Steps:
- Bring a large pot of water to a boil over high heat. Add quartered potatoes and simmer for 10-15 minutes, until potatoes are still firm, but can be pierced with a fork. Drain potatoes and cool slightly.
- When potatoes are cool enough to handle, dice them into small cubes.
- Melt 3 tablespoons of butter in a large skillet over medium-high heat. Add potatoes and 1 tablespoon of steak seasoning.
- Cook, stirring often, until potatoes are golden brown and cooked through, about 15 minutes. Add more butter as needed, and more steak seasoning, to taste, if desired. Serve hot!

Steps:
- Cut potato into 1 inch cubes and chop or mince garlic (chopped is my preference)
- heat olive oil over medium heat.
- add chopped onion and cook until transparent.
- Gently place potato's on top on onions and minced garlic on top of potato's add salt and pepper.
- Cover and cook for 5 min.
- Stir and add 2 Tbsp of water and cover and cook for 5 min.
- Stir add 1 tbsp water cover and cook 5 more min.
- Uncover and using spatula or spoon chop potatoes to achieve mashed/chopped/cubed mixture.

Steps:
- Rinse shredded potatoes until water is clear, then drain and squeeze dry. Place shreds in a bowl, and mix in the onion, flour and egg until evenly distributed.
- Heat about 1/4 inch of oil in a large heavy skillet over medium-high heat. When oil is sizzling hot, place potatoes into the pan in a 1/2 inch thick layer. Cover the whole bottom of the pan, or make separate piles like pancakes. Cook until nicely browned on the bottom, then flip over and brown on the other side. It should take at least 5 minutes per side. If you are cooking them in one big piece, it can be cut into quarters for easier flipping.
- Remove from pan, and drain on paper towels. Season with salt and pepper and serve immediately.

- Shred potatoes into a large bowl filled with cold water. Stir until water is cloudy, drain, and cover potatoes again with fresh cold water. Stir again to dissolve excess starch. Drain potatoes well, pat dry with paper towels, and squeeze out any excess moisture.
- Heat clarified butter in a large non-stick pan over medium heat. Sprinkle shredded potatoes into the hot butter and season with salt, black pepper, cayenne pepper, and paprika.
- Cook potatoes until a brown crust forms on the bottom, about 5 minutes. Continue to cook and stir until potatoes are browned all over, about 5 more minutes.
