1 pound skinless, boneless chicken breast halves - cubed
1 cup sliced carrots
1 cup frozen green peas
½ cup sliced celery
⅓ cup butter
⅓ cup chopped onion
⅓ cup all-purpose flour
½ teaspoon salt
¼ teaspoon black pepper
¼ teaspoon celery seed
1 ¾ cups chicken broth
⅔ cup milk
2 (9 inch) unbaked pie crusts

Steps:

  • Preheat oven to 425 degrees F (220 degrees C.)
  • In a saucepan, combine chicken, carrots, peas, and celery. Add water to cover and boil for 15 minutes. Remove from heat, drain and set aside.
  • In the saucepan over medium heat, cook onions in butter until soft and translucent. Stir in flour, salt, pepper, and celery seed. Slowly stir in chicken broth and milk. Simmer over medium-low heat until thick. Remove from heat and set aside.
  • Place the chicken mixture in bottom pie crust. Pour hot liquid mixture over. Cover with top crust, seal edges, and cut away excess dough. Make several small slits in the top to allow steam to escape.
  • Bake in the preheated oven for 30 to 35 minutes, or until pastry is golden brown and filling is bubbly. Cool for 10 minutes before serving.

Mom's Fabulous Chicken Pot Pie with Biscuit Crust image

Leftover chicken or rotisserie chicken from the supermarket helps on the ease of preparation of this fabulous comfort style dinner. Fresh vegetables gives this a very special added flavor and is worth the effort. Everyone loves Mom's Chicken Pot Pie! Serve with a green salad.

¼ cup butter
1 small onion, chopped
3 celery ribs, chopped
3 carrots, chopped
⅔ cup frozen peas
3 tablespoons chopped fresh parsley
¼ teaspoon dried thyme
¼ cup all-purpose flour
2 cups lower-sodium chicken broth
⅔ cup half-and-half cream
salt and ground black pepper to taste
3 cups cooked chicken, cut into bite-size pieces
1 (16.3 ounce) can refrigerated flaky-style biscuits (such as Pillsbury Grands®)
1 egg yolk, beaten
1 tablespoon water

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Melt butter in a skillet over medium-low heat, and cook the onion, celery, and carrots until the celery and carrots are tender, about 15 minutes, stirring occasionally. Stir in peas, parsley, thyme and flour, and cook, stirring constantly, until the flour coats the vegetables and begins to fry, about 5 minutes. Whisk in chicken broth and half-and-half, and cook until the sauce is thick and bubbling. Season to taste with salt and black pepper, and mix in the chicken meat.
  • Transfer the chicken, vegetables, and sauce into a 2-quart baking dish. Arrange biscuits on top of the filling. In a small bowl, beat egg yolk with water; brush egg yolk on the biscuits.
  • Bake in the preheated oven until the biscuits are golden brown and the pie filling is bubbling, 20 to 25 minutes. Let rest 10 minutes before serving.

Recipe video above. Everybody's favourite Chicken Pot Pie! A creamy chicken and vegetable filling with a hint of thyme, topped with puff pastry. The smell when this is baking is SO GOOD! Makes 4 large, 6 medium or 1 large pie. Brilliant freezer standby meal.

600 g/1.2lb chicken breast ((or boneless thighs))
2 cups milk (, any fat % (Note 1))
1 cup chicken broth ((stock))
2 tsp chicken or vegetable stock powder ((Note 2))
2 sprigs thyme (, optional)
1 large onion (, chopped)
2 large carrots ((3 small). chopped)
3 celery ribs (, chopped)
2 garlic cloves (, minced)
50g / 3 tbsp butter
1 tsp dried thyme
1/3 cup white wine ((sub more chicken stock))
1/3 cup flour
1/2 cup grated parmesan
1/2 tsp black pepper
1 cup frozen peas (, no need to thaw)
2 sheets puff pastry ((enough to cover pots, with drape))
1 egg (, lightly whisked)

Steps:

  • Place milk, broth and stock powder in a large saucepan. Bring to a very gentle simmer over medium heat, add chicken and thyme.
  • Place lid on, simmer gently on medium low for 15 minutes (do not boil, can make milk split).
  • Remove chicken, shred or dice (don't worry if inside a bit uncooked). Cover pot and set poaching liquid aside.
  • Melt butter in a large pot over medium high heat. Add garlic and onion, cook for 2 minutes. Add thyme, carrot and celery, cook for 3 minutes or until carrot is softened.
  • Add wine. Stir, scraping the bottom of the pot, and cook for 1 1/2 minutes or until wine is mostly evaporated.
  • Add flour and stir for 1 minute.
  • Add about half the reserved poaching liquid and stir until all flour is incorporated - it will be a thick sludge.
  • Add remaining milk broth, parmesan, pepper. Stir.
  • Add chicken and peas, stir.
  • Once mixture is heated (you'll see steam), cook for 3 minutes to thicken the sauce, stirring regularly. (Note 3)
  • Remove from heat. Spoon into oven proof pots - 4 large or 6 small (Note 4). Cool in fridge at least 30 minutes. (Note 5)
  • Meanwhile, remove puff pastry from freezer to partially thaw. Then use a bowl as a guide to cut rounds from the pastry about 2.5cm / 1" wider (all the way around) than the pots - be generous!
  • Preheat oven to 180C/350F.
  • Brush edge of pots with egg. Top with puff pastry, folding down the edges.
  • Brush pastry with egg. Cut a 2cm / 2/3" slide in the middle with a small knife.
  • Bake 35 - 40 minutes until deep golden.
  • Serve immediately!

Not your usual chicken pot pie, this recipe adds a bit of sausage to the chicken, and I opted for vegetables that might not be in your mom's pot pie! In addition, the crust has some celery seed and paprika added, for some extra savory goodness, and it works well with cooked dark chicken. Serve with a salad and crusty bread for a complete meal.

½ pound breakfast sausage
2 cups boiling water
4 teaspoons chicken soup base
¼ cup unsalted butter
1 medium onion, chopped
1 (8 ounce) package fresh mushrooms, chopped
1 medium red bell pepper, seeded and chopped
3 cloves garlic, minced
1 ¼ cups all-purpose flour, divided
1 cup cream
½ (10 ounce) package frozen chopped spinach, thawed and well drained
2 cups chopped cooked chicken
½ teaspoon celery seed
½ teaspoon ground paprika
½ teaspoon salt
⅓ cup shortening
2 tablespoons ice water

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C).
  • Form sausage into mini meatballs and place on a rimmed baking sheet.
  • Bake in the preheated oven until nicely browned, 15 to 18 minutes. Transfer sausage to a paper towel-lined plate.
  • Reduce oven temperature to 350 degrees F (175 degrees C). Grease a deep-dish pie pan or a 2-quart casserole dish.
  • Combine boiling water and soup base in a bowl to create a double-strength chicken stock. Set aside.
  • Melt butter in a skillet over medium heat; stir in onion. Cook and stir until the onion has softened and turned translucent, about 5 minutes. Add mushrooms and bell pepper. Cook, stirring occasionally, until mushrooms begin to soften, 5 to 8 minutes. Add garlic; cook and stir until fragrant, about 1 minute.
  • Sprinkle 1/4 cup flour over the vegetables and stir until all are coated. Cook and stir for 2 minutes. Add reserved chicken stock and cream. Cook and stir until thickened, about 5 minutes. Stir in sausage, spinach, and cooked chicken. Pour mixture into the prepared pan.
  • Combine remaining flour, celery seed, paprika, and salt in a medium mixing bowl. Cut in shortening with a pastry knife or fork until mixture looks like coarse meal. Sprinkle ice water over flour mixture and stir unto a ball.
  • Transfer dough onto a lightly floured surface. Flour a rolling pin and roll dough into a circle large enough to cover the prepared pie pan or casserole dish. Carefully place dough on top of chicken filling and make several slits in the top.
  • Bake in the center of the preheated oven until filling is bubbly and crust is golden brown, 40 to 45 minutes. Cook on a rack for 10 minutes before serving.

Not Chicken a la King, and not a chicken pot pie, but this is comfort food, nonetheless. Leftover chopped chicken joins some great veggies and a beautiful white sauce on fresh, hot biscuits. This recipe would be delicious over rice or noodles, too! I added some Worcestershire sauce for a little boost of umami flavor.

1 (14.5 ounce) can chicken broth
⅓ cup sherry
1 tablespoon water, or as needed
⅓ cup unsalted butter
¾ cup sliced carrots
½ cup chopped onions
½ cup chopped celery
2 cups chopped fresh mushrooms
1 teaspoon kosher salt
½ teaspoon ground black pepper
4 cloves garlic, minced
⅓ cup all-purpose flour
1 ½ cups milk
½ cup heavy cream
2 cups chopped cooked chicken
1 ½ cups frozen green peas
2 teaspoons Worcestershire sauce
6 medium (blank)s biscuits, warmed
1 tablespoon chopped fresh parsley, or to taste

Steps:

  • Combine chicken broth and sherry, and add enough water to make 2 cups of liquid. Set aside.
  • Melt butter in a large, nonstick skillet over medium heat until bubbly. Add carrots, onions, and celery, and cook, stirring frequently, until the onions begin to soften and turn clear, 3 to 5 minutes. Carrots should be firm, but not crunchy. Stir in mushrooms, kosher salt, and pepper, and continue cooking for 2 minutes. Add garlic and cook, stirring occasionally, 1 to 2 minutes.
  • Stir in flour and mix until all the liquid is incorporated in the flour, about 2 minutes. Mixture will be thick. Add chicken broth mixture, stirring quickly to avoid lumps. Stir in milk and cream and bring to a boil. Cover, reduce heat to low, and simmer for 5 minutes.
  • Remove cover, stir in chopped chicken, frozen peas, and Worcestershire sauce. Increase heat to medium, bring to a boil, and cook, uncovered, about 5 minutes. Adjust salt and pepper, if necessary. If mixture becomes too thick, remove from heat and allow residual heat to cook the mixture for the remaining time. Stir in milk or water in 1-tablespoon increments to thin to the desired consistency.
  • To serve, split open a biscuit and place on a plate or in a bowl. Ladle chicken mixture over the biscuit and garnish with parsley, if desired.
