MEAT-LOVER'S SLOW COOKER SPAGHETTI SAUCE



Meat-Lover's Slow Cooker Spaghetti Sauce image

This creates a great, chunky, and very meaty spaghetti sauce. The longer it cooks, the better it tastes!

2 tablespoons olive oil
2 small onions, chopped
¼ pound bulk Italian sausage
1 pound ground beef
1 teaspoon dried Italian herb seasoning
1 teaspoon garlic powder
½ teaspoon dried marjoram
1 (29 ounce) can tomato sauce
1 (6 ounce) can tomato paste
1 (14.5 ounce) can Italian-style diced tomatoes
1 (14.5 ounce) can Italian-style stewed tomatoes
¼ teaspoon dried thyme leaves
¼ teaspoon dried basil
½ teaspoon dried oregano
2 teaspoons garlic powder
1 tablespoon white sugar

Steps:

  • Heat olive oil in a skillet over medium heat; cook and stir onions and Italian sausage until the sausage is browned, about 10 minutes. Transfer the sausage and onions to a slow cooker. In the same skillet, cook and stir the ground beef, Italian seasoning, 1 teaspoon of garlic powder, and marjoram, breaking the meat up as it cooks, until the meat is browned, about 10 minutes. Transfer the ground beef into the slow cooker.
  • Stir in the tomato sauce, tomato paste, diced tomatoes, stewed tomatoes, thyme, basil, oregano, and 2 teaspoons of garlic powder. Set the cooker on Low, and cook the sauce for 8 hours. About 15 minutes before serving, stir in the sugar. Serve hot.

I wanted a meat sauce without carrots or celery in it--just good meaty tastiness. So, I came up with this one. It was rich and hearty, without those pesky vegetables getting in the way. Fiber, indeed!

1 1/2 lbs ground beef or 1 1/2 lbs ground turkey
2 tablespoons butter
1 tablespoon olive oil
4 ounces mushrooms, chopped
1 medium onion, chopped
2 cloves garlic, minced
2 teaspoons molasses
1 large tomatoes, peeled, seeded and chopped
1 teaspoon crushed red pepper flakes
1/2 teaspoon pepper
1/4 teaspoon dried rubbed sage
1 teaspoon dried basil
1 teaspoon dried oregano
1/4 teaspoon dried rosemary
2 medium bay leaves
3 (15 ounce) cans tomato sauce
1 cup shredded mozzarella cheese
1/2 cup grated parmesan cheese

Steps:

  • Saute tomato, mushrooms, garlic, onion in the butter, olive oil and molasses, until soft.
  • Place this mixture into a crockpot.
  • Brown the beef in a non-stick pan until no longer pink, and drain.
  • Pour on top of onion mixture in crockpot.
  • Pour tomato sauce into crockpot.
  • Add spices, bay leaves and cheese, and stir to mix evenly.
  • Slow-cook on low for 2-3 hours, stirring twice, or alternately, cook over very low heat on stovetop, stirring occasionally so that the cheese doesn't burn.
  • Serve over thick pasta.

2 tablespoons olive oil
1 small chopped onion
minced garlic
1 lb ground beef
1 lb sweet Italian sausage (I choose turkey Italian sausage as a low fat alternative) or 1 lb mild Italian sausage (I choose turkey Italian sausage as a low fat alternative)
2 (28 ounce) cans crushed tomatoes
1 (8 ounce) can tomato sauce
3 ounces tomato paste
1/4 cup fresh Italian parsley
2 teaspoons dry oregano
2 teaspoons dry basil
1/4 teaspoon crushed red pepper flakes
1 pinch white sugar
salt and pepper
1 cup of your favorite dry red wine (Shiraz or Syrah pairs best with red pasta sauces)

Steps:

  • On a large skillet heat oil on medium high heat.
  • Sauté the garlic and the onion until the garlic is golden brown and the onion is translucent.
  • Add the meats to the oil mixture to brown them; drain.
  • On a slow cooker, combine the meat mixture and the remaining ingredients and set in on low. Cook for 8-10 hours.
  • If you're in a hurry you can follow the first 3 steps and simmer the ingredients on a sauce pan for one hour.
