Homemade Big Mac image

The Homemade Big Mac tastes even better when you make this one at home.

1 1/2 pounds ground chuck
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon of butter
¼ cup special sauce
5 slices of American cheese
1 tablespoon minced onion
15 dill pickle slices

Steps:

  • In a bowl combine ground chuck and salt and pepper. Shape meat into 10 meat patties. Shape patties somewhat thin. Set a griddle to 350 degrees. Place meat on the griddle and cook for 3 to 4 minutes. Season with a sprinkle of salt and pepper. Flip burgers and cook for an additional 3 to 4 minutes on each side, or until juices from the meat run clear.
  • Spread softened butter on cut sides of bun and place on griddle until the bread begins to brown. Flip the middle bun and allow to toast on both sides.
  • Build the burger by starting at the bottom. The bottom bun, Big Mac sauce, onions, lettuce, cheese, hamburger patty, and the middle bun. Spread the Big Mac sauce, onion, lettuce, hamburger patty, two or three pickle slices, and finally the top bun.

Ground beef, special sauce, lettuce, cheese, pickles, onions, in a sesame seed-topped tortilla... try saying that in under 4 seconds! Skip waiting at the drive-through and make these savory and satisfying Big Mac®-inspired burritos at home in your air fryer.

¼ cup mayonnaise
1 tablespoon sugar-free ketchup
1 teaspoon mustard
1 teaspoon pickle juice
1 teaspoon apple cider vinegar
1 ¼ teaspoons salt, divided
¾ teaspoon ground black pepper, divided
12 slices dill pickle
1 pound ground beef
½ cup diced onion
2 teaspoons Worcestershire sauce
6 (8 inch) low-carb tortillas
1 ½ cups shredded Cheddar cheese
avocado oil cooking spray
1 teaspoon sesame seeds, or to taste
1 ½ cups shredded romaine lettuce, or to taste

Steps:

  • Mix mayonnaise, ketchup, mustard, pickle juice, vinegar, ¼ teaspoon salt, and ¼ teaspoon pepper together in a small bowl until well combined. Cut each pickle slice in quarters for 48 total pieces. Set both aside.
  • Heat a skillet over medium-high heat. Add ground beef and cook, crumbling with a spoon and stirring often, until browned, 5 to 7 minutes. Drain grease (if desired). Add onion to the beef and cook for 2 minutes. Stir in Worcestershire sauce, remaining 1 teaspoon salt, and remaining ½ teaspoon pepper. Remove from the heat.
  • Place one tortilla on a work surface. Add ½ cup Cheddar cheese. Top with about ½ cup beef mixture, 8 pieces pickle, and about 1 teaspoon sauce. Fold in the sides of the tortilla and roll over the filling into a burrito. Place burrito, seam-side down, on a plate while you prepare the remaining burritos.
  • Spray each burrito with cooking spray and sprinkle with sesame seeds. Place, seam-side down, in the air fryer basket.
  • Air-fry at 375 degrees F (190 degrees C) until golden and toasted, 5 to 7 minutes.
  • Serve with the remaining sauce and shredded lettuce.

BEEF AND BEAN BURRITOS



Beef and Bean Burritos image

1 medium onion, diced
2 pounds ground beef
1/2 teaspoon ground cumin
1/4 teaspoon chili powder
1/4 teaspoon ground oregano
1/4 teaspoon salt
Three 7-ounce cans Mexican tomato sauce (I use El Patobrand) or enchilada sauce
One 28-ounce can refried beans
3/4 cup grated Cheddar, plus extra for sprinkling
12 burrito-size flour tortillas
1/2 cup fresh cilantro leaves

Steps:

  • Preheat the oven to 170 to 180 degrees F.
  • In a large skillet over medium heat, cook the onions until softened. Then add the ground beef and cook until the beef is cooked through. Add the cumin, chili powder, oregano and salt and stir to combine. Pour 2 cans of the Mexican tomato sauce into the meat and simmer over low heat for 5 minutes. Add a little water if the mixture gets too dry.
  • Meanwhile, heat the refried beans in a saucepan over medium-low heat. Add the cheese, and stir it in till its melted. Remove from the heat.
  • Heat the tortillas in the microwave for 1 minute, and then spread a small amount of beans on each tortilla. Add a small amount of the meat. Fold over the ends of the tortilla, and then roll them up. Repeat with the rest of the tortillas. Then place them in a large baking dish, cover with foil and keep warm in the oven.
  • When ready to serve, drizzle the remaining can of tomato sauce over all of the burritos and sprinkle with more grated Cheddar. Return to the oven for a couple of minutes just to melt the cheese.
  • Sprinkle the tops with the cilantro leaves and serve immediately to the fork-bangers in your life. They'll kiss you and hug you. Repeatedly.

DECONSTRUCTED BIG MAC®

1 tablespoon mayonnaise
1 tablespoon ketchup
1 ½ teaspoons sweet pickle relish
¼ teaspoon sugar
¼ teaspoon white vinegar
⅛ teaspoon granulated garlic
½ pound ground beef
salt and ground black pepper to taste
3 large romaine lettuce leaves, or to taste
½ white onion, diced
1 ½ ounces grape tomatoes, sliced
½ cup shredded Cheddar-Monterey Jack cheese blend
1 (2 ounce) hamburger bun, split and toasted
1 spear dill pickle

Steps:

  • Combine mayonnaise, ketchup, dill pickle relish, sugar, vinegar, and garlic in a small bowl. Whisk until well combined and set sauce aside.
  • Divide ground beef into 10 rounds, 3/4 ounce each, and shape into a small patties. Season with salt and pepper.
  • Heat a skillet over medium-high heat and cook mini burgers until brown and cooked through, 3 to 4 minutes per side. Transfer to a paper towel-lined plate to drain.
  • Lay lettuce leaves on a large platter. Drizzle a small bit of sauce on top of the leaves. Place hamburger patties on top of the lettuce.
  • Drizzle more sauce on top of the patties and sprinkle with onion, tomatoes, and cheese. Add toasted bun and a pickle to the platter for garnish.
