CHIPOTLE CHICKEN WINGS
These Spicy and Sweet Baked Chipotle Chicken Wings are perfect for entertaining a crowd! They're sweet. They're spicy. They're finger-licking good!

Steps:
- Preheat oven to 400º F (200º C). Line a baking sheet with foil. Place a wired rack on top and spray it with oil.
- Pat dry the chicken wings with a paper towel.
- Place cumin, salt, paprika, black pepper, and baking powder in a gallon-sized bag. Shake the bag to combine. Add chicken and shake again to coat it evenly with the seasoning.
- Place seasoned chicken over the wired rack and spray with oil.
- Bake for 35 -40 minutes, turning once, or until cooked through and golden brown and crispy.
- In the meantime, make the chipotle sauce: Place a medium saucepan, over medium heat, add the Coca-Cola, chipotle, onion, garlic, brown sugar, and soy sauce; mix to combine. Bring to a boil; reduce heat to low and simmer until reduced by half, about 15 minutes. Stir in cornstarch slurry and cook until thickened, about 2 minutes. Set aside.
- When the chicken is cooked. Baste both sides of the chicken generously with the wing sauce and bake for 10 -15 minutes.
- Garnish with cilantro, if using, and lime wedges. Serve hot.

- Pulse chipotle peppers, adobo sauce, tomato paste, honey, olive oil and sea salt in a food processor or blender until smooth. Spread mixture evenly over chicken. Refrigerate, covered, at least 1 hour or overnight., Preheat oven to 400°. Place chicken on a rack in a shallow roasting pan, breast side up. Tuck wings under chicken; tie drumsticks together. , Roast 20 minutes. Reduce oven setting to 350°. Roast 1-1/2 - 1-3/4 hours longer or until a thermometer inserted in thickest part of thigh reads 170°-175°. (Cover loosely with foil if chicken browns too quickly.), Remove chicken from oven; tent with foil. Let stand 15 minutes before carving. If desired, skim fat and thicken pan drippings for gravy. Serve with chicken.

- Preheat the oven to 425 degrees F. Spray a large rimmed sheet tray with nonstick spray.
- Place the chicken on the sheet tray and sprinkle lightly with salt and pepper. Bake until cooked through and crisp, about 45 minutes.
- Meanwhile, combine the honey, soy sauce, vinegar, butter, garlic, chipotle and ginger together in a medium saucepan. Bring to a simmer and cook on low until thick and syrupy, about 15 minutes.
- Add the cooked wings to the bowl of sauce. Toss until completely coated. Add to a platter and sprinkle with the green onions.

- Heat oven to 200C/180C fan/gas 6. In a small bowl, mix the ingredients for the spice rub together. Put the chicken wings in a large bowl and mix with the spice rub and a good amount of seasoning. Spread out in a single layer on a large foil-lined baking tray (or 2 smaller ones). Roast for 45 mins, then remove from the oven and drain off any excess oil.
- Heat a gas or charcoal barbecue to high. Mix the ingredients for the hot sauce in a small bowl and brush all over the chicken wings. Cook the wings on direct heat on the barbecue for 3-4 mins each side or heat oven to 220C/200C fan/gas 7 and cook the wings for 15 mins. Serve with plenty of napkins.

- Preheat broiler and place oven rack 10 to 12 inches away from broiler element; arrange a rack set over a rimmed baking sheet.

- Combine green onion, honey, soy sauce, chili sauce, oyster sauce, sesame oil, ginger and garlic in large bowl. Add wings; toss to coat.

BIRD'S SWEET AND FIERY CHIPOTLE STICKY WINGS
I created this fiery sauce with a sweet orange overtone for wings, but it goes great with pork chops or chicken breast nuggets too. Using this preperation technique is key and produces some great wings. For your guests who might feel this is too hot, no worries. Simply serve it with some ranch dressing and it will tone them down, plus it adds a whole new level of yummy! A must try!

- SAUCE: Using a small food processor or an immulsion blender, mix all ingredients well and set aside.
- WINGS: Place one oven rack 4-6 inches from heat source, and the other in the center. Preheat oven to broil setting. Place wings on a baking sheet and sprinkle with salt and black pepper. Broil 4-6 inches from heat for 3 minutes per side, or until browned (being careful not to burn them).
- Switch your oven from Broil to bake 350°F Remove wings from broiler and place them into a 9x13" pan. Add sauce and mix well to coat the wings (It's a good idea to use a disposable pan, or cover it in foil to make cleanup easier).
- Bake for 20 minutes, turn wings over and use a spoon to baste with sauce. Return to oven and bake an additional 15 minutes.
- Sprinkle wings with brown sugar and bake an additional 5-10 minutes. Remove from oven and immidiately drizzle with a bit more honey, and serve with ranch dressing.

- Preheat oven to 450. Line a large baking sheet with foil and spray evenly with non-stick cooking spray or brush 1 tablespoon of oil all over the bottom of the foil lined baking sheet.
- Combine all of the ingredients except the lime juice, into a small saucepan over medium heat. Bring to a soft, controlled simmer and allow to reduce for about 5 to 8 minutes, stirring frequently. Taste as you go, adjusting the seasoning as you see fit. Add the lime juice at the very end, and stir. Remove from heat, cover loosely, and set aside to keep warm while the chicken cooks. As the glaze sits, it will thicken and become stickier by the minute — just a heads up.
- Rinse the chicken wings under cold water quickly, then pat each wing completely dry with paper towels. Season each chicken wing all over with kosher salt, black pepper, chili powder, smoked paprika, and a little cayenne pepper. If using the scallions, place them on the bottom of the greased foil-lined baking sheet. Arrange each wing flatter side up (see photo for reference) on top of the scallions, leaving at least 1-inch of space between each wing. If you arrange the wings too closely together, they will steam rather than crisp up. Sprinkle the lime zest over the top of each wing, evenly.
