BLEU CHEESE AND BACON BURGERS
Steps:
- For bleu cheese butter:
- In a small bowl with a fork, smash together butter and 2 tablespoons bleu cheese crumbles; set aside.
- In a mixing bowl, stir to combine ground beef, 1/3 cup bleu cheese crumbles, bacon pieces, and steak seasoning. Wet your hands to prevent sticking and shape into 4 patties slightly larger than the buns. Cover with plastic and set aside in refrigerator.
- Set up grill for direct cooking over high heat. Brush and oil grate before cooking. Salt and pepper burgers and place on hot grill. Cook for 4 to 5 minutes per side for medium. Serve hot on toasted onion roll. Spread with bleu cheese butter, lettuce, tomato, onion, and sliced avocado, if using.
- INDOOR: Follow instructions for preparing burgers. Preheat broiler. Place burgers on wire rack over foil lined baking sheet or broiler pan. Broil 6 inches from heat source for 4 to 5 minutes per side for medium.

Steps:
- 1. Cook Hamburger in very hot fry pan or on outside grill. I sear mine both sides and then turn heat down, so burgers remain moist. Salt and pepper slightly. I like mine just past pink, cooked through but not over done. If you like char put 1/4 teaspoon of Kitchen Bouquet on burger 2/3 way through cooking, turn a couple of times and move around to coat burger. It provides a great char due to sugar content. An alternative is sprinkle 1/8 teaspoon sugar, just a tad, on burger, flip to both sides. You won't taste the sugar.
- 2. Lightly toast bread. I use 1 slice cut in half, so the burger fills the slice, and you don't have an overly amount of bread.
- 3. When Burger is cooked place on 1/2 slice of bread, top with bleu cheese and place in microwave for 30 to 40 seconds to melt cheese.
- 4. Option: You could put Bleu Cheese on before removing burger from pan and allow to heat. The microwave speeds the process.
- 5. Compliment with Fries, Chips, Potato Salad or your choice. Enjoy.
- 6. Note: Many people like Bleu Cheese with their steaks. I prefer a little Butter and Lemon at times, or leave the steak bare.
- 7. Note: The lightly toasted dark bread makes this sandwich. A Hamburger Bun is a No No. Plain Rye would work.

Steps:
- Combine first 4 ingredients and divide meat into 4 equal amounts. When forming each patty, nestle a pile of blue cheese crumbles into the center of the meat, and gently form patty around cheese.
- Brush or drizzle burgers with extra-virgin olive oil and grill on indoor electric grill preheated to high for 7 to 8 minutes on each side. On an outdoor grill, cook 6 minutes on each side 6 inches from hot coals or over medium high gas flame with the grill lid closed. For preparation with no additional oil, broil 4 inches from broiler 7 minutes on each side.
- Serve burgers on split rolls with lettuce, tomato, and blue cheese dressing.
BLUE CHEESE BURGERS
Steps:
- Carefully mix the meats, bread crumbs, steak sauce, eggs, salt, and pepper with the tines of a fork, but do not mash them. Lightly form hamburger patties and press lightly into shape.
- Prepare a charcoal or a stove-top grill.
- Cook the hamburgers for 4 minutes on 1 side, then turn and cook 3 minutes on the other side for medium-rare. Remove to a plate and cover with aluminum foil. Allow the hamburgers to rest for 5 minutes. Meanwhile, grill the buns, cut side down, for 1 minute, until toasted. Place a hamburger and a slice of blue cheese in each bun, plus arugula and tomato, if desired, and serve hot.

- For the mayo, mix all of the ingredients together and set aside. If not using right away, keep in an airtight container in the fridge (the rosemary flavor will become more pronounced as it sits, which I love).
- For the burger, gently mix together the ground beef, onion, Worcestershire, rosemary, cumin, cinnamon, salt, and pepper until just combined (I use my fingers). Form into a single patty, about the size of your burger bun, making sure to press a shallow indentation in the center so it stays flat when you sear it.
