I spent several years in Malaysia eating a variety of Middle Eastern and Southeast Asian food. This was one of my favorite dishes! There are many versions of butter chicken, but this is similar to the Middle Eastern version I had. -Shannon Copley, Upper Arlington, Ohio

2 tablespoons butter
1 medium onion, chopped
4 garlic cloves, peeled, thinly sliced
2 teaspoons garam masala
2 teaspoons red curry powder
1/2 teaspoon chili powder
1 teaspoon ground ginger
2 tablespoons whole wheat flour
1 tablespoon olive oil
1 can (14 ounces) coconut milk
1/4 cup tomato paste
1 teaspoon salt
1/4 teaspoon pepper
3 pounds boneless skinless chicken breasts, cut into 1-inch pieces
Hot cooked rice
Optional: Fresh cilantro leaves and naan bread

Steps:

  • Heat large saucepan over medium-high heat; add butter and onion. Cook and stir until onions are tender, 2-3 minutes. Add garlic, cook until fragrant, 1 minute. Add garam marsala, curry powder, chili powder and ginger; cook and stir 1 minute longer. Add flour. Drizzle in olive oil until a paste is formed. Whisk in coconut milk and tomato paste; cook and stir until combined and slightly thickened, 1-2 minutes. Season with salt and pepper., Using an immersion blender, carefully puree spice mixture. Transfer mixture into a 5-qt. slow cooker. Add chicken; gently stir to combine., Cover and cook on low until chicken is no longer pink, 3-4 hours. Serve with rice. If desired, sprinkle with cilantro and serve with naan bread.

1 ⅔ cups coconut milk
½ cup butter
rice, to serve
coriander, to garnish

Steps:

  • In a slow cooker, throw in all the ingredients and mix to combine.
  • Place the lid on and cook on high for 4 hours.
  • Serve with rice and fresh coriander.

1 ½ lb red potato, halved
1 medium white onion, quartered
½ cup butter, softened
2 teaspoons rosemary, chopped
1 teaspoon thyme, chopped
salt, to taste
pepper, to taste
3 cloves garlic, minced
3 ½ lb whole chicken
1 lemon, wedge
1 fresh thyme, sprig
1 fresh rosemary, sprig
¾ lb green beans, fresh

Steps:

  • Slice the red potatoes in half.
  • Lay the potatoes and half of the onion in the bottom of the slow cooker.
  • Cut onion in half and save for later.
  • In a bowl, mix butter, rosemary, thyme, salt, pepper, and garlic until well-combined.
  • Stuff the chicken with the other half of the onion and lemon wedge.
  • Rub the herb butter mixture all over the outside of the chicken.
  • Place the chicken on top of the potatoes and onions in the slow cooker and place a sprig of thyme and rosemary on top. Cover and cook for 4 hours on high.
  • Remove the chicken from the slow cooker and place on a baking sheet. Remove the lemon and onion from inside the chicken.
  • Add the green beans to the slow cooker. Cover and cook for 20 minutes. Broil for 2-3 minutes or until the skin is golden brown. Let the chicken rest for 10 minutes before carving.
  • Enjoy!

1 lb baby carrot
8 boneless, skinless chicken thighs
1 teaspoon salt

1 teaspoon dried basil
½ cup balsamic vinegar
1 onion, sliced
1 lb green beans
fresh parsley, chopped, for garnish

Steps:

  • Pour olive oil and garlic in the bottom of a 6-qt slow cooker. Line the bottom with baby carrots, then place the chicken thighs over the carrots.
  • Season the chicken thighs with salt, pepper, garlic powder, basil and vinegar. Top with sliced onion.
  • Cover and cook on low heat for 8 hours or high for 4 hours. Add green beans during the last 30 minutes of cooking time.
  • Sprinkle with fresh chopped parsley and serve immediately.

Indian food is one of my favorites, so when my friend made this slow cooker version for my family we were head over heels! I don't think I've had a Butter Chicken that I've liked more. It's wonderful to put into the slow cooker in the morning and come home to the warm Indian spice smell....LOVE IT! Serve with basmati rice and warm naan bread.

2 tablespoons butter
2 tablespoons vegetable oil
4 large skinless, boneless chicken thighs, cut into bite-sized pieces
1 onion, diced
3 cloves garlic, minced
2 teaspoons curry powder
1 tablespoon curry paste
2 teaspoons tandoori masala
1 teaspoon garam masala
1 (6 ounce) can tomato paste
15 green cardamom pods
1 cup low-fat plain yogurt
1 (14 ounce) can coconut milk
salt to taste

Steps:

  • Melt the butter and vegetable oil in a large skillet over medium heat. Stir in the chicken, onion, and garlic. Cook and stir until the onion has softened and turned translucent, about 10 minutes. Stir in the curry powder, curry paste, tandoori masala, garam masala, and tomato paste until no lumps of tomato paste remain. Pour into a slow cooker, and stir in the cardamom pods, coconut milk, and yogurt. Season to taste with salt.
