BEIJING BANANA TOFFEE (DEEP FRIED BANANAS)



Beijing Banana Toffee (Deep Fried Bananas) image

Wonderful treat in winter You can use apple as well. I haven't tried any other fruits, but I guess anything that keeps its shape.

4 large bananas
1/4 cup all-purpose flour
1/4 cup cornstarch
1 large egg
1 teaspoon water
3/4 cup granulated sugar
2 tablespoons sesame seeds, toasted
ice water (large bowl)
peanut oil, the best to use

Steps:

  • Peel bananas and cut them into 1.5" chunks Combine flour, cornstarch, egg, water and mix till smooth.
  • Heat frying oil till moderately hot.
  • Dip the banana chunks into the batter, lift them out one at a time, tap off the excess batter and put them into the hot oil.
  • Fry for 1-2 minutes, till the batter is golden.
  • Lift them out right away and drain on paper towels.
  • Have the bowl of ice water nearby.
  • Put sugar and sesame seed in a clean dry pot, melt the sugar till it darkens a little.
  • Reduce heat to very low, just to keep it warm but not burned.
  • Dip the fried banana chunks in, a few at a time, coat them thoroughly with sugar syrup and sesame.
  • Lift them out into the ice water to harden, then lift them right now.
  • Serve right away with vanilla ice cream.
  • This dish doesn't freeze at all, and you should serve it right away.

I always love these after a good Chinese... never tried making them myself, but now I definitely will!

4 bananas, cut into big pieces
2 eggs, whisked
10 g flour
6 g cornflour
10 g custard powder
20 g oil (for frying)
500 g caster sugar
15 g sesame seeds

Steps:

  • Prepare a batter by mixing together egg, flour, cornflour, custard powder and a little water (to make a runny batter).
  • Heat oil in a wok, dip the banana pieces in the batter and deep fry.
  • Remove, drain excess oil and keep aside.
  • In a separate pot, cook the castor sugar along with water and oil till it turns golden in colour.
  • Dip the friend banana pieces in the sugar syrup to coat evenly.
  • Remove drain excess syrup and keep aside.
  • Sprinkle sesame sees on top and dip in ice water for a few minutes.
  • Remove and serve.

1 cup all-purpose flour
1/4 cup sugar
1 teaspoon salt
1/4 teaspoon ground nutmeg
1 egg, large, lightly beaten
1 tablespoon vegetable oil
1/2 cup milk
1 teaspoon vanilla
vegetable oil
9 bananas, firm and ripe, sliced into 1 inch pieces

Steps:

  • In a small bowl, combine the first four ingredients.
  • In a large bowl, combine the egg, oil, milk, and vanilla. Gradually add the flour mixture to the egg mixture, stirring often.
  • Pour the oil to a depth of 2 inches into a Dutch oven; heat to 375 degrees. Dip the banana slices into the batter; fry in hot oil 3 1/2 to 4 minutes or until golden. Drain on paper towels.
