Beer-Batter Fried Jalapeno Strips, Onion Petals & Pickles image

This is my favorite recipe for fried jalapeno strips... but it works equally as well for fried onion rings (or petals) and, if you're so inclined, it's an excellent coating for fried pickles. Try them all at once, if you like. This recipe makes plenty of batter. Serve with Spicy Ranch Dipping Sauce.

30 jalapeno peppers, washed, seeded and cut into 'spikes'
1 (16 ounce) jar dill pickles, sandwich slices drained
2 onions (cut into either rings or petals)
1 egg
1 (12 ounce) can beer
1 1/2 cups self-rising flour
1 teaspoon seasoning salt
vegetable oil (for frying)

Steps:

  • Slice onion and jalapeno as desired, and pat dry pickles onto paper towels.
  • In a large bowl, whisk together egg, beer, flour and seasoned salt.
  • Heat oil in heavy skillet or a fry-cooker, following manufacturer's directions.
  • Dip vegetables into batter, allowing excess batter to drip off.
  • Fry in batches, about 3 or 4 minutes per batch, or until lightly browned.
  • Drain onto paper towels. Serve immediately.

These crispy, fried titbits make a great side dish or topping for meatballs and burgers. Leave the seeds in the jalapeños for an extra kick.

1 large yellow onion, peeled
2 jalapeños
1 1/2 cups buttermilk
1 1/2 cups all-purpose flour
2 teaspoons kosher salt
Plenty of freshly ground black pepper
Canola oil, for frying

Steps:

  • Cut the onion in half and then into wedges. Separate the onion layers and add them to a bowl. Slice the jalapeños (seeds and all if you like things spicy) into very thin rounds and add to the bowl. Pour over the buttermilk and stir to combine. Let sit while you get the remaining ingredients together.
  • Combine the flour, salt and a generous pinch of black pepper in a separate bowl, then set aside.
  • Add 1 inch of oil to a large, heavy-bottom skillet. Heat to 375 degrees F or until a pinch of the flour sizzles when added to the skillet.
  • Using tongs, remove a handful of onions and jalapeños from the buttermilk and immediately dunk into the flour mixture, thoroughly coating them. Tap them on the inside of the bowl to shake off the excess.
  • Carefully add the coated onions and jalapeños to the hot oil, breaking them up with a spoon, so they don't stick together. Cook until golden brown, 1 to 2 minutes.
  • Remove with a slotted spoon and drain on a paper-towel lined plate. Repeat with the remaining onions and jalapeños.
  • Serve immediately.

Crispy Fried Jalapeños are the perfect party appetizer! Deep Fried in a beer batter and dipped in any number of savory sauces, these little bite-sized treats are sure to be a crowd pleaser!

1 cup all-purpose flour
1 teaspoon kosher salt
1 teaspoon black pepper
1 teaspoon chili powder
1 teaspoon garlic powder
2 large eggs
1 cup beer, (of your choice)
1 pint vegetable oil
2 cups jalapeno peppers, (sliced (5-6 large jalapeños))
Kosher salt, (optional (for seasoning after frying))

Steps:

  • Chop jalapenos into spears. Cut off the stems and then cut the jalapeno in half lengthwise. Remove seeds (if you prefer) and then slice the jalapeno into spears or skinny sticks. Repeat until all jalapenos are sliced.
  • Mix flour, salt, pepper, chili powder, garlic powder, eggs, and beer together in a bowl. (Batter should be slightly thinner than pancake batter). You may prefer to add more flour to add thickness.
  • In a deep fryer or large skillet, heat oil to 365° F. (Try to maintain that temperature all throughout frying. )
  • Dip the jalapenos in the batter and completely cover all sides.
  • Place battered jalapenos in the deep fryer or skillet. The jalapenos are fully cooked when they are golden brown and crispy and float to the surface of the oil. (Remember the jalapeno spears will continue to brown a bit after removing from the oil.)
  • Remove jalapeno spears and set on a paper towel so that any excess oil can drip off. If you want to add extra salt, do this immediately out of the oil.

This is a recipe I've been using for deep fried pickles for years now.

2 cups vegetable oil for frying
1 (12 fluid ounce) can or bottle beer
1 ½ cups all-purpose flour
1 teaspoon ground black pepper
½ teaspoon garlic powder
½ teaspoon chili powder
1 pinch seasoned salt
½ (16 ounce) jar dill pickle slices
1 ½ cups all-purpose flour

Steps:

  • Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C). Whisk together the beer, 1 1/2 cups flour, pepper, garlic powder, chili powder, and seasoned salt in a large bowl. Dip the pickle slices into the beer batter, then coat them in the remaining 1 1/2 cups flour.
  • Fry the pickles in the preheated oil until golden and crisp, about 5 minutes.

32 ounces dill pickles, sandwich slices drained
1 large egg
1 (12 ounce) can beer
1 tablespoon baking powder
1 teaspoon season salt
1 1/2 cups flour
vegetable oil

Steps:

  • pat pickles dry with paper towel.
  • whisk egg, beer, baking powder, and salt.
  • add flour, whisk until smooth.
  • Pour oil 1/2" deep into large skillet or dutch oven.
  • Heat over med-high ( until oil reaches about 375 degrees).
  • Dip pickles into batter, let excess drip off.
  • Fry 3-4 minutes until golden brown.
  • serve with spicy ranch.

Beer and spice and everything nice make these peppery bites utterly delicious. Serve with ranch dressing on the side for a cooling dip.

2 cups Gold Medal™ all-purpose flour
3 teaspoons baking powder
1 teaspoon table salt
1 bottle or can (12 oz) dark beer, chilled
Vegetable oil for deep frying
10 medium to large jalapeño chiles, cut into 1/4-inch rings
Coarse sea salt, if desired
1 cup ranch dressing

Steps:

  • In medium bowl, mix flour, baking powder, table salt and beer with whisk until smooth.
  • In 5-quart Dutch oven or heavy saucepan, heat 2 to 3 inches oil to 350°F. Working in small batches, dip jalapeño slices in batter. Fry in hot oil about 2 minutes or until golden brown. Drain on paper towels; sprinkle with sea salt.
  • Serve fried jalapeño bites warm with ranch dressing.
