BEEF TIP CASSEROLE
A great dish for those days you need a quick meal. Can be used with any type of cheese and you can use chicken or pork instead of beef.

Steps:
- 1. Cook rice as directed
- 2. Put olive oil, worcestershire sauce in to pan on medium high heat. Add beef cut into bite size pieces, onions, basil, garlic powder, salt and cook till meat is a light grey color, do not over cook.
- 3. Put rice in a bowl and add cream of chicken or mushroom soup, mix together, add beef mixture and 1 cup of the grated cheese and mix together put into 9 x 13 baking dish or small aluminum pans top with remander grated cheese and bake on 350 for 20 minutes or until brown on top.

My husband loves this. Melts in your mouth and its easy!!! Serve over rice or egg noodles.

Steps:
- In a large skillet heat oil over high heat. Saute the onion until almost translucent.
- Add the stew meat and cook on high heat until meat is browned on all sides; about 3 to 5 minutes.
- Pour 2 cups water, soy sauce, and Worcestershire sauce into the skillet. Stir in garlic powder, salt and pepper. Bring to a boil and reduce heat. Cover and simmer for 1 1/2 to 2 hours.
- Meanwhile combine the gravy mix with 1 cup water. Mix thoroughly and stir into the meat mixture. Bring to a boil stirring frequently until slightly thickened.

BEEF TIPS AND CARAMELIZED ONION CASSEROLE
Beef tips and caramelized onions are baked and topped with cheese toast. This recipe is a cross between French Onion Soup and beef stew, only better. Recipe is from Paula Deen's magazine.

Steps:
- In large Dutch oven, heat olive oil over medium-high heat.
- Sprinkle roast with salt and pepper.
- Brown roast, in batches, for 3-4 minutes per side; remove from pan and set aside.
- In the same Dutch oven, melt butter over medium heat.
- Add onions, and cook, stirring frequently, for 15-20 minutes, or until onions are tender.
- Increase heat to medium-high, and cook for 3-4 minutes, stirring frequently, or until onions are caramel colored.
- Stir in garlic and flour, and cook, stirring constantly, for 2 minutes.
- Add roast, consomme, broth, Worcestershire, bay leaves and thyme.
- Simmer, stirring occasionally, uncovered, for 1 hour.
- Stir in cream, and simmer, uncovered, for 30 minutes.
- Discard bay leaves.
- Preheat broiler.
- Lightly grease a 13x9-inch baking dish.
- Spoon roast mixture into prepared baking dish.
- Place toasted French bread slices evenly over roast.
- Sprinkle with cheese.
- Broil, 5 inches from heat, for 3-4 minutes, or until cheese is melted.
- Garnish with fresh thyme, if desired.
- Serve immediately.

- Sprinkle beef with salt and pepper. In a large skillet, brown meat in oil in batches; drain. Transfer to a greased 13x9-in. baking dish., In the same skillet, cook onions in butter over medium-low heat for 25-30 minutes or until golden brown, stirring occasionally. Add garlic; cook 1 minute longer., Preheat oven to 325°. Stir flour into onion mixture until blended; gradually add consomme and broth. Stir in Worcestershire sauce and bay leaves. BEEF & VEGETABLE CASSEROLE
A traditional braised beef stew with thick, rich gravy - an ideal recipe for cheap cuts, as slow-cooking guarantees a tender dish

- Heat oven to 160C/140C fan/gas 3 and put the kettle on.
- Put 2 thickly sliced celery sticks, 1 chopped onion, 2 chunkily sliced carrots, 5 bay leaves and 1 whole thyme sprig in a flameproof casserole dish with 1 tbsp vegetable oil and 1 tbsp butter.
- Soften for 10 mins, then stir in 2 tbsp plain flour until it doesn't look dusty anymore, followed by 2 tbsp tomato purée, 2 tbsp Worcestershire sauce and 2 crumbled beef stock cubes.
- Gradually stir in 600ml hot water, then tip in 850g stewing beef and bring to a gentle simmer.
- Cover and put in the oven for 2hrs 30 mins, then uncover and cook for 30mins - 1hr more until the meat is really tender and the sauce is thickened.
- Garnish with the picked leaves of the remaining thyme sprig.

BEEF TIP WITH MUSHROOM NOODLE CASSEROLE
A nice quick easy, recipe the family can enjoy on a weekday night. An adopted recipe I have had that I have tweaked. The original recipe had half the ingredients at one point. After working on this the past week I have come up with this savory recipe. ZWT16 2ND PLACE FINISH.

Steps:
- Dredge beef tips in flour, shaking off the excess.
- Heat oil in a large frying pan, once heated brown the beef tips.
- Add diced onion, wine, garlic powder, black pepper, basil, nutmeg and hot sauce to the pot and bring to a boil.
- Reduce the heat and add mushrooms, mushroom soup, and beef broth and simmer for 10 minutes.
- Prepare noodles according to package directions, cooking the noodles only.
- When noodles are fully cooked, drain and add them to the meat mixture.
- Stir in pint of sour cream (if too thick gradually add milk for consistancy).
- Sprinkle with parsley and heat in oven 350 degrees for 20 minutes.

BEEF AND POTATO DUMPLING CASSEROLE

- Heat oven to 400°F. In 12-inch skillet, cook beef, onion, mushrooms and salt over medium heat, stirring occasionally, until beef is brown.
- While beef is cooking, in 2-quart saucepan, heat water and butter to boiling; remove from heat. Stir in dry potatoes and sour cream. Let stand 1 minute, then stir vigorously until smooth. Stir in 2/3 cup Bisquick mix, the chives and egg.
- Drain beef mixture. Stir 3 tablespoons Bisquick mix into soup. Stir soup mixture, broccoli and ketchup into beef mixture. Heat to boiling. Boil uncovered 1 minute. Pour into ungreased 3-quart casserole. Scoop potato dumpling mixture around edge of casserole.
- Bake uncovered 25 to 30 minutes or until dumplings are light golden brown.
