BIG ISLAND PANIOLO TRI-TIP STEAK
Adapted from Sam Choy's Polynesian Kitchen. Best if grilled over kiawe or mesquite. Prep time includes marinating time.

Steps:
- Combine salt, garlic, ginger, soy sauce, brown sugar, sesame oil, and pepper in a large bowl.
- Add steak.
- Cover and let marinate for 1 hour.
- Preheat grill to medium.
- Grill steaks to desired degree of doneness, about 4-5 minute per side for medium rare.

Steps:
- Combine well, everything through the Black Pepper.
- Cover, cook on low, 6 hours.
- Stir every 3/4 hour or so.
- Increase heat to high.
- Add Bell Peppers and Brown Sugar.
- Combine Cornstarch, Pineapple Juice, and Soy Sauce.
- Add mixture to crock pot, mix well.
- Cover and cook an hour.
- Stir occasionally.
- Just before serving stir in Tomatoes and Pineapple chunks.
- Serve over Jasmine Rice, with hot, buttered chapattis and a nice Sangria.

- Rub salt, garlic , pepper, and sugar into the meat and let sit 30 minutes.
- Pulehu in Hawaiian means "to broil on hot embers" and that's what you do, turning the meat every 4 minutes.
- Total cooking time is about 10-15 minutes, depending upon the thickness of the cut.
