PIONEER WOMAN FAVORITE MEATLOAF
Enjoy this, my friends! If you're on the fence about meatloaf, or even if you've written it off entirely as something you'd never ever try, give this a shot. Consider it adventure eating, like huitlacoche. Or calf nuts.

Steps:
- Preheat oven to 350 degrees Fahrenheit.
- Pour milk over the bread slices. Allow it to soak in for several minutes.
- Place the ground beef, milk-soaked bread, Parmesan cheese, seasoned salt, salt, black pepper, and parsley in a large mixing bowl.
- Pour in beaten eggs.
- With clean hands, mix the ingredients until well combined.
- Form the mixture into a loaf shape on a broiler pan, which will allow the fat to drain. (Line the bottom of the pan with foil to avoid a big mess!).
- Lay bacon slices over the top, tucking them underneath the meatloaf.
- Make the sauce. Add ketchup, brown sugar, dry mustard, and hot sauce in a mixing bowl. Stir together. Pour 1/3 of the mixture over the top of the bacon. Spread with a spoon.
- Bake for 45 minutes.
- Pour another 1/3 of the sauce over the top.
- Bake for another 15 minutes.
- Slice and serve with remaining sauce.
- Serve with mashed potatoes. Yummy!

MOM'S FAVORITE MEATLOAF
I don't really like meatloaf at all, but when mom made this one, she really had a hit with the entire family! Not your typical meatloaf -- very tasty! Use fresh sausage, not frozen! Use more crackers if the loaf seems too moist before cooking. Excellent for sandwiches the next day!!

- Preheat oven to 375 degrees F (190 degrees C).
- In a large bowl, combine the beef, pork sausage, French onion dip, eggs and crushed crackers. Mix well and shape into a loaf.
- Bake in a 5x9 inch loaf pan for 1 hour.

UNCLE BILL'S MEAT LOAF WITH CHICKPEAS
The chickpeas add another great texture to the meat loaf. I find that using both types of ground beef adds moisture to the meat loaf.

Steps:
- Preheat oven to 350°F.
- In a food processor, puree' onion and garlic.
- In a large bowl, combine onion/garlic puree', both ground beef, chickpeas, breadcrumbs, beaten egg, chili sauce, Dijon mustard, Worcestershire sauce, hot pepper sauce, cumin, salt, pepper and parsley; mix well to blend.
- Transfer mixture to a lightly oiled 9" x 5" loaf pan, press mixture firmly down and smooth the top.
- Cover with aluminum foil and bake in preheated 350 F oven for 45 minutes or until tested with a thermometer inserted into the center of the loaf; shoud read at least 160 - 165°F.
- In the meantime, prepare the topping in a small bowl, combine chili sauce and Dijon mustard.
- Remove loaf from oven and drain any fat that may have accumulated.
- Spread the chili sauce/Dijon mixture over the loaf.
- Immediately return meat loaf to oven and bake uncovered for another 30 minutes at 350°F.
- Remove from oven and let rest for about 15 minutes before slicing.
- This meat loaf is excellent eaten cold in a sandwich.

- In a large bowl, put the hamburger, bread, eggs, onion, tomato sauce, salt and pepper. Using your hands, mix everything together. Continue mixing until all of the ingredients are evenly distributed. Take your time, and do it well. Press this mixture into a 9- by 5-inch loaf pan, or another 2-quart size pan (like a casserole). Pack it tightly and smooth it so it looks nice on top.Bake at 350F for at least an hour. If the meat was cold from the fridge, bake for 1 1/2 hours. Remove the meatloaf from the oven. Let it rest for a few minutes to firm up. Drain off the fat if desired.

From my celebrity recipe collection. I can't imagine Bill Blass kicking back with meatloaf at a dinner party, but I guess he does! He recommends this be served with baked potatoes, red pepper jelly and corn pudding.

- Preheat oven to 350F degrees; oil a 8x4 loaf pan and set aside.
- In a large, heavy skillet over medium heat, saute the celery and onion in the butter until soft; remove from heat and set aside to cool for 5 minutes.
- Add the meats, parsley, sour cream, bread crumbs and spices to the skillet.
- Whisk the egg with the worcestershire sauce and add to mixture.
- Using a wooden spoon or your hands, combine the mixture and mold into a loaf shape.
- Place the meat loaf in the prepared pan; top with the chili sauce, then the bacon slices.
- Place on a cookie sheet-- to catch any drips-- and bake until cooked through and browned, at least 1 hour.

- Mix all ingredients together.
- Form into a loaf and place in a foil-lined bread pan. (There usually is about 2 inches of space on both ends between the meatloaf and the pan).
- Making sure the top is flat to insure even cooking.
- You can top it with extra ketchup, if desired.
- Bake at 425°F for 45 minutes.
