PRESSURE-COOKER BEEF AND VEGGIE SLOPPY JOES



Pressure-Cooker Beef and Veggie Sloppy Joes image

Because I'm always looking for ways to serve my family healthy and delicious food, I started experimenting with my go-to veggies and ground beef. I came up with this favorite that my kids actually request! -Megan Niebuhr, Yakima WA

Number Of Ingredients 16

2 pounds lean ground beef (90% lean)
4 medium carrots, shredded
1 medium yellow summer squash, shredded
1 medium zucchini, shredded
1 medium sweet red pepper, finely chopped
2 medium tomatoes, seeded and chopped
1 small red onion, finely chopped
1/2 cup ketchup
1/4 cup water
3 tablespoons minced fresh basil or 3 teaspoons dried basil
2 tablespoons cider vinegar
2 garlic cloves, minced
1/2 teaspoon salt
1/2 teaspoon pepper
3 tablespoons molasses
10 whole wheat hamburger buns, split

Steps:

  • Select saute or browning setting on a 6-qt. electric pressure cooker; adjust for medium heat. Cook beef until no longer pink, 8-10 minutes, breaking into crumbles; drain. Return to pressure cooker. Press cancel. Add carrots, summer squash, zucchini, red pepper, tomatoes, onion, ketchup, water, basil, vinegar, garlic, salt and pepper (do not stir)., Lock lid; close pressure-release valve. Adjust to pressure-cook on high for 5 minutes. Quick-release pressure. Stir in molasses. Using a slotted spoon, serve beef mixture on buns. Freeze option: Freeze cooled meat mixture and juices in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally; add a little water if necessary.

1 medium yellow summer squash, shredded

Drain; transfer beef to slow cooker. Stir to combine., Cook, covered, on low 5-6 hours or until heated through and vegetables are tender. Using a slotted spoon, serve beef mixture on buns.

This is a combination of many recipes and experimentation. It has gotten the thumbs-up from all who have tried it so far. It can also be made with TVP, ground turkey, or even ground beef instead of tempeh.

¼ cup vegetable oil
½ cup minced onion
2 (8 ounce) packages tempeh
½ cup minced green bell pepper
2 cloves garlic, minced
¼ cup tomato sauce
1 tablespoon vegetarian Worcestershire sauce
1 tablespoon honey
1 tablespoon blackstrap molasses
¼ teaspoon cayenne pepper
¼ teaspoon celery seed
¼ teaspoon ground cumin
¼ teaspoon salt
½ teaspoon ground coriander
½ teaspoon dried thyme
½ teaspoon oregano
½ teaspoon paprika
1 pinch ground black pepper
hamburger buns

Steps:

  • Heat oil in a deep, 10-inch skillet over medium-low heat. Cook the onion in the oil until translucent. Crumble the tempeh into the skillet; cook and stir until golden brown. Add the green pepper and garlic; cook another 2 to 3 minutes.
  • Stir in the tomato sauce, Worcestershire sauce, honey, molasses, cayenne pepper, celery seed, cumin, salt, coriander, thyme, oregano, paprika, and black pepper; stir. Simmer another 10 to 15 minutes. Spoon hot onto hamburger buns to serve.

8 bacon strips, cut into 1-inch pieces
2 pounds lean ground beef (90% lean)
1 medium onion, chopped

2 medium parsnips, peeled and shredded
2 medium carrots, peeled and shredded
1 can (12 ounces) cola
1 can (8 ounces) tomato paste
1 cup water
1/3 cup honey mustard
1-1/2 teaspoons ground cumin
1-1/4 teaspoons salt
1 teaspoon ground allspice
1/2 teaspoon pepper

Steps:

  • In a large skillet, cook bacon over medium heat until crisp, stirring occasionally. Remove with a slotted spoon; drain on paper towels. Discard drippings. In the same skillet, cook beef, onion and garlic over medium heat until beef is no longer pink and onion is tender, 10-12 minutes; crumble beef; drain. , Transfer to a 5- or 6-qt. slow cooker. 1 onion, chopped
1 red bell pepper, chopped

1 teaspoon distilled white vinegar
3 tablespoons brown sugar
1 teaspoon dried oregano
