PAN-SEARED TUNA WITH AVOCADO, SOY, GINGER, AND LIME
Steps:
- In a mixing bowl, combine the cilantro, jalapeno, ginger, garlic, lime juice, soy sauce, sugar, salt, pepper, and 2 tablespoons of olive oil. Stir the ingredients together until well incorporated.
- Place a skillet over medium-high heat and coat with the remaining 2 tablespoons of olive oil. Season the tuna generously with salt and pepper. Lay the tuna in the hot oil and sear for 1 minute on each side to form a slight crust. Pour 1/2 of the cilantro mixture into the pan to coat the fish. Serve the seared tuna with the sliced avocado and the remaining cilantro sauce drizzled over the whole plate.
SEARED TUNA
Steps:
- Mix the cream and powdered wasabi in a small saucepan. Place over medium heat and bring to a boil. Then set aside.
- On a plate spread the black pepper. Press 1 side of the tuna steak onto the black pepper. Repeat with the other steak. Place a cast iron skillet over high heat. Add oil, and when smoking, place the tuna into the pan, pepper side down. Cook for approximately 1 to 2 minutes on each side. As the tuna cooks, the red meat will become whiter. Once you have cooked both sides, the tuna will be almost raw in the middle, thus seared.
- Slice the tuna, and arrange on a plate. Drizzle the wasabi sauce around and on top of the tuna. Lightly sprinkle with finely grated ginger. Serve immediately.
GRILLED TUNA WITH MOJO
Steps:
- 1. Heat an outdoor grill or a stovetop grill pan to medium-high.
- 2. Halve chile lengthwise, remove stem, and scrape out seeds.(For maximum heat, do not remove seeds.) Thinly slice chile and set aside.
- 3. Stir garlic and olive oil together in a medium microwave-safe bowl, cover loosely with plastic wrap, and microwave on HIGH until garlic is soft and aromatic, about 2 minutes. Stir in chile, lime juice, cilantro, and 1 teaspoon salt to hot oil. Set mojo aside to cool until ready to serve.
- 4. Brush tuna with olive oil and season generously with about 1/2 teaspoon salt and black pepper, to taste. Grill, turning once, until distinct grill marks are seared into fish, 3 to 5 minutes per side for medium rare or 4 to 6 minutes for medium-well. Let rest for 5 minutes.
- 5. Slice each tuna steak in half, divide among plates, and drizzle with some of mojo. Serve with green beans and any remaining sauce on the side.

Great combination of flavors and super easy from Rachel Ray. The recipe posted is her recipe, however, I use half the soy sauce and half the vinegar and half the sugar.

Steps:
- Mix all the ingredients for the sauce.
- Add the chopped tomato, cilantro and onion.
- Season the tuna very well with salt and pepper.
- Heat a large skillet over high heat and add the vegetable oil. When the oil is hot, sear the tuna for 30 seconds on each side. Remove from heat and slice the tuna into 1/4-inch slices. This should be rare to medium rare.
- To serve, neatly arrange the tuna slices and avocado slices on a plate and drizzle the sauce over the tuna.

- Whisk together all of the ingredients for the marinade in a shallow mixing bowl. Place the tuna steaks in a nonreactive baking dish and pour the marinade on top. Marinate the tuna, covered, in the refrigerator for 30 to 60 minutes, turning the steaks once or twice. Meanwhile, preheat broiler.
- Drain the tuna steaks and blot dry. Brush the steaks with the sesame oil. Grill the tuna for one minute on each side, or until cooked to taste. Sprinkle the tuna with the chopped scallion greens and sesame seeds and serve at once.
