BEST EVER SWEET & SOUR CHICKEN
I tried some recipes for making sweet & sour sauce for chicken balls, while they were pretty good I quickly realized with a few tweaks and additions it could make the ultimate sweet & sour!! So I made some up, fried some chicken and then threw the chicken in the sauce.... WOW!!! What a great taste!! Steps:
- Add the oil, sugar, and vinegar to a small saucepan set on 1/4 full heat stirring until sugar dissolves in vinegar, then add the pineapple juice.
- Add the paprika and other spices followed by the ketchup, then the water.
- Turn up the heat a bit and stir frequently almost bringing to a boil for 2-3 minutes.
- Add cornstarch and flour, use a whisk to make sure no clumps form. Toss in the green peppers.
- Keep on low heat stirring occasionally, cook your chicken however you like it, I fry mine. If your sauce starts getting a bit to thick don't worry just add a small amount of water and stir.
- When you're finished cooking your chicken cut it up and toss it in the sauce which should now be almost ready. Cook it in the sauce for 4-7 minutes.
- Remove from heat and enjoy! For best results eat it all the day you make it.

BEST EVER SWEET AND SOUR CHICKEN
I found this recipe in 1973 in the 1973 National Chicken Cooking Contest book, when we were college students and had to make one chicken last three meals. I have been making this sauce for 38 years and still going strong! The original recipe listed a whole chicken, baked and boned by hand! Now we can buy chicken breasts! Frozen works great, too.

- Mix together sugar, tomatoes, pineapple, onion, vinegar, soy sauce, ginger and salt. Bring to boil and simmer, uncovered, 20 minutes. Mix corn starch with water, add to sauce mixture. Bring to boil and boil one minute or until smooth consistency. Remove from heat. Add green papper and let sit 4 minutes. Chicken may be dipped in sauce or sauce may be served over rice.
- Note: All ingredients may be prepared a day ahead, leaving only chicken to be fried.
- CHICKEN: Two checken breasts, cubed. May be deep fried or baked. A purchased tempura batter works well, just follow directions on box and fry according to instructions. Dip chicken in sauce or serve sauce over chicken and rice.
- NOTE: This recipe can be doubled and frozen for a quick meal. Simply freeze in an airtight jar or ziplock bag and thaw and heat, adding fresh green pappers if desired. Cook chicken and serve!

- In a saucepan, combine 1 1/2 cups water, sugar, vinegar, reserved pineapple juice, and orange food coloring. Heat to boiling. Turn off heat. Combine 1/4 cup cornstarch and 1/4 cup water; slowly stir into saucepan. Continue stirring until mixture thickens.
- Combine flour, 2 tablespoons oil, 2 tablespoons cornstarch, salt, white pepper, and egg. Add 1 1/2 cups water gradually to make a thick batter. Stir to blend thoroughly. Add chicken pieces, and stir until chicken is well coated.
- Heat oil in skillet or wok to 360 degrees F (180 degrees C). Fry chicken pieces in hot oil 10 minutes, or until golden. Remove chicken, and drain on paper towels.
- When ready to serve, layer green peppers, pineapple chunks, and cooked chicken pieces on a platter. Pour hot sweet and sour sauce over top.

This came from Taste of Home's Quick Cooking and is much better than anything I've created on my own. The sauce is thick and gooy and goes well with so many things.

Steps:
- Heat olive oil in large skillet; add onion, green pepper and carrot. Cook 5 minutes until onion is softened.
- Stir in broth, tomato sauce, brown sugar, white vinegar, pineapple with juice, and ketchup.
- Simmer 10 minutes or until vegetables are tender.
- While that's cooking, soak bread in milk in large bowl until milk is absorbed.
- Mix together with chicken, zucchini, egg, salt, pepper and garlic powder.
- Shape 12 meatballs, approx 2 tablespoons mixture each.
- Drop meatballs into the simmering sauce, cook 15 minutes or until cooked through.
- Turn over once during cooking; remove from heat and stir in rice.
- Cover and let stand 5 minutes.
- Fluff rice with fork before serving.
