JUNGLE ANIMAL CUPCAKES
Lions and tigers, oh my! Create a jungle of decorating activities by making kids' favorite animals.

Steps:
- Heat oven to 350°F (325°F for dark or nonstick pans). Place paper baking cup in each of 24 regular-size muffin cups. Make and bake cake mix as directed on box for 24 cupcakes. Cool in pans 10 minutes; remove from pans to cooling rack. Cool completely, about 30 minutes. Decorate cupcakes to make 6 lions, 6 tigers, 6 monkeys and 6 zebras.
- In small bowl, mix 1/2 cup chocolate frosting with black food color to make black frosting. Place in resealable plastic freezer bag; cut small tip off 1 corner of bag. Use black frosting to decorate lions, tigers, monkeys and zebras (steps 3 through 7).
- Lions and Tigers: In medium bowl, mix 1 cup vanilla frosting with enough yellow and red food colors to make orange. In small bowl, mix 1 tablespoon orange frosting with 3 tablespoons white vanilla frosting to make lighter orange for muzzles. Frost 12 cupcakes with darker orange frosting. For muzzle, spread or pipe small circle of lighter orange frosting on each cupcake.
- For lions, place caramel corn around edges of cupcakes for mane. For eyes, add brown baking bits. For whiskers, break about 1/2-inch pieces off each end of pretzel sticks and insert in cupcakes. For ears, add cereal pieces. Using black frosting, pipe on mouth and nose.
- For tigers, use black frosting to pipe on stripes, nose and mouth. For eyes, add brown baking bits. For ears, add gumdrop halves.
- Monkeys: Frost 6 cupcakes with chocolate frosting. In small bowl, mix 1 tablespoon chocolate frosting and 2 tablespoons vanilla frosting to make light brown. For muzzle, spread or pipe circle of light brown on each cupcake that starts in middle and extends to edge; pipe small tuft of hair on opposite edge. For each eye, attach brown baking bit to marshmallow half with frosting; place on cupcakes. With black frosting, pipe on nose and mouth. For ears, add mints.
- Zebras: Cut small horizontal slit in top of 6 cupcakes near edge of paper cup. Insert edge of vanilla wafer cookie into each slit to create elongated face, adding small amount of vanilla frosting to cookie before inserting to help stick. Frost cupcakes with vanilla frosting. For muzzles, frost cookies with black frosting. With black frosting, pipe on stripes and mane. Add brown baking bits for nostrils and eyes. For ears, add black gumdrop halves, cut sides down.

BETTY CROCKER'S SUGAR COOKIES FOR BOYS AND GIRLS
One of the many benefits in moving is finding long lost recipes. Case in point;-this sugar cookie recipe which has been missing for at least ten years. The only real change was reducing the temperature by 50°. From the { original } Betty Crocker's Boys and Girls Cookbook from the 1950's. My brother's copy is tattered and torn; both front and back covers are missing but the recipe survived thankfully.

Steps:
- Preheat oven to 350°.
- Lightly grease a baking sheet or line with parchment paper.
- In a large mixing bowl, using a pastry blender blend the shortening, salt, lemon zest and sugar.
- Beat in the egg and milk until mixture is pale yellow.
- Sift the flour together with the baking powder and soda. Stir into the dough.
- Drop by rounded tablespoonfuls onto the baking sheet.
- Grease the bottom of a drinking glass. Dip the glass in sugar and flatten each cookie.
- Sprinkle cookies with nutmeg.
- Bake 10 minutes or until light golden brown around the edges.
- Cool on wire rack.

- Make cookie dough as directed on package, adding cocoa.
- Drop dough with by tablespoonfuls about 2 inches apart on ungreased cookie sheet. Flatten each cookie to 1/4-inch with a greased bottomed glass, dipped in 2 tablespoons sugar.
- Bake at 375°F 7 to 9 minutes. Immediately top each cookie with 1 marshmallow. Return to oven; bake 2 minutes longer until marshmallow is soft. Lightly press each marshmallow to flatten. Cool; place cookies on cooling racks. Cool completely.
- Heat in saucepan,1 cup sugar sugar, 1/4 cup butter and milk over medium-high heat, stirring occasionally, until mixture boils. Boil 1 minute. Remove from heat; cool 5 minutes. Stir in chocolate chips until melted. Sstir in water until frosting is smooth and spreadable. (Frosting sets up quickly, so thin as necessary with additional water).
- Swirl 1 tablespoon frosting on top of each cookie. Top with candy sprinkles. Let stand until frosting is set.

- Heat oven to 375°F. In small bowl, mix flour, baking soda and salt; set aside.
- In large bowl, beat softened butter and sugars with electric mixer on medium speed, or mix with spoon about 1 minute or until fluffy, scraping side of bowl occasionally.

BETTY CROCKER'S BUTTER COOKIES
These cutout cookies are crisp, buttery, and so-o good. They are my choice for delicate, flavorful Easter cookies, and I cannot believe they aren't already posted here. I use cookie cutters in traditional Easter shapes. A round cutter with scalloped edges makes beautiful cookies as well. Or use the comfort-grip cutters in an egg shape. Folks who think they are too old to decorate hard-cooked eggs will love decorating these cookies! Chillling time is not included in the timing of these cookies.

Steps:
- Mix the butter, sugar, and egg together thoroughly. Stir in the flavoring extract you have chosen.
- Sift the flour and baking powder together and stir inches Chill dough.
- Preheat oven to 425 degrees F.
- Rool dough very thin (1/8-inch) on a floured surface. Use cookie cutters to cut into desired shapes. Place on ungreased baking sheets.
- Bake in preheated oven for 5 to 7 minutes. Remove cookies when they are golden not browned. Place sheets of cookies on cooling racks to cool.
- After ten minutes remove cookies from baking sheets and finish cooling on racks.
- Baked, cooled cookies may be frosed with pastel frosting or the frosting may be piped around the edges.
