Besitos de coco or coconut macaroons are a traditional Puerto Rican dessert that is easy to make with 3 ingredients. 14 ounces sweetened condensed milk (1 can)
14 ounces shredded Coconut Flakes (5 1/2 cups)
2 teaspoon of Vanilla extract
1 dash of Almond extract (Optional)

Steps:

  • Heat the oven to 325° F
  • Line baking sheets with parchment paper
  • Combine all ingredients in a bowl and blend well
  • Drop by teaspoonfuls to the baking sheets
  • Bake for 10 to 12 minutes or until lightly browned around the edges
  • Remove to a cooling rack to cool
  • Enjoy!

Meat of one fresh medium coconut, grated
1 cup water
1 1/2 cups dark brown sugar

Steps:

  • Combine the water and sugar in a heavy bottomed saucepan. Bring to a boil. Reduce the heat to low and cook, stirring occasionally, until it becomes like a hard ball or reaches 275 degrees F. Add the coconut and continue cooking until no steam rises from the pot and all the liquid has evaporated. Using a tablespoon, drop the coconut smooches onto a greased cookie sheet and let cool.

3 1/2 Tazas de coco rallado o en hojuelas
7 onzas de leche condensada dulce
2 cucharadas de maicena
1 cucharita de jugo de limón
1 cucharita de vainilla
un pincho de sal

Steps:

  • Pre-calentar horno a 400°F. Forrar las bandejas de hornear galletas con papel pergamino o de aluminio. En un bowl mediano, usando un cucharón de Madera, mezclar todos los ingredientes hasta que estén bien integrados. *Sin embargo no añadir toda la leche condensada hasta chequear la consistencia. La mezcla debe estar jugosa pero debe mantenerse unida. Si es necesario, añadir 2 cucharadas adicionales de leche condensada. Usando un molde circular de galletas o una cucharada y los dedos formar montecitos de 1" de diámetro y 1 1/2" de altura. Colocarlos como a 1 1/2" de separación en hoja de galletas preparadas. Hornear 15 a 20 minutos o hasta que la mayor parte de la superficie de las galletas esté ligeramente dorada. (Seguirán habiendo manchas blancas) Transferir las galletas a rejillas para enfriar. Guardarlas en recipiente bien cerrado en la nevera o congeladora.

2 cups grated coconut (bagged will do)
1 1/2 cups brown sugar
1 cup water

Steps:

  • Combine the coconut and water in a medium pot. Bring to a boil.
  • Add the brown sugar and stir. Cook on low heat until the sugar melts and the texture is thick and very sticky.
  • Drop by tablespoons on a greased cookie sheet or on a cookie sheet covered with wax paper or parchment.
  • Let the cookies cool down.
