Simple to make butterscotch cookies. Makes a huge batch of at least 100 cookies. Great for Holiday baking or family reunions & church socials. Any time you need enough to feed a crowd :)

Number Of Ingredients 8

3 cups butter or 3 cups margarine, melted and cooled completely
6 large eggs
6 cups brown sugar, tightly packed
6 teaspoons vanilla
6 teaspoons baking powder
3 teaspoons baking soda
1 teaspoon cream of tartar
10 1/2 cups all-purpose flour

Steps:

  • Blend well all ingredients except the flour, use an electric mixer if possible.
  • Slowly add in 10+1/2 cups of all purpose flour.
  • Roll into walnut sized balls; place 2" apart on a lightly greased or parchment-lined cookie sheet.
  • Bake 10-12 minutes at 350°F.

Number Of Ingredients 8

1-1/2 cups butter, softened
3 cups packed brown sugar
3 eggs
1 tablespoon vanilla extract
5-1/4 cups all-purpose flour
1 tablespoon baking powder
1-1/2 teaspoons baking soda
1/2 teaspoon cream of tartar

Steps:

  • In a large bowl, cream butter and brown sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the flour, baking powder, baking soda and cream of tartar; gradually add to the creamed mixture and mix well (bowl will be full.), Drop by level tablespoonfuls 2 in. apart onto ungreased baking sheets. Bake at 350° for 10-12 minutes or until golden brown. Remove to wire racks to cool.

"This old-fashioned recipe has been in my family for years," writes Beverly Duncan of Big Prairie, Ohio. "It's also delicious with miniature chocolate chips or coconut in place of the toffee bits."

2 tablespoons butter, softened
2 tablespoons shortening
1 cup packed brown sugar
1 large egg
1 teaspoon vanilla extract
1-1/2 cups all-purpose flour
3/4 teaspoon baking soda
3/4 teaspoon cream of tartar
1/4 teaspoon salt
1/4 cup English toffee bits or almond brickle chips
1/4 cup finely chopped pecans

Steps:

  • In a large bowl, cream butter, shortening and brown sugar until light and fluffy. Beat in egg and vanilla. Combine flour, baking soda, cream of tartar and salt; gradually add to creamed mixture and mix well. Stir in toffee bits and pecans. Shape into a 10-in. roll; wrap in plastic. Refrigerate 4 hours or until firm., Preheat oven to 375°. Unwrap dough and cut into 1/2-in. slices. Place 2 in. apart on baking sheets coated with cooking spray. Bake 9-11 minutes or until lightly browned. Cool 1-2 minutes before removing from pans to wire racks. Freeze option: Place wrapped logs in resealable plastic freezer bag; freeze. To use, unwrap frozen logs and cut into slices. If necessary, let dough stand a few minutes at room temperature before cutting. Bake as directed.

6 cups quick-cooking oats
5-3/4 cups all-purpose flour
1 tablespoon baking soda
2-1/2 teaspoons salt
1 package (10 to 11 ounces) butterscotch chips
1 cup chopped pecans

Steps:

  • In a very large bowl, cream the butter, shortening and sugars until light and fluffy. Beat in the eggs, buttermilk and vanilla. Combine the oats, flour, baking soda and salt; gradually add to creamed mixture and mix well. Stir in chips and pecans. , Drop by rounded tablespoonfuls 3 in. apart onto ungreased baking sheets. Bake at 375° for 10-12 minutes or until golden brown. Remove to wire racks.
