Beetroot Hummus Dip image

This beetroot hummus dip is so easy to make, and absolutely delicious! Bring some colour and jazz to your Christmas table!

15 oz baby beetroots (canned, find a low sugar brand)
15 oz chickpeas (canned, rinsed and patted dry with paper towel.)
1 tbsp tahini
2 tsp lemon juice
4 tbsp olive oil
2 garlic cloves
1 tsp cumin (ground)
1/2 tsp salt (to taste)
2 tbsp reserve chickpea liquid

Steps:

  • Place chickpeas, beetroots, lemon juice, salt, garlic cloves, cumin and chickpea liquid in a blender.
  • Pulse for 30 seconds.
  • Place blender on high, then add the olive oil through the funnel of blender while motor is running.
  • Blend until hummus is nice and smooth and there are no lumps.
  • Adjust taste - I added more cumin and lemon juice but it is dependent on tastes.
  • Serve and enjoy!

2 small cooked beets, chopped
1 (15 ounce) can chickpeas, drained with liquid reserved
2 tablespoons fresh lemon juice
2 tablespoons tahini
1 clove garlic, minced
¾ teaspoon salt
¼ teaspoon cumin

Steps:

  • Combine beets, chickpeas, lemon juice, tahini, garlic, salt, and cumin in the bowl of a food processor; pulse until pureed. Pour reserved chickpea liquid in slowly, with the processor running, until hummus is smooth and desired consistency is achieved.
