4 Ball Park® Hamburger Buns
4 sausage patties
8 eggs
Salt and pepper to taste
1 tablespoon olive oil
1 teaspoon Sriracha sauce, or to taste
½ cup mayonnaise
4 slices Cheddar cheese
1 cup arugula

Steps:

  • Preheat oven to 425 degrees F. Toast buns until golden brown.
  • Cook sausage patties in a skillet over medium heat until brown.
  • While preparing sausage, whisk the eggs together in a bowl and season with salt and pepper.
  • In a clean saute pan add 1 tablespoon of olive oil and scramble the eggs till cooked throughout.
  • Combine Sriracha sauce and mayonnaise and spread on each side of the buns.
  • Place a sausage patty onto the four bottom buns. For each sandwich, top sausage with eggs, cheese and arugula.
  • Serve while warm.

Freezer Sausage, Egg, and Cheese Breakfast Sandwiches image

Best ever freezer-friendly breakfast sandwiches for those busy mornings! Never skip breakfast again!

12 eggs, lightly beaten
Kosher salt and freshly ground black pepper, to taste
1 pound ground pork
1 teaspoon crushed fennel seeds
1/2 teaspoon dried thyme
1/2 teaspoon garlic powder
1/4 teaspoon dried oregano
Pinch of ground cayenne pepper
2 teaspoons canola oil
6 English muffins, split and lightly toasted
6 slices yellow American cheese

Steps:

  • Preheat oven to 350 degrees F. Lightly oil a 9 x 13 baking dish or coat with nonstick spray. Season eggs with 1 teaspoon salt and 1/2 teaspoon pepper. Add eggs to the prepared baking dish. Place into oven and bake util eggs are just set, about 13-15 minutes; let cool 5 minutes. Cut out 6 rounds using a 3 1/2-inch biscuit cutter. In a large bowl, combine ground pork, fennel seeds, thyme, garlic powder, oregano, cayenne pepper, 1 teaspoon salt and 1/2 teaspoon pepper. Divide the pork mixture into sixths and shape each portion into 3 1/2-inch patties. Heat canola oil in a large skillet over medium heat. Working in batches, add patties to the skillet and cook until golden brown, about 3-4 minutes per side; let cool 5 minutes. Place one sausage patty over the muffin bottom. Top with 1 slice cheese and 1 egg round, and then cover with another muffin top to create a sandwich. Repeat with remaining English muffins to make 6 sandwiches. Wrap tightly in plastic wrap and place in the freezer. To reheat, remove plastic wrap from the frozen sandwich and wrap in a paper towel. Place into microwave for 1-2 minutes, or until heated through completely. Serve immediately.

Homemade Breakfast Sandwiches with Homemade Maple Sausage, Egg and Cheese image

4 Portuguese or kaiser rolls, sliced in half
3 tablespoons unsalted butter, melted, plus 1 tablespoon not melted
1 tablespoon olive oil
Homemade Maple Sausage, formed into 4 (4-ounce) patties, recipe follows
4 large eggs
Kosher salt and freshly cracked black pepper
4 slices American cheese
Hot sauce, optional, for serving
Ketchup, optional, for serving
1 pound ground pork
2 tablespoons maple syrup
2 teaspoons chopped fresh sage
2 teaspoons salt
1 teaspoon fennel seeds
1 teaspoon granulated garlic
1 teaspoon granulated onion
1 teaspoon crushed red pepper

Steps:

  • Preheat the oven to 350 degrees F.
  • Brush the inside of each roll with the melted butter and toast in the oven until slightly crispy and golden brown, 5 to 6 minutes. Remove from the oven and set aside until you are ready to build your sandwich.
  • Heat the olive oil in a cast-iron or nonstick skillet over medium heat. Brown the sausage patties for 3 to 4 minutes per side. Once they are browned and cooked through, remove the patties to a paper towel-lined plate. In the sausage drippings, add the remaining tablespoon of butter and crack 4 eggs into the skillet. Sprinkle the eggs with salt and pepper and cook them to your desired doneness. For this I prefer a fried egg, cooking 2 minutes per side, but you can do whatever you like best. Once the egg is cooked to your liking, top each egg with a slice of American cheese. Place a lid over the skillet to melt the cheese.
  • To assemble a sandwich, place a sausage patty on the bottom half of the toasted roll and top with the egg and cheese. Have it plain or dressed with the condiments you prefer. I like to eat mine with ketchup and a little hot sauce!
  • In a large bowl mix the pork, maple syrup, sage, salt, fennel seeds, garlic, onion and red pepper. Cook the sausage however you like - make patties and sear or crumble and cook in a skillet like hash.
  • Cook's Notes: You can use all different types of meats and spices to make the sausage your own!
  • Make sure you form the sausage patties in the same size and shape of the bread you are using, that way every bite you take of the sandwich has every component it.

4 (1/3-inch-thick) breakfast pork sausage patties (6 oz), thawed if frozen
6 tablespoons coarsely grated Swiss cheese (2 oz)
4 large eggs

Steps:

  • Butter bread slices and arrange 2, buttered sides down, on a large plate.
  • Heat oil in a 12-inch nonstick skillet over moderately high heat until hot but not smoking, then cook patties, pressing with a spatula to flatten, until golden brown and cooked through, about 2 minutes on each side. Transfer to paper towels to drain briefly, then arrange 2 patties side by side on each plated bread slice. Top with cheese.
  • Fry eggs in fat remaining in skillet over moderate heat, seasoning with salt and pepper, until whites are barely set, about 1 1/2 minutes. Flip eggs with spatula and cook until whites are set and yolks are just set but still soft, 45 seconds to 1 minute more.
  • Carefully transfer eggs to sandwiches, topping each patty with an egg. Cover with remaining 2 bread slices, buttered sides up. Wipe out skillet.
  • Carefully transfer sandwiches to skillet and cook over moderate heat, turning carefully once, until golden, 2 to 4 minutes total. Halve sandwiches.

Easy Sausage Egg & Cheese Breakfast Quesadilla image

This is a fairly easy and tasty recipe. To save time I cook the breakfast sausage in advance and freeze 1/2 cup portions in small baggies and just take one out the night before making. Feel free to add or omit anything you like but keep in mind the more items inside the heavier it is and not as easy to flip in the frying pan. I like it just the way it is but you might like to serve with hot sauce or salsa. Cook & prep times are approximate. Hope you enjoy!

2 large burrito-size flour tortillas
1/2 cup cheese, grated (I prefer colby)
4 eggs, scrambled & cooked
salt (to taste)
fresh ground black pepper (to taste)
1/2 cup breakfast sausage, cooked, crumbled & drained
2 teaspoons oil (for frying)

Steps:

  • Brown the sausage, drain & set aside.
  • Scramble & cook the eggs, set aside.
  • Grate the cheese while heating the oil in a large non-stick pan.
  • Place one tortilla in the pan with 1/2 the cheese spread out evenly.
  • Add the scrambled eggs spreading out evenly and then the sausage.
  • Season with salt & pepper to taste.
  • Add remaining cheese spreading out evenly (the cheese is the glue that holds this together) and top with the other tortilla.
  • Cover with lid and cook for about 5 minutes or until browned then flip and brown the other side.
  • Remove to a plate and cut into 6 pieces and eat with fingers!

1 large egg white
1 whole-grain English muffin
1 slice (3/4 ounce) fat-free yellow American cheese

Steps:

  • Set a 3 1/2" round metal cookie cutter to one side in a medium nonstick skillet. Set the pan over medium-high heat until it is hot enough for a spritz of water to sizzle on it. Mist the skillet and the inner ring of the cutter with olive oil spray. Place the sausage on one side of the pan. Cook for 1 to 2 minutes per side, or until the sausage is no longer pink inside. Meanwhile, drop the egg white into the cookie cutter. Cook for 1 to 2 minutes, or until the egg white sets in the middle and the bottom starts to brown. Carefully (wearing an oven mitt) use a butter knife to loosen the egg white from the cutter. Remove the cutter and flip the egg white. Cook for 1 to 2 minutes, or until completely set. Remove from heat. Meanwhile, toast the muffin. Set the muffin bottom, cut-side up, on a plate. Top with the sausage, the cheese, the cooked egg white, and the muffin top. Serve immediately.
