CAMARONES A LA DIABLA RECIPE (DIABLO SHRIMP)



Camarones a la Diabla Recipe (Diablo Shrimp) image

This spicy camarones a la diabla recipe, aka "diablo shrimp", is fiery shrimp simmered in a homemade chili sauce. Quick and easy to make!

3 ancho peppers
3 guajillo peppers
4 chile de arbol peppers
2 medium tomatoes (chopped)
1 small onion (chopped)
1 serrano pepper (chopped (optional, for additional heat - or use hotter, like a habanero pepper))
4 cloves garlic (chopped)
2 tablespoons apple cider vinegar
1 tablespoon vegetable oil
1 pound shrimp (peeled and deveined, patted dry)
Salt and pepper to taste

Steps:

  • Rinse the dried peppers (ancho, guajillo and chiles de arbol), then remove the stems and seeds. Set them into a large bowl and cover them with very hot water. Steep for 20 minutes to soften.
  • Drain then transfer the softened peppers to a food processor. Add the tomatoes, onion, serrano pepper, garlic, apple cider vinegar and 1/2 teaspoon salt. Process until smooth. Taste and adjust for salt. Strain, if desired, for a smoother sauce. Thin with a bit of water, if desired.
  • Heat the vegetable oil in a pan to medium-high heat. Season the shrimp with salt and pepper, then sear the shrimp for 30 seconds per side. Remove the shrimp and set it aside.
  • Add the diablo sauce and reduce the heat to medium. Simmer for 10 minutes to let the flavors develop.
  • Return the shrimp to the pan and toss. Simmer for 1-2 minutes to warm the shrimp and cook it through. Serve.

It was hard to get this written down as I've never really measured anything in it, but at the urging of many I did the best I could.

2 lbs extra lean ground beef
1 cup onion, chopped
1 cup frozen corn kernels
1/2 cup smoked sausage, cubed
1/2 cup bacon, thick-sliced, cooked and crumbled
1 teaspoon garlic powder
2 tablespoons chili powder
1 (15 1/2 ounce) can bean medley, with juice
1 (15 1/2 ounce) can kidney beans, with juice
1 (15 1/2 ounce) can baked beans, with juice
3 cups stewed tomatoes, cut up
1 beef bouillon cube (or packet)
1/2 cup jalapeno pepper, chopped
2 tablespoons Worcestershire sauce
1/2 cup red bell pepper, chopped
1 tablespoon habanero sauce (Sudden Death or other)
1 tablespoon butter
1 teaspoon thyme

Steps:

  • In a large high sided electric skillet (or large stew pot) combine beef and sausage and brown over med-high heat (sausage should be just crispy on the outside and beef should be nicely browned, not grey).
  • Add onion when almost finished and cook until onions are tender.
  • Combine all dry ingredients and spices in a small bowl and set aside.
  • Add tomatoes and beans to skillet mixing well and bring to a slow boil.
  • Add spice mix and stir well, continuing to boil.
  • Add bacon, corn, peppers and remaining ingredients to chili and mix well.
  • Reduce heat to low simmer and cover.
  • Cook for 2 hrs, stirring occasionally.
  • Finished chili should be thick.

LUCKY DEVILS DIABLO SAUCE

1 habanero pepper
1 jalapeno pepper
1/2 pasilla pepper
One 14 1/2-ounce can whole peeled tomatoes
1/8 cup chili paste
4 teaspoons soy sauce
1 1/2 teaspoons brown sugar
1/4 teaspoon cayenne pepper
1/4 teaspoon ancho chili powder
1/4 teaspoon California chili powder
1/4 teaspoon paprika
2 teaspoons chopped fresh cilantro
1/2 lime, squeezed

Steps:

  • Roast the habanero and jalapeno peppers over an open flame until they are charred on the outside. Remove from the heat and cool slightly. Remove the stems and the seeds. Remove the stems and seeds from the pasilla pepper as well. Set aside.
  • Place the tomatoes with their sauce into a large pot. Crush the tomatoes up more with your hands to break them up. Add the roasted habanero and jalapeno peppers, the pasilla chili paste, soy sauce, brown sugar, cayenne, ancho and California chili powders and paprika into the pot and bring to a low boil. Reduce the heat and simmer for 30 minutes.
  • Remove from the heat and cool it down. You can place it into the refrigerator. Once the sauce it cooled completely, add the cilantro and lime juice.
  • Puree in a food processor or blender until it is smooth. You can adjust the levels of peppers and chili powders to make the sauce hotter or milder to your liking. We love it hot!

CHI-CHI'S DIABLO SAUCE

I worked at Chi-Chi's for 16+ years. My favorite sauce over all those years was called Diablo Sauce. My favorite food to eat there was the Soft Taco Enchilada style with Diablo Sauce. A little shredded lettuce and pico de gillo on both sides. Yum!

1 lb ground pork
2/3 cup chopped white onion
1 (4 ounce) can diced green chilies, with juice
10 tablespoons la victoria green chili salsa
jalapeno (x-tra hot)
3 cups water
1 (1 1/4 ounce) package Ortega taco seasoning (Hot & Spicey)
2 tablespoons cumin
1/2 teaspoon salt
2 tablespoons cornstarch
1/4 cup water

Steps:

  • Brown ground pork, onions.
  • Add diced chilis, La Victoria salsa.
  • Add 3 cups water.
  • Add Ortega taco seasoning.
  • Add 1/2 tsp salt.
  • add 2 tbsp cumin.
  • combine 2 tbsp corn starch and 1/4 cup water and add too sauce.
  • continue to simmer till thickened.

DIABLO CHICKEN CHILI

2 lbs boneless skinless chicken breasts or 2 lbs chicken thighs
2 garlic cloves, minced
1 teaspoon chili powder
1 teaspoon cumin
2 medium onions, chopped
2 green peppers, chopped
3 carrots, chopped
3 teaspoons chili powder
3 teaspoons cumin
1 (28 ounce) can diced tomatoes, undrained
1 (14 ounce) can tomato sauce
1 (14 ounce) can seasoned tomatoes and green chilies (RO*TEL brand CHILI FIXIN'S version)
1 teaspoon salt
1/2 teaspoon pepper
2 tablespoons brown sugar

Steps:

  • In a large Dutch oven, brown chicken in oil, along with garlic and 1 teaspoon each of chili powder and cumin.
  • Remove chicken and cube/shred when cool.
  • Sauté vegetables (onions, peppers and carrots) with remaining amount of chili powder and cumin until they are soft.
  • Add the rest of the ingredients and simmer covered for 3 hours. Serve over cornbread or cooked rice.

3 tablespoons packed brown sugar
2 tablespoons paprika
2 tablespoons chili powder
3 teaspoons ground cumin

6 pounds pork baby back ribs
GLAZE:
1 cup reduced-sodium soy sauce
1 cup packed brown sugar
2/3 cup ketchup
1/3 cup lemon juice
1-1/2 teaspoons minced fresh gingerroot

Steps:

  • Mix the first 6 ingredients; rub over ribs. Refrigerate, covered, 30 minutes., Wrap rib racks in large pieces of heavy-duty foil; seal tightly. Grill, covered, over indirect medium heat until tender, 1 to 1-1/2 hours., In a large saucepan, combine glaze ingredients; cook, uncovered, over medium heat until heated through and sugar is dissolved, 6-8 minutes, stirring occasionally., Carefully remove ribs from foil. Place ribs over direct heat; brush with some of the glaze. Grill, covered, over medium heat until browned, 25-30 minutes, turning and brushing ribs occasionally with remaining glaze.
