You can also substitute ham or turkey for the chicken. This dish was named for Luisa Tetrazzini, a well known, well FED turn-of-the-century Italian singer!

8 chicken tenderloins
salt and pepper to taste
¾ cup fresh sliced mushrooms
1 red bell pepper, chopped
½ yellow bell pepper, chopped
1 (8 ounce) package uncooked spaghetti
¼ cup butter
¼ cup all-purpose flour
1 cup chicken broth
1 cup half-and-half
1 teaspoon garlic salt
ground black pepper to taste
½ cup shredded Swiss cheese
⅓ cup grated Parmesan cheese
¼ cup grated Parmesan cheese for topping

Steps:

  • In a large non-skillet, saute the tenderloins. Salt and pepper to taste. Add the mushrooms, red bell peppers and yellow bell peppers and cook until vegetables are tender.
  • Cook the spaghetti according to package directions. Drain and set aside.
  • In a large saucepan, melt the butter or margarine and blend in flour. Gradually stir in the chicken broth and half-and-half. Cook over medium low heat, stirring constantly, until the sauce begins to thicken. Add garlic salt and ground black pepper to taste. Blend in the Swiss and Parmesan cheeses and continue heating, stirring constantly, until the cheeses melt.
  • Stir in the chicken/vegetable mixture and heat thoroughly. Toss with the cooked pasta and top with grated Parmesan cheese, if desired.

1 (12 ounce) package rotini pasta
2 tablespoons butter
2 onions, chopped
2 stalks celery, finely chopped
½ cup finely chopped red bell pepper
2 ¼ cups milk
1 (10.75 ounce) can cream of mushroom soup
½ teaspoon poultry seasoning
¼ teaspoon salt
⅛ teaspoon ground black pepper
1 rotisserie chicken, meat removed and chopped
1 cup shredded Cheddar cheese, divided

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Prepare a 13x9-inch baking dish with nonstick cooking spray.
  • Bring a large pot of lightly salted water to a boil. Cook the rotini at a boil until tender yet firm to the bite, about 8 minutes; drain. Pour rotini into prepared baking dish.
  • Melt butter in a heavy saucepan over medium heat. Cook and stir onions, celery, and bell pepper in melted butter until softened, about 5 minutes.
  • Stir milk, cream of mushroom soup, poultry seasoning, salt, and black pepper into the onion mixture. Reduce heat to medium-low and bring to a simmer; about 5 minutes. Add chicken and 1/2 cup Cheddar cheese to the milk mixture; remove immediately from heat and pour over the rotini. Top pasta and sauce mixture with remaining Cheddar cheese.
  • Bake in preheated oven until cheese is melted and beginning to brown, about 25 minutes.

2 tablespoons olive oil
4 boneless skinless chicken breasts
2 1/4 teaspoons salt
1 1/4 teaspoons freshly ground black pepper
1 pound white mushrooms, sliced
1 large onion, finely chopped
5 cloves garlic, minced
1 tablespoon chopped fresh thyme leaves
1/2 cup dry white wine
1/3 cup all-purpose flour
4 cups whole milk, room temperature
1 cup heavy whipping cream, room temperature
1 cup chicken broth
1/8 teaspoon ground nutmeg
12 ounces linguine
3/4 cup frozen peas
1/4 cup chopped fresh Italian parsley leaves
1 cup grated Parmesan
1/4 cup dried Italian-style breadcrumbs

Steps:

  • Preheat the oven to 450 degrees F.
  • Spread 1 tablespoon of butter over a 13 by 9 by 2-inch baking dish. Melt 1 tablespoon each of butter and oil in a deep large nonstick frying pan over medium-high heat. Sprinkle the chicken with 1/2 teaspoon each of salt and pepper. Add the chicken to the hot pan and cook until pale golden and just cooked through, about 4 minutes per side. Transfer the chicken to a plate to cool slightly. Coarsely shred the chicken into bite-size pieces and into a large bowl.
  • Meanwhile, add 1 tablespoon each of butter and oil to the same pan. Add the mushrooms and saute over medium-high heat until the liquid from the mushrooms evaporates and the mushrooms become pale golden, about 12 minutes. Add the onion, garlic, and thyme, and saute until the onion is translucent, about 8 minutes. Add the wine and simmer until it evaporates, about 2 minutes. Transfer the mushroom mixture to the bowl with the chicken.
  • Melt 3 more tablespoons butter in the same pan over medium-low heat. Add the flour and whisk for 2 minutes. Whisk in the milk, cream, broth, nutmeg, remaining 1 3/4 teaspoons salt, and remaining 3/4 teaspoon pepper. Increase the heat to high. Cover and bring to a boil. Simmer, uncovered, until the sauce thickens slightly, whisking often, about 10 minutes.
  • Bring a large pot of salted water to a boil. Add the linguine and cook until it is tender but still firm to the bite, stirring occasionally, about 9 minutes. Drain. Add the linguine, sauce, peas, and parsley to the chicken mixture. Toss until the sauce coats the pasta and the mixture is well blended.
  • Transfer the pasta mixture to the prepared baking dish. Stir the cheese and breadcrumbs in a small bowl to blend. Sprinkle the cheese mixture over the pasta. Dot with the remaining 3 tablespoons of butter. Bake, uncovered, until golden brown on top and the sauce bubbles, about 25 minutes.

3 -3 1/4 cups chopped frozen chicken tenderloins
1 1/2 teaspoons salt
1 1/2 teaspoons pepper
1 (8 ounce) package dried spaghetti
1 cup sliced fresh mushrooms
1 large red pepper, chopped
1/4 cup butter or 1/4 cup margarine, melted
1/4 cup all-purpose flour
1/2 teaspoon garlic salt
1 cup half-and-half
2 cups shredded sharp cheddar cheese, divided
1 (10 3/4 ounce) can cream of mushroom soup, undiluted
3/4 cup grated parmesan cheese, divided
1 teaspoon paprika

Steps:

  • Place frozen chicken tenderloins in pan; add water to cover.
  • Add 1 teaspoon salt and 1 teaspoon pepper, and bring to a boil.
  • Cover, reduce heat, and simmer 1 hour or until chicken is tender.
  • Remove chicken from broth, reserving broth.
  • Let chicken cool to touch. Shred chicken.
  • Add enough water to reserved broth to measure 3 quarts; Bring to a boil.
  • Cook spaghetti in broth according to package directions and drain.
  • Saute sliced musrooms and red pepper in butter over medium-high heat until tender.
  • Add flour, garlic salt, 1/2 teaspoon salt, and 1/2 teaspoon pepper; stir until smooth.
  • Cook 1 minute, stirring constantly.
  • Gradually stir in half-and-half, and cook until mixture is thickened, stirring gently.
  • Add 3/4 cup Cheddar cheese, stirring until cheese melts.
  • Add shredded chicken, mushroom soup, and 1/2 cup Parmesan cheese; stir well.
  • Combine chicken mixture and spaghetti, tossing until combined.
  • Spread mixture in a greased 13x9 inch baking dish.
  • Bake, uncovered, at 350 degrees for 20 to 25 minutes or until thoroughly heated.
  • Combine remaining 1/4 cup Parmesan cheese and 1 teaspoon paprika; stir well.
  • Sprinkle remaining 1 1/4 cups cheddar cheese in diagonal rows across top of casserole.
  • Repeat with parmesan-paprika mix.
  • Bake 5 more minutes or until cheddar cheese melts.

This is the number one most requested dish at my house. Even my picky pre-teen daughters love this. Legend has it that this dish is named after a nineteenth century opera singer, Luisa Tetrazzini. This dish MUST be made a day in advance.

4 boneless chicken breasts
1 teaspoon onion salt
1 1/2 teaspoons celery salt
1/2 teaspoon pepper
1/8 teaspoon nutmeg
6 tablespoons butter
1/2 teaspoon salt
2 tablespoons flour
1 cup whipping cream
2/3 cup parmesan cheese
1 tablespoon lemon juice
1/4 teaspoon paprika
1/2 lb uncooked spaghetti

Steps:

  • Cook chicken in lots of water until done. Save the stock!
  • Tear chicken into pieces and toss with onion salt and celery salt. Set aside.
  • Cook 1/2 lb of spaghetti per label directions in the reserved chicken stock. (add more water as needed).
  • Drain spaghetti and place in 9 x 13 baking dish.
  • In a skillet heat 3 tbsp butter,1 tbsp lemon juice and 1/2 tsp salt until melted. Pour this mixture over cooked spaghetti and toss lightly.
  • In same skillet slowly heat another 3 tbsp butter, 2 tbsp flour, 1/2 tsp pepper, 1/8 tsp nutmeg and 1/4 tsp paprika until smooth and thick. Remove from heat.
  • Add whipping cream to above mixture and stir.
  • Add the above to the chicken and toss.
  • Spoon chicken evenly over spaghetti.
  • Cover the chicken and spaghetti with 2/3 cup of grated Parmesan cheese.
  • Cover and refrigerate overnight.
  • Cook uncovered for 25 minutes in a 400 degree oven and enjoy!

I got this recipe from a Myra Waldo around the world cookbook many, many years ago and it is still my favorite Tetrazzini recipe. I use the sauce in many other recipes ( chicken divan, etc.) and as a substitute for cream of.... in some recipes. It makes a lot. (She suggested putting it in two 2 1/2 quart casseroles and freezing one.) It is also good made with leftover turkey. I often increase the amounts of the cheeses.

3/4 lb spaghetti
1/4 lb butter
1 lb mushroom, sliced
5 tablespoons flour
3 cups chicken broth
1 1/2 cups heavy cream
1 1/2 teaspoons salt
1/2 teaspoon white pepper
1/8 teaspoon nutmeg
4 tablespoons dry sherry or 4 tablespoons white wine
1/2 cup swiss cheese, grated
4 cups cooked chicken (or turkey)
1/2 cup parmesan cheese

Steps:

  • Cook spaghetti 1- 2 minutes less than package directions.
  • Melt half the butter in skillet and sauté sliced mushrooms for 5 minute.
  • Melt remaining butter in a saucepan.
  • Stir in flour until smooth.
  • Gradually add chicken broth and cream, stirring constantly, until it reaches boiling point.
  • Cook on low heat for 10 minutes.
  • Stir in salt, pepper, nutmeg, wine and swiss cheese until cheese melts.
  • Mix 1/2 of the sauce with the mushrooms and spaghetti.
  • Mix remaining half of the sauce with the chicken.
  • Layer in a large casserole (or in two 2 1/2 quart casseroles and freeze one).
  • Sprinkle with parmesan cheese.
  • Bake in a 350°F oven for 25 minutes or until heated through and browned.
  • To cook when frozen:.
  • Place covered in preheated 325°F oven for 20 minutes.
  • Remove cover and sprinkle with 1/4 cup parmesan cheese.
  • Raise oven temperature to 350°F and bake for 20 minutes or until browned.

½ cup butter
4 boneless chicken breast halves, cooked

1 (16 ounce) container sour cream
2 tablespoons grated Parmesan cheese

Steps:

  • Break spaghettini into 1 inch pieces. Cook according to package directions. Drain.
  • Saute mushrooms in butter or margarine. Cut chicken into large pieces, and mix with mushrooms. Stir in sour cream and condensed soup. Fold in noodles. Turn into a buttered casserole dish, and sprinkle with the Parmesan cheese.
