Ina Garten's Roasted Beets from Food Network are sweet, aromatic and slightly sharp from the raspberry vinegar and orange juice tossed in at the end.

Number Of Ingredients 7

12 beets
3 tablespoons good olive oil
1 1/2 teaspoons fresh thyme leaves, minced
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
2 tablespoons raspberry vinegar
Juice of 1 large orange

Steps:

  • Preheat the oven to 400 degrees.
  • Remove the tops and the roots of the beets and peel each one with a vegetable peeler. Cut the beets in 1 1/2-inch chunks. (Small beets can be halved, medium ones cut in quarters, and large beets cut in eighths.)
  • Place the cut beets on a baking sheet and toss with the olive oil, thyme leaves, salt, and pepper. Roast for 35 to 40 minutes, turning once or twice with a spatula, until the beets are tender. Remove from the oven and immediately toss with the vinegar and orange juice. Sprinkle with salt and pepper and serve warm.

These sweet orange-laced beets go well with arugula and goat cheese salad or a roast beef dinner.

1 bunch beets (about 1 1/2 pounds), scrubbed, peeled, and cut into 1-inch pieces
1 teaspoon extra-virgin olive oil
Coarse salt and ground pepper
2 tablespoons red-wine vinegar
1 teaspoon honey
1/4 cup fresh orange juice
2 teaspoons finely grated orange zest
2 teaspoons fresh thyme leaves

Steps:

  • Preheat oven to 425 degrees. Place beets on a large piece of foil on a baking sheet. Drizzle with olive oil and season with salt and pepper. Fold foil around beets and crimp ends to form a packet. Roast until tender when pierced with a knife, about 45 minutes.
  • Transfer beets to a large bowl and drizzle with vinegar, honey, and orange juice. Top with orange zest and thyme.

2 1/4 lbs fresh beets
5 tablespoons olive oil
3 tablespoons balsamic vinegar
2 garlic cloves, finely chopped
3 sprigs thyme, leaves picked, plus extra leaves, to serve
8 ounces couscous
1 3/4 cups vegetable broth, boiling hot
salt and pepper
2 ounces toasted pine nuts (optional)
1 lemon, zest
3 tablespoons lemon juice
2 -3 teaspoons fresh thyme leaves
1 red chili pepper, deseeded and finely chopped

Steps:

  • Preheat the oven to 425°F Peel the beets, cut into 1/2in cubes and put in a roasting tin with the oil, vinegar, garlic and thyme. Mix well, season and cover the tin with foil. Roast for 45 minutes or until tender. Set aside to cool.
  • Place the couscous in a bowl, pour over the broth, cover and stand for 5 minutes. Fluff the grains up with a fork. Whisk together the dressing ingredients. Stir the roasted beets and any roasting juices, the toasted pine nuts and the dressing into the couscous and stand for 15 minutes to allow the colour to develop. Serve garnished with thyme leaves.

4 garlic cloves, minced
2 tablespoons olive oil
1 teaspoon dried thyme
1/2 teaspoon salt
1/2 teaspoon pepper
1 tablespoon minced fresh rosemary or 1 tablespoon fresh parsley

Steps:

  • Peel and dice the beets, then place in crock pot.
  • Add garlic, 1/4 cup water, oil, thyme, salt and pepper.
  • Stir all ingredients until well combined.
  • Cover and cook for 6 hours on low until tender.
  • Sprinkle with parsley.

2 heads garlic, unpeeled
6 medium beets (about 1 1/4lb)
1 tablespoon extra virgin olive oil
1 tablespoon fresh tarragon, chopped
1/4 teaspoon salt

  • remove outer skin layer from garlic heads.
  • wrap garlic and beets in foil or place in covered casserole dish.
  • roast in 375*F-190*C oven until tender, about 1 1/2 hours.
  • let cool enough to handle.
  • peel beets, cut into wedges.
  • set garlic and beets aside.
  • meanwhile, in large skillet, heat oil over medium heat, cook tarragon, salt and pepper stirring for 2 minutes.

I came up with this randomly one Monday afternoon. Roasted beets are excellent atop a salad of spinach, fruit, and goat cheese.

4 large beets
1 ½ tablespoons olive oil
1 tablespoon store-bought minced roasted garlic
1 tablespoon balsamic vinegar
1 tablespoon chopped fresh thyme
1 teaspoon honey, or to taste
salt and ground black pepper to taste

Steps:

  • Preheat the oven to 475 degrees F (245 degrees C). Line a shallow baking dish with foil.
  • Trim and discard beet greens and cut off bottoms. Place beets top-side up in the prepared baking dish.
  • Combine olive oil, garlic, balsamic vinegar, thyme, and honey in a bowl; spoon over beets. Drizzle honey over top.
  • Roast in the preheated oven until tender and caramelized, 50 to 60 minutes. Remove from the oven and peel when cool enough to handle.

4 TB olive oil
1 lb raw beets, peeled and quartered
1 TB finally chopped thyme or 1 1/2 t dried herbs de provence
1-2 fresh red chilies, seeded and chopped roughly
4 large garlic cloves unpeeled

Steps:

  • Put the oil in a small roasting pan and place in the oven at 400 for 5 minutes until very hot. Add the beets, turning well to coat. Season generously with salt, pepper, and thyme. Roast for 45 minutes, turning occasionally, then add the chili and garlic. Roast for another 40 minutes until the garlic is very soft and puree like. Remove garlic skin and stirr puree into the oil. Transfer to a warm serving dish, and pour the oil from the pan over the beets. Garnish with fresh thyme. Serve with a green salad and maybe a side of coucous.
