Soymilk, oats and whole wheat flour add a new twist to hearty pancakes.

3/4 cup quick-cooking oats
3/4 cup Gold Medal™ whole wheat flour
1 cup vanilla soymilk
2 tablespoons canola or vegetable oil
2 teaspoons baking powder
1/4 teaspoon salt
1/4 cup fat-free egg product
Syrup or fresh fruit, if desired

Steps:

  • In medium bowl, stir all ingredients except syrup or fruit, using wire whisk, until blended.
  • Spray griddle or 10-inch skillet with cooking spray. Heat griddle to 375°F or heat skillet over medium heat. For each pancake, pour slightly less than 1/4 cup batter onto hot griddle.
  • Cook pancakes until puffed and dry around edges. Turn; cook other sides until golden brown. Serve with syrup or fruit.

These tasty Bisquick pancakes are popular for a great reason - they're easy enough for kids to make on their own and they always turn out perfectly fluffy and golden! Make the classic Bisquick pancake version or try Bisquick's ultimate pancake recipe to get your weekend underway!

2 cups Bisquick
1 cup milk
2 large eggs
3 Tbsp sugar
2 tsp baking powder
2 Tbsp vegetable oil ((or melted butter))
1 tsp vanilla extract ((or vanilla paste))

Steps:

  • Heat a skillet over medium-low heat, or your griddle to 350°F (175°C) and coat with melted butter or non-stick cooking spray.
  • In a medium mixing bowl combine either just the base ingredients for the 'classic' Bisquick pancakes, including Bisquick baking mix, milk, and large eggs.
  • If desired, add the optional ingredients for the 'ultimate' Bisquick pancakes, including sugar, baking powder, vegetable oil (or melted butter), and vanilla extract or paste.
  • Stir until combined, and lumps in pancake batter are totally OK. Portion out the batter into your heated skillet or onto your griddle in scant 1/4 cup portions.
  • Cook on the first side for 30 seconds to a minute, until the surface bubbles have popped and the edges are dry enough to get your spatula under. Flip and cook for an additional 30 seconds.
  • Remove from your skillet or griddle when done and repeat as needed.

1 cup milk
⅔ cup quick-cooking oats
⅔ cup all-purpose flour
2 tablespoons brown sugar
1 ½ teaspoons baking powder
½ teaspoon salt
¼ teaspoon ground cinnamon
2 eggs
2 teaspoons butter, melted
½ teaspoon vanilla extract
¼ cup milk, or more as needed
2 teaspoons butter, or as needed

Steps:

  • Place 1 cup milk in a microwave-safe bowl; heat in microwave until bubbling, about 2 minutes. Stir in the oats.
  • Mix flour, brown sugar, baking powder, salt, and cinnamon together in a bowl. Whisk eggs, 2 teaspoons melted butter, and vanilla extract together in a separate bowl; add 1/4 cup milk. Mix oat mixture and egg mixture with flour mixture; stir to combine.
  • Heat 2 teaspoons butter on a griddle or skillet over medium heat; pour about 1/3 cup batter into the hot butter. Cook pancakes until bubbles appear on top layer, about 5 minutes. Flip and cook other side until evenly browned, about 5 more minutes.

Make these oat pancakes for breakfast or brunch and top with berry compote and a dollop of yogurt. They're tasty, healthy and full of fibre and vitamin C

1 orange , zested and juiced
120g frozen berries
1 small Pink Lady apple , finely diced
100g porridge oats
1 tsp baking powder
1 tsp cinnamon
100ml oat milk
1 medium egg , lightly beaten
1 tbsp cold pressed rapeseed oil
50g fat-free Greek yogurt

Steps:

  • To make the compote, put the orange juice, berries and apple in a small saucepan and gently simmer over a medium heat for 10-12 mins until the berries begin to burst and the apple has softened. Remove from the heat and leave to cool a little. Add a splash of water to loosen, if you like.
  • Blitz the oats in a food processor to form a coarse flour consistency, then tip into a mixing bowl. Add the baking powder, cinnamon and orange zest and stir well. Whisk together the oat milk and egg in a jug, then pour into the dry ingredients and combine to create a thick batter.
  • Heat a little of the oil in a non-stick frying pan, then pour in 2 tbsp of the batter to make a small pancake. Cook over a medium heat for 2 mins, or until small bubbles start to appear on the surface. Flip the pancake over and cook on the other side for 1 min, then transfer to a plate. Repeat with the remaining oil and batter (you should end up with six pancakes). Stack the pancakes on two warm plates, spoon over the compote and top with a dollop of the Greek yogurt.

1/2 cup blueberry syrup
3/4 cup quick-cooking oats
1 tablespoon packed brown sugar
1 cup fat-free (skim) milk
1/2 teaspoon vanilla
1 egg
1 cup reduced-fat all-purpose baking mix

Steps:

  • In 2-quart saucepan, cook topping ingredients over medium heat, stirring occasionally, until berries are thawed and mixture is warm. Remove from heat; set aside.
  • In medium bowl, mix oats, brown sugar, milk and vanilla; set aside.
  • Heat 12-inch nonstick skillet or griddle over medium-high heat, or heat to 375°F. Add egg and baking mix to oat mixture; stir just until all ingredients are moistened.
  • For each pancake, pour scant 1/4 cup batter into hot skillet; cook 1 to 1 1/2 minutes or until bubbly. Turn; cook 1 minute longer or until browned. Serve pancakes with topping.

  • Lightly grease a skillet with butter and wipe off extra grease with a paper towel. Heat the skillet over low heat. Pour the thickened batter into small circles (about 1/3 cup each). Cook the pancakes until the bubbles pop on the top and the bottoms are golden: low and slow is the key! Then flip them and cook until golden on the other side.
  • Add 1 tablespoon milk to the remaining batter and stir so that it is pourable. Cook the remaining batter, adjusting the heat as necessary (the skillet can get very hot on the second batch). Place the cooked pancakes under an inverted bowl to keep them warm. Serve immediately with maple syrup.
