A quick and easy vegetable soup made with ground round and spicy vegetable juice cocktail. My kids love it!

Ingredients

1 pound ground round
3 cubes beef bouillon
3 cups hot water
1 (46 fluid ounce) bottle spicy vegetable juice cocktail
1 pound frozen mixed vegetables, thawed
8 ounces uncooked alphabet pasta
6 cups water
salt and pepper to taste

Steps:

Place the meat in a large stock pot, and cook over medium-high heat until evenly brown. Drain the meat, except for about 2 tablespoons of the juices.
Dissolve the bouillon cubes in 3 cups of hot water, and add to the stock pot with the meat. Stir in spicy vegetable juice cocktail, mixed vegetables, alphabet pasta, and 6 cups of water. Simmer 20 minutes, or until pasta is tender. Season to taste with salt and pepper, and serve.

1/2 lb stewing beef
1 (8 ounce) can tomato sauce
1 (14 1/2 ounce) can stewed tomatoes
1 envelope dry onion soup mix
1 cup water
1 (10 ounce) package frozen vegetables, partly thawed
1/2 cup uncooked alphabet pasta

Steps:

Combine beef, tomato sauce, stewed tomatoes, onion soup mix, and water in slow cooker.
Cover.
Cook on low 6-8 hours.
Turn to high.
Stir in vegetables and noodles.
If needed, add more water.
Cover.
Cook on high 30 minutes, or until vegetables are tender.

Heat oven to 350°F. Heat large nonstick skillet over medium heat until hot. Add Ground Beef; cook 8 to 10 minutes, breaking into 3/4-inch crumbles and stirring occasionally. Season with 1/2 teaspoon salt and 1/4 teaspoon pepper.
Add water, broth, beans, tomatoes and pasta; bring to a boil. Reduce heat; cover and simmer 5 minutes. Stir in broccoli; return to a boil. Reduce heat; cover and simmer 3 to 5 minutes or until broccoli is crisp-tender and pasta is tender. Season with salt and pepper, as desired.
Meanwhile, prepare Parmesan Toasts. Cut out shapes from bread slices with cookie cutters. Place on baking sheet sprayed with nonstick cooking spray. Brush cutouts lightly with oil and sprinkle evenly with cheese. Bake in 350°F oven 6 to 8 minutes or until lightly toasted.
