SIMPLE BERRY SAUCE

Warm Berry Sauce poured over cold ice cream is truly one of my favorite desserts. I make this sauce year-round and every time I serve it, it gets raves.

Number Of Ingredients 2

2 cups frozen berries ((I typically use a mixture of cherries, strawberries, blueberries and raspberries.))
1/3 cup sugar

Steps:

  • Place the frozen fruit and the sugar in a small saucepan. Set the heat to low, stirring occasionally, until the berries have softened. This should take between 5-10 minutes.
  • Once the berries are mostly thawed, increase the heat to medium. Mash them with a potato masher and stir constantly while the liquid simmers for about 2 minutes.
  • Pour the warm mixture over vanilla ice cream or let cool and then serve with the dessert of your choice. Store in the refrigerator until ready to use. Enjoy!

3 tablespoons unsalted butter
1/4 cup packed light brown sugar
2 tablespoons fresh lemon juice
3 cups mixed berries (3/4 lb) such as raspberries, blackberries, and blueberries

Steps:

  • Melt butter in a skillet over moderate heat. Stir in brown sugar and lemon juice until sugar is dissolved. Add berries and cook, tossing gently (try to keep most of them from breaking up), until berries are warm and juices begin to be released, 2 to 3 minutes.
  • Serve warm or at room temperature.

1/2 teaspoon sugar (depending on the sweetness of the berries)
Juice from 1/2 lemon
4-5 grates of lemon zest
Vanilla ice cream

Steps:

  • Pour the frozen berries into a saucepan over medium heat. Sprinkle the sugar, lemon juice, and lemon zest over the berries and stir. Cook the mixture down until it reaches a saucelike consistency. Serve drizzled over ice cream.

1 cup fresh blueberries (rinsed)
1 tablespoon sugar

12 Pepperidge Farm Bordeaux cookies
Reddi-wip topping (optional) or Cool Whip (optional)

Steps:

  • Remove stem caps from strawberries. Slice strawberries thinly and combine with blueberries in medium bowl. Stir in sugar, water, and vanilla.
  • Place ice cream in four serving bowls; arrange 3 cookies around edge of each bowl. Spoon berries over ice cream. (Add whipped topping, if desired.) Serve right away.

3 half-pints fresh raspberries
2 half-pints fresh blueberries
1 1/2 cups sugar
3/4 cup water
2 tablespoons Framboise (optional)
2 pints good-quality vanilla ice cream

Steps:

  • Combine 2 half-pints raspberries with the blueberries, sugar, and 3/4 cup water in a medium saucepan. Bring to a boil, and cook uncovered over medium to low heat, stirring occasionally, until the sugar is a syrup and the berries have released their juices, 10 to 12 minutes. Remove from heat, and stir in the remaining half-pint of raspberries and the Framboise, if using.
  • Place 3/4 cup stewed berries in a bowl. Add a large scoop of ice cream to each bowl, and serve immediately.

1/3 cup water
2 teaspoons framboise (raspberry brandy), optional

Steps:

  • Combine a half-pint of raspberries, all the blueberries, sugar, zest and 1/3 cup water in a saucepan and bring to a boil. Lower the heat and cook uncovered over medium-low heat, stirring occasionally, for 8 to 10 minutes. The juice will become a syrup and the berries will be slightly cooked. Off the heat, stir in the remaining raspberries and the framboise, if desired.

1 recipe for Simple Berry Sauce
1 1/2 cups heavy cream
1 1/2 cups milk
2/3 cup sugar
1/4 teaspoon kosher salt
1 teaspoon vanilla extract

Steps:

  • Prepare the Berry Sauce recipe and set aside to cool a bit. Whisk together the cream, milk, sugar, salt, and vanilla. Add 1/3 cup of the Berry Sauce and stir to combine. Place the remaining berry sauce in the refrigerator to chill while the ice cream is churning.
  • Pour into your ice cream maker and freeze according to the manufacturer's instructions. Scoop the churned ice cream into a freezer container, adding a few spoonfuls of the COLD berry sauce along with the ice cream. Swirl lightly with a knife and freeze until firm.
  • Serve with remaining berry sauce on top. Enjoy!

Steps:

  • In a saucepan combine the strawberries, raspberries, blueberries and sugar, bring mixture to a simmer over moderately low heat, stirring gently, and simmer until sugar begins to dissolve. Add the liqueur and simmer, stirring occasionally, for 3 minutes.
  • Arrange ice cream in 4 serving dishes and immediately spoon hot sauce over.

SUMMER BERRY ICE CREAM

Egg-free ice cream, often called Philadelphia-style or American-style, is a traditional method that can yield phenomenal results if superior ingredients are used and if the ice cream is not pumped full of air (as many cheap store-bought brands are). From the perspective of a home cook, egg-free ice creams are simpler than custard-based ones, and more foolproof. You don't have to worry about tempering the yolks, or fear curdling. To soften the texture of egg-free ice creams, which otherwise freeze rock solid, David Lebovitz, author of "The Perfect Scoop," advised adding a few spoonfuls of alcohol or a liquid sweetener like honey or maple syrup. Adding more sugar also helps the texture, said Nick Morgenstern of Morgenstern's Finest Ice Cream, but so does simply leaving the ice cream at room temperature - or better, in the refrigerator - until soft enough to scoop.

1 1/4 cups berries (blueberries, raspberries, strawberries, blackberries combined)
2 cups heavy cream
1/3 cup sugar, plus 2 tablespoons, as needed
1/8 teaspoon kosher salt
2 tablespoons vodka

Steps:

  • In a bowl, mash berries with a fork or potato masher until just slightly chunky.
  • In a saucepan over medium-low heat, bring cream to a simmer with 1/3 cup sugar and the salt. Taste berries and if they are very tart, add 2 tablespoons sugar to saucepan. Simmer, stirring occasionally, until sugar dissolves. Transfer to a bowl, stir in vodka and place in refrigerator or in an ice bath to chill.

1 (4 ounce) package waffles, bowls
1/2 cup rum
3 tablespoons sugar
1 lb fresh strawberries, hulled, quartered
1 (8 ounce) package fresh blueberries
1 (6 ounce) package fresh raspberries

Steps:

  • Scoop 1/4 cup ice cream into 6 waffle bowls; set in freezer.
  • Combine rum and sugar in large skillet. Cook on MEDIUM-HIGH, stirring, 30 seconds-1 minute until sugar dissolves. Add berries; heat gently 1-2 minutes to warm through.
  • Serve: Spoon berry sauce over ice cream in bowls.

  • Combine remaining 1 tablespoon sugar, pine nuts and cloves in heavy small skillet. Stir over medium-low heat until sugar melts and pine nuts are golden brown, about 4 minutes. Transfer to plate if not using immediately.
  • Scoop vanilla ice cream into bowls. Top with strawberries, then with nuts.

  • Combine all of the berries in a large bowl and stir gently to combine. Spoon about 2/3 of the mixed berries into a medium saucepan; transfer the remaining berries to a small bowl and refrigerate until ready to serve.

  • Before serving, add the reserved berries to the sauce and stir to combine. If the sauce seems too thick, add a few tablespoons of water, a little at a time, until the desired consistency is reached.
