original one that I had so I thought I would post it. (Also this way I won't lose it again).

10 ounces frozen spinach, defrosted and water squeezed out
1/4 cup onion, chopped
1/4 cup roasted red pepper (from jar, chopped)
1/4 cup kalamata olive, chopped
1/2 cup feta cheese, crumbled
1/4 teaspoon oregano
1/4 teaspoon fresh ground pepper
3/4 cup Bisquick or 3/4 cup Bisquick reduced-fat baking mix
1 cup milk
3 eggs

Steps:

  • Combine spinach, onion, red peppers, olives and seasonings in a greased 9 inches pie plate.
  • Top with feta.
  • Mix Bisquick, milk and egg with whisk until smooth, then pour over other ingredients.
  • Bake at 400°F for 30-35 minutes until knife in center comes out clean.

1/2 cup Original Bisquick®
1 cup milk
1 teaspoon lemon juice
1/4 teaspoon pepper
3 eggs
3 tablespoons grated Parmesan cheese
1/4 teaspoon ground nutmeg

Steps:

  • 1. Heat oven to 350°. Grease pie plate, 9 x 1 1/4 inches. Melt margarine in 10-inch skillet over medium heat. Cook onions and garlic in margarine 2 to 3 minutes, stirring occasionally, until onions are tender. Stir in spinach. Layer spinach mixture and cottage cheese in pie plate.2. Stir Bisquick, milk, lemon juice, pepper and eggs until blended. Pour into pie plate. Sprinkle with Parmesan cheese and nutmeg.3.
