FRIED CABBAGE WITH BACON, ONION, AND GARLIC
This is a family favorite that is put into every cookbook for my kids when they move out and get married. It is a beautiful dish with many colors and full of flavor. Warning, it is addictive.

Steps:
- Place the bacon in a large stockpot and cook over medium-high heat until crispy, about 10 minutes. Add the onion and garlic; cook and stir until the onion caramelizes; about 10 minutes. Immediately stir in the cabbage and continue to cook and stir another 10 minutes. Season with salt, pepper, onion powder, garlic powder, and paprika. Reduce heat to low, cover, and simmer, stirring occasionally, about 30 minutes more.

FRIED CABBAGE WITH BACON
My family loves this fried cabbage recipe. I serve it with homemade cornbread. Make a lot, because there will not be any left.

Steps:
- Cook bacon in a skillet over medium heat until crisp, about 5 minutes. Remove bacon and set aside. Add onion and garlic and cook in bacon grease until onion is soft and translucent, about 5 minutes. Stir in cabbage, paprika, sugar, salt, and pepper; mix to combine. Cook for about 10 minutes.
- Stir cooked bacon into the skillet with the cabbage mixture. Simmer over low heat until cabbage reaches the desired consistency, 20 to 30 minutes. Serve hot or warm.

- In a heavy skillet cook bacon over moderate heat, stirring, until crisp and transfer with a slotted spatula to paper towels to drain. Transfer 1 teaspoon drippings to a small bowl and reserve. In drippings remaining in skillet cook cabbage with salt and pepper to taste, stirring occasionally, until golden and add water. Cook cabbage until crisp-tender and transfer to a serving dish.
- In skillet heat reserved drippings over moderately high heat until hot but not smoking and sauté bread crumbs and caraway seeds with salt and pepper to taste, stirring, until bread crumbs are golden. Stir in bacon and sprinkle over cabbage.

- Add chopped bacon and cook for about 5-10min, until the fat begins to render out and the bacon begins to crisp. Remove the cooked bacon and reserve in a bowl.
- Add the sliced onion to the bacon drippings and sauté until soft and light brown (turn the heat down to med-low if necessary to prevent burning).
- Add the sliced cabbage to the pan and stir well. You want to begin coating the cabbage in the bacon dripping/oil mixture. Add sugar, if using, and stir well to incorporate. Cover with lid, stirring occasionally to prevent over browning. Cook until the cabbage is tender.

Add cabbage, breaking it apart with your hands as you add it to the skillet. Sauté until cabbage is as tender but still crisp, about 10 to 15 minutes. (You can speed things along by covering the skillet.) Add sugar, vinegar, salt and pepper. Cook until sugar dissolves, about 1 minute more. Remove from heat and add crumbled bacon.
- Serve as a side dish on its own or with grain of choice (I loved this with rice). Add an egg to make this a delicious, simple dinner!
