SUNFLOWER AND APRICOT ENERGY BALLS



Sunflower and Apricot Energy Balls image

A simple, portable nut-free snack packed with healthy fats from the seeds and fibre from the fruit

Number Of Ingredients 6

200 g medjool dates (pitted)
100 g apricots (dark, unsulphured)
100 g sunflower seeds
50 g chia seeds
1 tbsp coconut oil (melted)
3 tbsp cacao (carob or cocoa powder, for dusting)

Steps:

  • Process the seeds in the food processor until finely chopped
  • Add remaining ingredients and blitz until the mixture comes together in a ball
  • Take large teaspoon sized chunks of the mixture and quickly and vigorously roll in balls - if you take too long the mixture heats up and becomes sticky
  • Put your cacao or cocoa on a plate and lightly roll each ball through, before laying on a plate or baking tray and storing in the fridge. Once they are set move to an airtight container in the fridge or freezer

1 cup sunflower seeds
2/3 cup quick oats
100 g apricots, chopped finely, I use kitchen scissors
2 tablespoons honey
1/3 cup orange juice
1/2 cup desiccated coconut, plus extra
desiccated coconut, for rolling

Steps:

  • Place all the ingredients in a food processor (minus extra coconut for rolling) and blend until smooth and it all comes together (add more oj or oats if necessary).
  • Roll into walnut sized balls and roll in extra coconut.
  • Chill to set.
  • Store in the fridge for 4-5 days.

300 g dried mixed fruit (called fruit medley in Australia)
150 g dried apricots
1 1/2 tablespoons reduced-fat coconut milk
1/2 cup desiccated coconut

Steps:

  • Place the fruit medley, dried apricots and coconut milk in a food processor and process until the mixture comes together.
  • Add a small amount extra cocnut milk if needed for a rollable consistency.
  • Shape into balls and roll in the coconut. Refrigerate until firm.

1 (400 g) can condensed milk
1 cup desiccated coconut
250 g Marie biscuits, crushed
3 tablespoons brandy
1 cup dried apricot, chopped
3/4 cup pecan nuts, chopped (optional)
coconut, for rolling balls in

Steps:

  • Mix together all ingredients.
  • roll into small balls.
  • then roll into coconut.
  • refrigerate.
  • can be frozen.
  • Enjoy :).
