1 (8 ounce) package egg noodles
2 cups sour cream
½ cup grated Parmesan cheese, divided
1 tablespoon chopped fresh chives
½ teaspoon salt
⅛ teaspoon ground black pepper
2 tablespoons butter

Steps:

  • Bring a large pot of lightly salted water to a boil. Add noodles and cook for 8 to 10 minutes or until al dente; drain.
  • While noodles are cooking, combine the sour cream, 1/4 cup cheese, chives, salt and pepper in a medium bowl. Mix together.
  • Stir butter into drained noodles, then stir in sour cream mixture. Place on a warm platter and sprinkle with remaining 1/4 cup cheese.

1 (8 ounce) package wide egg noodles
1 (16 ounce) carton sour cream
1/4 cup melted butter
1/4 teaspoon salt
1/4 teaspoon fresh ground pepper
1 garlic clove, mince
1/4 cup grated parmesan cheese
chopped fresh parsley

Steps:

  • Cook noodles according to package directions, drain.
  • Stir in sour cream, butter, salt pepper, and garlic.
  • Spoon into a lightly greased 2 quart baking dish, sprinkle with Parmesan cheese.
  • Cover and bake at 350F for 20 minutes.
  • Sprinkle with parsley.
  • My husband likes when I put mushrooms in here, all I do is saute about 1/2 pound fresh mushrooms, sliced, 2 tablespoons butter, drain, and stir them in when I add the sour cream.

Back in the late 60's and early 70's, Betty Crocker sold a boxed noodles romanoff that I absolutely loved! When they quit making it, I set about the task of duplicating the recipe. I remember my mom telling me as a kid that the BC version was full of sour cream and garlic. With that memory as my guide, and after many tries, I came up with a blend that I thought tasted the closest and have been using it ever since. Before posting, I reviewed the existing noodles romanoff recipes on 'zaar and didn't see one quite like mine, but I did see that many others also loved the Betty Crocker version. I hope this lives up to their memory as much as it did to mine.

4 -6 ounces noodles (not too wide)
2 tablespoons butter
2 garlic cloves, minced (more if you love garlic like I do!!)
1 teaspoon salt
1 dash Worcestershire sauce
2 ounces cream cheese, cubed and softened
2 ounces heavy cream (milk will work, but yields a thinner sauce)
2 ounces sharp cheddar cheese, grated
2 tablespoons sour cream
1 dash paprika

Steps:

  • Prepare noodles as directed on package.
  • While noodles are cooking, melt the butter in a sauce pan over low heat.
  • Add the minced garlic and saute until the garlic swells and the mixture thickens a bit.
  • Add the worcestershire sauce and salt.
  • Stir in the cream cheese, stirring until everything is well blended.
  • Stir in the heavy cream (or milk) until smooth.
  • Add the cheddar cheese and continue stirring until it is completely melted and the sauce is smooth (except for the bits of garlic ;-).
  • Stir in the sour cream and add the dash of paprika.
  • Drain the noodles, return them to the pan, stir in the sauce, and enjoy!

MEATBALLS ROMANOFF



Meatballs Romanoff image

This is an old recipe handed down based on Betty Crocker's boxed Noodles Romanoff. It has since been modified to get the sauce to taste as close to the original BC as possible - and after trying many other Romanoff recipes, I have found this one to be genuinely as close as you can get. The hardest part will be finding the Kraft Macaroni & Cheese (Cheese Topping). It is a 3 oz. blue can found near the canned parmesan cheese. I'm able to find it at my local Super WalMart, but if not available for you, just substitute with the cheese powder package found in boxed Kraft Mac & Cheese.

1 lb ground beef
3 tablespoons instant minced onion
1/2 cup Italian seasoned breadcrumbs
1 teaspoon salt
1/8 teaspoon pepper
1/2 teaspoon Worcestershire sauce
1 egg
1/4 cup milk
2 tablespoons butter
1 tablespoon flour
1/4 cup kraft macaroni and cheese mix
1 1/2 cups milk
2 tablespoons sour cream
1/2 teaspoon minced garlic clove
1 (8 ounce) package egg noodles
2 tablespoons butter
2 teaspoons parsley flakes

Steps:

  • MAKE AHEAD MEATBALLS.
  • Heat oven to 400°F.
  • Mix all ingredients thoroughly, shaping into 1" balls. Place in ungreased jelly roll pan.
  • Bake about 10 minutes or until browned. Cool meatballs in pan about 5 minutes.
  • Either freeze in 1 quart freezer container, or set to the side to use in Noodles Romanoff.
  • SAUCE.
  • Melt butter in large skillet. Remove from heat.
  • Blend in flour, cheese.
  • Gradually stir in milk.
  • Heat to boiling, stirring constantly with a whisk (this will help beat out the lumps). Boil & stir 1 minute.
  • Add meatballs. Reduce heat. Cover & simmer for 10 minutes.
  • While meatballs simmer, cook egg noodles as directed on package. Drain & stir butter and parsley flakes into noodles.
  • Serve meatballs with sauce over noodles.
  • **Note**.
  • This does not make a lot of cheese sauce, so you may need to either double the sauce, or adjust the milk & flour to your desired consistency. I prefer to keep mine at about medium thickness.

Remember the old Betty Crocker Noodles Romanoff? This recipe tastes SO close to the original. If you cannot find Kraft Macaroni & Cheese Topping, you can use one package of the cheese powder from a standard box of Kraft Macaroni & Cheese.

6 ounces medium egg noodles, uncooked
1/4 cup sour cream
1/4 cup half-and-half
2 tablespoons butter

Steps:

  • Boil noodles in salted water until done. (Follow noodle package directions for time.).
  • Drain noodles and return them to the pot.
  • Add butter. Stir until melted on the noodles.
  • Add all remaining ingredients.
  • Serve hot.
  • If you have any leftovers, reheat them with a tablespoon or two of milk, as the cheese mixture soaks into the noodles.

1/2 C. minced onion (optional)
1/4 tsp. pepper
1 can (8 oz.) mushroom pieces with 1/2 of liquid reserved
1 lb. ground beef
2 Tbs. flour
1 tsp. salt
1 tall can evaporated milk
1 can cream of mushroom soup
2 (8 oz.) packages uncooked wide egg noodles
4 C. sour cream
1 C. grated Parmesan cheese
2 Tbs. chopped chive
1 tsp. salt (optional)
1/4 tsp. pepper (optional)
2 large cloves of garlic crushed, or equivalent dried garlic
4 Tbs. margarine or butter

Steps:

  • Cook onion and meat until browned. Add flour, salt, pepper, mushrooms, and reserved liquid. Cook 5 minutes. Add soup and simmer 10 minutes. Add evaporated milk and heat, stirring, until heated through. Serve over plain Noodles Romanoff. Cook egg noodles as directed on package. Drain. Mix sour cream, half of Parmesan cheese, chives, salt, pepper, and garlic together in bowl and set aside. Stir margarine into noodles. Stir in sour cream mixture. Sprinkle with remaining cheese. Serve from pan or platter.

This is a simple recipe with common pantry ingredients and ground beef. You can substitute the egg noodles for whatever pasta you have on hand. Also, you can substitute the cream of mushroom and/or cream of celery for any other soups you have in the pantry. You can add other vegetables (I've subbed corn for the beans) or not include any. It is a very versatile dish.

1 1/2 cups sour cream

1 minced garlic clove

16 ounces small curd cottage cheese
