Categories     appetizer

Time 20m

Yield 4 to 6 appetizer servings

Number Of Ingredients 8

4 cloves garlic, grated with a rasp grater
1 cup beer, such as a Belgian ale
1/2 teaspoon onion powder
1 pound shredded or grated cheese, such as a combination of Cheddar, Gruyere and Comte
1 tablespoon all-purpose flour
2 teaspoons Worcestershire sauce
1 teaspoon Dijon mustard
Sliced apples, pumpernickel or other crusty bread cubes, soft pretzels and tiny heated wieners, for serving

Steps:

  • Add the garlic, beer and onion powder to a large saucepan. Heat over medium heat until it starts to simmer around the edges.

Cook over low heat, stirring and scraping the bottom of the pot, until all the cheese is melted, about 10 minutes.
  • Serve warm with sliced apples, pumpernickel or other crusty bread cubes, soft pretzels and tiny heated wieners.

BEER CHEESE FONDUE

Categories     Cheese

Time 50m

Yield 6-8 serving(s)

Number Of Ingredients 13

1 tablespoon unsalted butter
1/2 small yellow onion, minced
1 large garlic clove, minced
12 ounces emmenthaler cheese, coarsely grated (about 3 lightly packed cups)
8 ounces extra-sharp cheddar cheese, coarsely grated (about 2 lightly packed cups)
4 ounces gruyere cheese, coarsely grated (about 1 lightly packed cup)
2 tablespoons cornstarch
1 teaspoon dry mustard
1/2 teaspoon fresh ground black pepper
1 teaspoon caraway seed, coarsely ground (with mortar and pestle or in a spice grinder)
1 (12 ounce) can beer (Budweiser good choice)
3 tablespoons sherry wine
kosher salt

Steps:

  • Melt butter in 1 1/2-2 quart flameproof fondue pot over medium-low heat. Add onion and garlic and cook, stirring occasionally, until completely soft and beginning to carmelize, about 15-20 minutes.
  • Meanwhile, in a large bowl, toss all three cheeses with cornstarch, mustard, and pepper.
  • Add caraway seeds to fondue pot and stir to toast them slightly, about 2 minutes. Add beer, and bring to a boil. Reduce heat to medium low and simmer to mellow the flavor of the beer, about 3 minutes.
  • Sprinkle the cheese mixture into the pot a large handful at a time, stirring each batch in a back and forth manner so that the cheese doesn't ball up as it melts. COntinue adding and stirring until all the cheese is melted, smooth, and thick, adjusting heat as necessary to maintain barely a simmer. Stir in sherry and season with salt.
  • Set fondue pot over a low flame at table to keep warm. Stir frequently and serve with dippers such as sourdough bread cubes, pear and apple slices, steamed carrots and cauliflower, boiled fingerling potatoes, grilled sliced sausage.

  • Add the beer to a cold small pot/deep sauce pan and bring it to low simmer over medium heat. (If you want to flavor with 1/2 tsp of grated garlic or 1 tsp of grated onion and/or any herbs (1/2 to 1 tsp) add them to the beer.)
  • After the beer has simmered for a minute or two, add the heavy cream, stir and simmer for another couple of minutes.
  • Remove from the heat and fold in the cheese, stirring gently and working in batches. You might need to place the pan back on the warm stove (turned off or very low heat) to help the melting along. Do not overheat it.
