CAJUN SAUSAGE PASTA (ONE-SKILLET MEAL)
This easy, incredibly tasty one-pot Cajun sausage pasta is a flavorful dish that's sure to please the entire family any night of the week! Rich, delicious andouille sausage combines with a rich and creamy pasta to make a pasta dish that's perfect with every bite!

Steps:
- Heat a stockpot to medium heat and sear the sausages with the olive oil (or cut the sausage links into slices and sear them sliced). Be sure to note a few additional minutes will be necessary if you are cooking raw andouille sausages.
- When the sausage is browned (or fully cooked) transfer it to a plate and set aside. Saute the minced garlic in the pan juices for 30 seconds to a minute then add the chicken broth, heavy cream, Cajun seasoning, Herbes de Provence, and linguine.
- Bring the pot to a boil then reduce heat and simmer uncovered for 12-15 minutes, stirring occasionally. Cook until the pasta is al dente (tender but with a firm core). Add the softened cream cheese to the sauce and stir it in until melted and the sauce is smooth and thickened.
- Use small amounts of water or broth as needed to thin the sauce (if needed) to your desired consistency. Return the sliced andouille sausage to your pasta and sauce, stir to coat thoroughly and warm the sausage through.
- Remove from heat and serve immediately. Garnish with optional chopped parsley.

- In a Dutch oven, cook pasta according to package directions, adding asparagus during the last 4 minutes of cooking. Meanwhile, in a large nonstick skillet, cook sausage over medium heat until browned. Add garlic; cook 1 minute longer. Stir in cream, Parmesan cheese, Creole seasoning and pepper; cook and stir until slightly thickened, about 3 minutes., Drain pasta mixture, reserving 1/2 cup cooking water; add to sausage mixture. Toss to coat, gradually adding enough reserved cooking water to reach desired consistency.

- In a large saucepan, saute onion and garlic in oil until tender. Add broth and wine. Bring to a boil; cook, uncovered, until liquid is reduced to 1 cup. Reduce heat. Stir in the tomatoes, tomato paste, sugar, cumin, cayenne and pepper. Cover and simmer for 15-20 minutes., Meanwhile, in a nonstick skillet, cook sausage and peppers over medium heat until sausage is no longer pink and peppers are tender; drain. Steps:
- Pour olive oil into the pot.
- Add diced chicken breast to the pot, cover with cajun seasoning, and stir until the chicken is evenly seasoned.
- Add sliced sausage and stir. Cook the meat on medium heat for 5-10 minutes or until the chicken is cooked through.
- Once the meat is cooked, add in the garlic, onion, peppers, and mushrooms, and stir. Continue stirring for 3-5 minutes as the veggies cook down.
- Add the dry pasta to the pot (if using long, thin noodles, break in half), then pour in the chicken broth. Stir until everything is well-mixed.
- Cover the pot and bring to a boil. Once boiling, keep covered bring the heat down to a simmer for 10 minutes (stirring every two minutes).
- NOTE: If there still extra chicken broth, you can discard it, cook longer until the liquid evaporates, or add a little cornstarch to thicken the liquid.
- Lastly, add heavy cream and parmesan and stir until your pasta is well blended. Stir in parmesan cheese.
- Garnish with green onions, more parmesan, a sprinkle of cajun seasoning (if you want some extra spice), and salt and pepper to taste.
